My friends split a rack and I swear they nearly sucked the marrow out of the bones it was so good! Well I'm definitely doing the rib tips but it was too early because they just went on the grill, see my pictures so I would have to stop back later in the day. 3 hours went by so I went back and asked if he still had some rib tips left and he said yes so I'm down with that. He is there Tuesday to Saturday 10:30 to 4pm he says. The rib tips looked amazing on the grill and I took a picture so you could see the before and after pictures of the cooked rib rips. I ordered the meat only for $10 because the sides didn't interest at all and did my car smell so good so I pulled over because I couldn't wait to try them. The rib tips had a nice looking bark that was seasoned nicely and tasty I thought. The rib meat had that little chew that I like because I don't like the mush fall off the bone meat. The rib tips were meaty and not all cartilage with most of the meat chopped off like some places. The meat was very tasty with that bark and a deep grilled flavor that I really liked, like a backyard bbq. I really like that he uses charcoal to cook his food because it's so hard to find places that cook with charcoal anymore and he seems like a like a really nice guy and he let me take my pictures which helps his business. I didn't even use the bbq sauce because the meat stands on its own by the way. There is no bbq in the immediate area that I can think of so this is a nice addition to the neighborhood if your looking for some tasty rib tips here you go. My second thought was that's a nice bark. My third thought was that's a nice smoke ring. The 1/2 rack was a proper 1/2 rack with moist meat that comes clean off the bone. They didn't have that little chew that I like. The ribs were tasty with a nice smoke flavor that has a little kick finish. I can't speak on the rest of the meat's because I'm a rib guy all my life. Overall the BBQ ribs are solid and they have a place in the Milwaukee BBQ community. Did they de thrown my favorite BBQ no but I can get really good ribs with out driving an hour. These people make BBQ and sides that will make you want to slap your mama! Yes, I said it! You will want to slap somebody sitting really close to you because the BBQ is gooooooooood!!!! All-in-all, get on over during the day to get some of this good old fashioned BBQ joint food. Be sure you get there before me or you might find there isn't enough to go around.
