    Burnt, dried out & hard rib tips.

    I'm bought a large rib tip yesterday. When I got home to feed my kids, I noticed most of the pieces were burnt, dried out and literally rock hard. Needless to say I was very upset, $24.00 down the drain.

    I've been going here for a little over two years now and I can't say enough about this place. The barbecue is absolutely phenomenal! From the pulled pork to the chicken breast to the ribs it's all so amazing! It's always so exciting as you're driving up to the corner of 76th and Good Hope to see the smoke billowing out of the smokers. And the smell just brings you right in! They offer many options to choose from. They have the classic pulled pork, chicken breasts, brat and sausages, ribs and rib tips, brisket and sometimes other specials. There are always a few sides to choose from if you get a meal or you can order them separately. They also cater so you can call ahead and order. They are a food truck and during the summer hours there's some seating nearby that you can sit at but most take it to go. They are located on the southwest corner of the gas station. So if you're in the area or willing to make the trip definitely go check this place out. You will not be disappointed at how amazing the food is!!!

    I went to Pop's BBQ food truck a few days ago and his food was delicious. It had taken along time for my order but was worth the wait. I had the ribs tips with his off the chain Mac and cheese. The Mac and cheese was hot and creamy and the rib tips were very tender. This was very filling for 2 people and we had leftovers the next day.

    I have been trying to get here for years now and due to there scheduled/seasonal hours and my work/personal schedule and just remembering them I have not been able to get there. Well the planets were all in alignment and I finally got to try them. They are in a gas station parking lot with limited plastic seating so grab and go is the way to go. There was a line forming as I pulled in and parking was filling up fast and the line behind me was growing. It's a trailer with a small grill on the back and a mobile smoker next to it and both were at full operation, see my pictures. It took a good 10 minutes plus to get my bbq and I left smelling like smoke. There was a guy who was obviously the boss working the crowd, saying hello and acknowledging regular customers. He gladly opened the smoker/grill when I asked him just so I could take a picture of what was cooking during my visit, that was cool. I always ask for an un cut slab with sauce on the side so I can see how the bbq stands on its own and because sauce is like A holes, everyone has one and I don't like half of them because everyone has there own idea of what BBQ sauce is. The half slab is $13 and you can make at a dinner with $1 sides if you want. The ribs looked and smelled good. The ribs were St. Louis style and meaty and looked very fresh and moist. The ribs had no bark but they were seasoned well and had a nice grill flavor. They have what I think is the perfect chew for ribs so I was happy with the texture. They were in fact moist and hot from a pan that just came from the smoker as I waited in line. I liked the well seasoned grill/smokey flavor with just enough fat to please, the moist seasoned ribs leads me to believe they are brined because every bite seasoned. The sauce was one that I actually liked because four flavors were in a fist fight with sweet, bold, tangy and a spicy finish so I used a little on the meat but not much because the ribs had good flavor even with out a bark on them. Overall this is one of the better BBQ rib options in Milwaukee and easily puts a lot of brick and mortar places to shame. I would definitely come back for the ribs. The very hot out of the smoker/grill ribs traveled well and we're still hot when I got home was also a great part of Pops BBQ and gets them 4 stars. My final thoughts is that Pops is one of those destination places that you have to get to for the whole stand in line for BBQ from the smoker/grill to your hands.

    I'm not an expert on BBQ. I can't tell you what make Carolina BBQ different from Memphis BBQ or Texas BBQ. I only know two things about BBQ. 1) There is smoked BBQ. 2) There is non-smoked BBQ. I will eat anything that tastes good, but my preference is for smoked BBQ. I love the flavor of the rubs that are used tied together with the slightly smoky flavor from whatever wood they burned, whether apple or cherry or hickory or whatever. Pop's BBQ is a food truck located in the property of what is now an Andy's Gas Staion (I believe it is Andy's). They serve Memphis Style BBQ. It meant nothing to me, but maybe that means something to you. I'm very rarely on that part of town, but happened to be a couple of miles west on Saturday and remembered them, so I drove eastbound to try them out. I was disappointed that they were already out of brisket before noon, since that is my go to, but I went to my back up, the ribs. A half rack is $13 and a full rack is $25, but they had a special going during my visit for a full rack for $20. Also, a pulled pork sandwich is $7. That would have been my back up to the ribs. The smoker was behind the truck with more racks of ribs cooking away and looking beautiful! The ribs were delicious! I had to pull the meat off the bone with my teeth, as BBQ purist friends have told me is "how it should be," and the flavor was among the very best I've tasted on ribs in Milwaukee. I asked for sauce on the side because I like to try the house made sauces. This was was thin, but bold and spicy. I also picked up a subtle sweetness. I only dipped two ribs because I prefer them as is right out of the smoker. They were served with a regular hamburger bun, opened, and served as two slices of white bread. I would have liked a chunk of cornbread at the very least, if not a side of fries or slaw, but I loved every bite, so I carried on. A full rack was a lot of food, so I oly ate half and took the rest to my mother's house because she also loves ribs. She prefers hers with sauce and enjoyed the ribs and sauce very much. I definitely recommend Pop's BBQ and I hope I can make it back early enough for the brisket next time.

    Best rib tips in the city by far.I like to go early in the am and avoid the lines and get fresh off the grill food.

    Awesome rib tips and beef brisket sandwich. Too much to eat!!! But will definitely go back when I can! Worth the standing in line!!!

Saw that they were opened on Saturdays and decided to drive by in my way to the store and they were opened (Wednesdays and Saturdays 11-7). Proceeded to the store and upon walking out, you could smell the smoker from there! Upon pulling up and walking in, you are welcomed by the smell of smoked meats but not too over bearing, just right. The place is clean and well organized and I was greeted by the owner with a friendly smile. After a little conversation, I decided to go with 'the deuce' (2 meats and sides). I chose the tri-tip and pulled pork, greens and potato salad. Also the banana pudding! None of this disappointed in any way. stud Tri-tip was smokey and moist, the pulled pork just right, very little sauce needed. I tried some out of curiosity and was pleasantly surprised how well it complimented the meat. The sides were fresh and seasoned quite well. Lastly, the banana pudding was delicious. Nothing about this meal disappointed. If you like brisket, go with the tri-tip! Easy transition and it is the best of both worlds for brisket (mostly lean with some marbling). Definitely will be coming back to try everything else on the menu! This is a must if you like good BBQ!

Instead, they opened a location in Brown Deer, which I guess isn't super far away. I ordered a $19 combo platter of spareribs and smoked chicken thighs with sides of BBQ rice and (for $2 more) hand cut fries. I upgraded to the corn bread muffin for a $1 extra (which they didn't bother including in the to go bag) and added three smoked wings to the combo platter for $5. I also got a $9 side of smoked gouda mac and cheese. My initial reaction when I opened the $27 combo platter container was "really, that's it"? Now, to be fair, the chicken was de-boned, so that took up less room, and I'll again mention they didn't give me the corn bread muffin I ordered so that would have taken up some space. Plus, the wings in the container were extra, so without those it would look even skimpier albeit slightly cheaper priced. All that said, the meats tasted good and had nice smoke flavor. I enjoyed their BBQ sauce, which I appreciate coming on the side for dipping. The rice was a little hard, but still edible. I thought the smoked gouda mac and cheese was great, but it's a tad pricey for a side item.
