I've had BBQ in Texas, KC, the Carolina's , St. Louis and I'd put POP'S up against any of them. Let's start with the ribs: juicy- no -succulent is the word. Slathered with Pops secret BBQ sauce with just that right balance of sweetness, tang, and that Smokey flavor that is lip smacking good. The meat is so tender it nearly falls off the bone. My friends split a rack and I swear they nearly sucked the marrow out of the bones it was so good! I order the pulled pork sandwich Sans bun because it is too delicious- the shredded pork just melts in your mouth and rib tips- Oh my Lord they were meaty and devine! I also had their smoked bratwurst and that was just out of this world. I usually load my brats up with ketchup and onions but not Pops brats. There is something about the smoky flavor... I don't know what it is but to hide the taste under condiments is sinful. Pops has an extensive menus with great sides to round out any meal. Great customer service. This goes to show depending on what part of the country you are from or how you personally either cook or like your bbq...depend on how enjoy or rate food. The food was good. I like my sauce spicy and my ribs with a little bite but not tough. Potato salad is also difficult... I don't care for a sweet tasting potato salad nor do I like pickle relish in my potato salad. I am obviously a little weird because this truck cranks out the bbq and ppl are willing to wait in line no matter the weather. I will go back and try more meats and sides. OK, I haven't left a Yelp review in years and years but I had to put in a word for Pop's. I moved from North Florida to North Dakota and the absolute biggest thing I miss from the South (besides trees) is the gas station barbecue. Pop's filled that craving and then some! Meat was tender and full of flavor, with a great spice crust but not so much bark that you can't bite into it. Mac and cheese was nice and gooey with some extra zip from the spice mix. And I'm not usually one to get the sauce on top, but theirs took everything to another level. The ONLY thing I can quibble with is that they serve the bread separately instead of putting it at the bottom of the container to soak up all the juice. But that's all I've got. Yelp fam! Pops BBQ is a food truck located on 76th and good hope. You can't miss it, it's a big yellow food truck sitting in Andy's gas station. I very much enjoy the ribs here and they sell out quick so if you go I advise you to get there earlier in the day because the lines tend to get long and when they run out.. they run out. Memphis bbq and the sauce is great! I always either get a rib dinner or rib tips. They also have pulled pork, brisket and a few other options. Now the only thing is they don't have a ton of sides and they aren't my fav. But I go here for the wonderful bbq. Also the sides tend to change just a heads up. They are open only on the weekends (thurs- Sunday) Side note.. they do cater but you have to go up to the food truck the day of early in the morning when they are opening and get your order in. It's always so exciting as you're driving up to the corner of 76th and Good Hope to see the smoke billowing out of the smokers. And the smell just brings you right in! They offer many options to choose from. They have the classic pulled pork, chicken breasts, brat and sausages, ribs and rib tips, brisket and sometimes other specials. There are always a few sides to choose from if you get a meal or you can order them separately. They also cater so you can call ahead and order. They are a food truck and during the summer hours there's some seating nearby that you can sit at but most take it to go. They are located on the southwest corner of the gas station. I've been coming to Pop's almost religiously for over a year now. I first encountered it because one of my coworkers belongs to the family that runs Pop's, but all bias aside, this place is AMAZING. This food truck always has a line, but once you've had their food you immediately understand why. The pulled pork and chicken are fantastic and they serve something called a Jimmy John. It's a grilled brat with pulled pork on top. GET IT AND PUT IT IN YOUR BODY. It is so good. And the amount of food you get from these guys is unreal. I finally stopped by Pops for the first time after wanting to go forever. AND OMG!!!!!!! This place right here is like none other. I normally don't do lines in the hot sun, but ba beeeee . . . It was worth the wait. I bought the medium rib tips, a 4-rib snack with potato salad and corn and a rib tip dinner with baked beans and potato salad. Everything was delicious!!! I have eaten food from Pops for a while and it's usually good. I had to leave a review for the Turkey leg because it was NOT good. Bland bland bland no smoke flavor and the sauce for it tasted like ketchup with a little worchestershire in it. It's the worse Turkey leg I've had. Best rib tips in the city by far.I like to go early in the am and avoid the lines and get fresh off the grill food.

I have been trying to get here for years now and due to there scheduled/seasonal hours and my work/personal schedule and just remembering them I have not been able to get there. Well the planets were all in alignment and I finally got to try them. They are in a gas station parking lot with limited plastic seating so grab and go is the way to go. There was a line forming as I pulled in and parking was filling up fast and the line behind me was growing. It's a trailer with a small grill on the back and a mobile smoker next to it and both were at full operation, see my pictures. It took a good 10 minutes plus to get my bbq and I left smelling like smoke. There was a guy who was obviously the boss working the crowd, saying hello and acknowledging regular customers. He gladly opened the smoker/grill when I asked him just so I could take a picture of what was cooking during my visit, that was cool. I always ask for an un cut slab with sauce on the side so I can see how the bbq stands on its own and because sauce is like A holes, everyone has one and I don't like half of them because everyone has there own idea of what BBQ sauce is. The half slab is $13 and you can make at a dinner with $1 sides if you want. The ribs looked and smelled good. The ribs were St. Louis style and meaty and looked very fresh and moist. The ribs had no bark but they were seasoned well and had a nice grill flavor. They have what I think is the perfect chew for ribs so I was happy with the texture. They were in fact moist and hot from a pan that just came from the smoker as I waited in line. I liked the well seasoned grill/smokey flavor with just enough fat to please, the moist seasoned ribs leads me to believe they are brined because every bite seasoned. The sauce was one that I actually liked because four flavors were in a fist fight with sweet, bold, tangy and a spicy finish so I used a little on the meat but not much because the ribs had good flavor even with out a bark on them. Overall this is one of the better BBQ rib options in Milwaukee and easily puts a lot of brick and mortar places to shame. I would definitely come back for the ribs. The very hot out of the smoker/grill ribs traveled well and we're still hot when I got home was also a great part of Pops BBQ and gets them 4 stars. My final thoughts is that Pops is one of those destination places that you have to get to for the whole stand in line for BBQ from the smoker/grill to your hands. read more

I'm not an expert on BBQ. I can't tell you what make Carolina BBQ different from Memphis BBQ or Texas BBQ. I only know two things about BBQ. 1) There is smoked BBQ. 2) There is non-smoked BBQ. I will eat anything that tastes good, but my preference is for smoked BBQ. I love the flavor of the rubs that are used tied together with the slightly smoky flavor from whatever wood they burned, whether apple or cherry or hickory or whatever. Pop's BBQ is a food truck located in the property of what is now an Andy's Gas Staion (I believe it is Andy's). They serve Memphis Style BBQ. It meant nothing to me, but maybe that means something to you. I'm very rarely on that part of town, but happened to be a couple of miles west on Saturday and remembered them, so I drove eastbound to try them out. I was disappointed that they were already out of brisket before noon, since that is my go to, but I went to my back up, the ribs. A half rack is $13 and a full rack is $25, but they had a special going during my visit for a full rack for $20. Also, a pulled pork sandwich is $7. That would have been my back up to the ribs. The smoker was behind the truck with more racks of ribs cooking away and looking beautiful! The ribs were delicious! I had to pull the meat off the bone with my teeth, as BBQ purist friends have told me is "how it should be," and the flavor was among the very best I've tasted on ribs in Milwaukee. I asked for sauce on the side because I like to try the house made sauces. This was was thin, but bold and spicy. I also picked up a subtle sweetness. I only dipped two ribs because I prefer them as is right out of the smoker. They were served with a regular hamburger bun, opened, and served as two slices of white bread. I would have liked a chunk of cornbread at the very least, if not a side of fries or slaw, but I loved every bite, so I carried on. A full rack was a lot of food, so I oly ate half and took the rest to my mother's house because she also loves ribs. She prefers hers with sauce and enjoyed the ribs and sauce very much. I definitely recommend Pop's BBQ and I hope I can make it back early enough for the brisket next time. read more

This was my first time so they gave me a small sampling of each. It was hard to decide but I ended up with a "small" order of rib tips. The portion was plentiful and I could only finish 1/3 of it but it was super yum! Also, I asked for a slice of bread so I could dip it in the sauce and they didn't hesitate giving it to me. I was having a really crappy day and my husband was in his way home from work and had to stop to get gas. He called me and said want 'BBQ tonight??? Omg I am so glad I said yes. We had a half rack of baby backs - perfectly smoked. Nice and meaty. My freaking dog literally stole one off my plate and ate that whole thing bone and all. The hot dog - wow. It was so delicious, so juicy and with a nice kick. Plus, I love the snap of a good dog! My daughter got the turkey leg. I had to try some and it literally fell off the bone. So juicy and flavorful. Sometimes all you need is a smoker in a gas station parking lot. I was in the Milwaukee area and didn't have alot of time to spare so was pleasantly surprised when Pop's came up in my search. It was a little after lunch so the line waiting to order was manageable. The menu is pretty straight forward with sandwiches, ribs, and sides. As I as driving back to Madison, I didn't think I could handle eating ribs so opted for the brisket sandwich with a small side of mac and cheese. Both hit the spot. The brisket was tender and had a good smoke taste to it. The sauce was also on point-a little sweet with a little heat at the end. While I enjoy my brisket a little more on the fatty side, the sandwich still delivered. The mac and cheese was ok by itself but together the sandwich, it delivered a one/two punch. Love to find places that make the most of what they have and I hope to see Pop's continue to thrive and hopefully expand into a brick and mortar establishment. read more

Part 1 - Pork: Pop's is difficult to review. There is clearly talent in preparing the meat, but be very clear -- there is no elaborate seasoning. The pulled pork shoulder is very good, juicy and tender. When given the usual dose of Lexington-style sauce, it stands up to the best NC has to offer. I wouldn't hesitate to substitute Eastern NC sauce to it, either, but shoulder does not have quite the sweetness of whole hog. The pork ribs are the same. The meat and smoke are all there, good plain from the smoker, but feel free to add your favorite sauce, in moderation, to savor the meat. Tender, just the slightest tooth. Morale: bring your favorite sauces to mix with these good meats. Two meats, in this case about a pound of pulled pork and half a dozen meaty ribs, cost $15 with a tiny portion of slaw. The slaw was watery and on the sweet side -- good for some, not my favorite, but OK. The recommendation for a side is the green beans, when they have them. Sandwiches start at $7.
