But here's the thing: the moment that dried aku hit the table, all my food blogger instincts went completely out the window. It was just me and that fish, and nothing else mattered. The dried aku was everything the hype promised -- deeply savory, with that concentrated, almost smoky flavor you only get when something is made with real patience and skill.
