I don't know what happened to this place over the last year or so. We used to make a special trip out from Bend just to eat at Pop's, but recently the meat has been oversalted, rubbery, and dry. We hoped it was just bad luck (every restaurant has good days and bad days) but today we actually dumped most of our $50 lunch in the trash! The ribs were ungodly salty and dry, with only a few edible bites between our two meat plates. The chips tasted like fish of all things, the baked beans that said on the menu "not sweet" were in fact very sweet, and the potatoes in the potato salad were undercooked to the point of crunchy. We got dinner over by the food trucks this evening. I ordered wings and brisket chili from Pop's. The wings were fantastic! The smoke flavor and smell was clean and the skin was crispy. I know how easy it is to over-smoke chicken or have it turn out with rubbery skin if the cook temp is too low, so good on them for doing it right. Per the guy working there, it sounds like they were using hickory for the smoke wood. I've always used cherry when I hot-smoke chicken, but I'm going to have to try hickory now. I was impressed at their results. The brisket chili was great too. I like that they gave it some heat kick. I'll be back next time the family and I return to Oregon. Thanks guys! read more

Fantastic bbq! Truly. We had the two meat plate and brisket chili. For the two meats, we chose pulled pork and ribs. Both were cooked perfectly. The chili was sooo good...not overly seasoned with chili powder. We chose the Smokey sauce, and the sweet and tangy sauces. Also good. For sides, we had the poblano slaw, collard greens, and potato salad. I LOVED the collard greens! The slaw was pretty good but I'm not sure I would get it again. Ok, there are few (none) BBQ places I would drive more than 10 miles for, but this one will have me driving from SE Portland to have. We split the two meat plate special and had the brisket and ribs along with the Roasted Poblano Coleslaw and collard greens. The crust on the ribs was perfection. The brisket had a wonderful flavor and mouth feel. I can't say enough good things about the slaw. Definitely NOT your grandma's Cole slaw. And if you love slow cooked collards, you will not be disappointed. Their menu had several other choices, so I am looking forward to coming back in the future. I know I left a review already when we first found this cart, but we have gone back every weekend since!! Today my husband and I literally ate A POUND of Pulled Pork and 1/2 a dozen wings. Also brought our parents and they ordered the Brisket and Chili and there was nothing left of their plate. I stopped to get a pizza at another food truck and picked up some of their baked beans to go with my ribs I am cooking for dinner. I took a bite of the baked beans and they are awful. All you taste is black pepper. It said they weren't sweet which made no sense because baked beans are supposed to be sweet. Was really looking forward to trying a new (to me) BBQ food truck here in Bend based on the positive reviews. Disappointed on all levels really. The guy working showed a very impersonal level of service...I can't imagine he owns the truck, but regardless he needs some training on making the customer feel welcomed and motivated to return again. From forgetting to set out a menu to having to be reminded that I ordered three drinks with our meals, he simply just seemed disinterested. Perhaps he was too busy fulfilling a large delivery order, but if that was the case, a simple "hey I'm swamped with this large order right now but I'll be able to help you in 5 minutes" would have been perfectly understandable and OK. On to the value...$12 for MAYBE a quarter pound of pulled pork on a small generic white bun with homemade chips was outrageous. Especially when the tiny sides are an additional $3!!! $4 for two pork spare ribs. These prices would be easier to swallow if the quality was top-notch. Unfortunately it was just the opposite. And then came the food...meat sloppily dumped on the above-mentioned bun and fell out every time I tried to pick up the sandwich. Pork ribs had so much fat and the little meat that was there was inedible-tasted like they'd been poorly prepared rather than slow-smoked so the meat would be tender and pull off the bone with a slight tug. Sides have tons of flavor- the poblano slaw is miles from a standard slaw, the beans are tangy, the chili has huge chunks of brisket.They've got your standard bbq meats (pork, brisket, ribs) as well as smoked wings, and sometimes some additional offerings (burnt ends!). Lots of peppery bark to the brisket. House made chips are delicious with the chili or dipped in some of their sauce. Watch their instagram for daily menu. This gem of a food cart is tucked away in a yard with beer, fireplaces and live music! The chicken wings come with a dry rub and sauce is optional. The wings were incredible as-is although they do have a choice of 3 bbq sauces and I found myself falling in love with their Lonestar sauce! I will be taking some back to Portland with me. I ended up going back for seconds and tried the ribs, they had an incredible dry rub as well and fell right off the bone. Seemed expensive for what you got, a small pulled pork sandwich on a slider bun with a side for $15?! The pork was more chopped than pulled, with sauce on the side, but was good. All the sides were terrible. The slaw was gloopy and green, and unlike any slaw I've ever had (not in a good way). Slaw is easy delicious and infinitely customizable but this was a terrible example. Pasta salad wand grits were better but simply edible, not good. The meat was good but they need to work on the sides. read more

Great bbq! You can tell they put effort into it. Took it into the salon I work at and the smell permeated the whole salon. I got the brisket plate w/ the homemade chips it comes with as well as the potato salad and moms bbq sauce. Truthfully the brisket didn't need any bbq sauce as it has so much flavor on its own. Went here for a post-hike sandwich to go with the beer. Got the brisket sandwich. Actual brisket was delicious, though for $16.50, the sandwich was comically small. It consisted of a dry, unadorned bun piled with as much meat as could fit on the tiny ass bun. You got 1 side with this, and I got grits, which tasted and looked like a not-very-interesting lentil soup. Though nothing was "bad" and the service was friendly and prompt, for this rather high price point, I don't see myself returning. Ordered the Pork Plate with 2 sides. The pork was very dry and chopped up. I could not eat the meat as there was gristle and other hard objects that were so hard, I felt like I was eating bones. We also had Grits which were absolutely horrible taste and slaw that was tasteless. My wife took back the plate and told the man in the food truck and he acknowledged that the gristle was in the meat and that was the way they sold it (Hard to Believe he admitted this). He gave us a side of ribs and they were covered in a hard rub. They were just ok. They gave her one small container of BBQ sauce which was gone way before the ribs were eaten. There are definitely better places to eat. The man that works in the food truck does not know how to talk to customers and take care of us. Not a good experience overall! read more

This place is amazing to find and eat at.... If you can find it. Place was nearly impossible to find, as our mapping app got us to the general intersection, but there were zero signs that indicated it was tucked away behind a bunch of businesses including Bunk N Brew, Wahoo Films, and with the other food trucks in "The Yard." We only found it because I saw the catering truck down the street and figured it was nearby, and I saw some metal smokestacks that led me to believe it was in there somewhere. Add some signage on the street, please. All I had to go by was the website when researching. Sure, the photo posts on the homepage have the hashtags #foodtruck but I shouldn't have to click through and dig to realize what I'm looking for, when my first assumption is a brick and mortar place because nothing on the website indicates it's a food truck... while there is a cute video of the kid talking out the order window, for all I knew, that could be their catering truck, so, again, don't make it so hard to find the place. All that said, the food is pretty great: the 1/2 chicken is epic in proportion and flavor, and the roasted poblano slaw is amazing. Chips are homemade, and the sauces are unique. It wasn't absolutely horrible, but it wasn't amazing. I ordered the brisket with grits. The ends of the brisket were tender, maybe an inch, but the rest was super dry and chewy. I've cooked brisket many times and this one was most likely cooked at too high temp, or not long enough. It just seems like it wasn't wrapped at the end of the cook or something. The grits were not grits, but more like watery creamed corn. My favorite part was probably the homemade chips. The bbq sauces were pretty good too. read more

We just had our wedding catered by Pop's Southern BBQ. Everything was fantastic. I've lived in several southern states, and Pop's is the first BBQ I've had on the west coast that comes anywhere close to actual southern style BBQ. Their food was one of the top highlights of a long list of things that made our wedding awesome. Everyone loved it. This is a difficult review for me. This is a foot truck business - a small business. I get small businesses rely on reviews so I want to be true to our experience while being kind. I went on Yelp after hiking and being up in the mountains. We were hungry and tired. I picked this place based on the reviews. I had high hopes for great BBQ. After eating here, I would not eagerly return. We waited for the guy's attention as he was busy chopping some meat. My husband had to get his attention twice; once to ask a question and another to order. Not really 4.5 star worthy. My husband ordered the brisket sandwich with cheddar poblano grits. I ordered the side order of cornbread with cinnamon honey butter and the pasta side with smoked corn and black beans. Let's just say that the brisket was very good and brought this rating up. We left disappointed and did not think it was a 4.5 star worthy meal or experience. That was our experience. We wish the business success and improves where it fell short for us. read more
