Maybe I should be ashamed to say this but I've never had flautas before yesterday. I didn't even know what they were. Flautas were on the menu at Pinche Pollo so I decided to give them a try. Wow! I'm addicted! They were crispy and crunchy and smothered in all kinds of guacamole goodness. Everything was fresh! Everything was hot and delicious! But that isn't even the best part! I wanted to try the steak quesadillas. Wow! The portion sizes were huge, the steak was very tasty and the cheese was, well, cheesy. That also isn't the best part! I went two days in a row to this place because I wanted to try more food, but mostly because I wanted to dry their other drink flavor. As amazing as the food is, the drinks are unbeatable! The limon drink is addictive! Get the large or be sad that you didn't get the large- your choice. The mango is so fresh, with the right amount of sweetness and complete freshness. Again, get the large. You're welcome. This is the spot for good food, good drinks and freshness galore.

Pinche Pollo keep blazing that chicken FIRE!!!!! Colorado show this establishment some love. First time today best decision in awhile!!!!!

A lot of places popped up, but this Mexican restaurant really stood out -- great reviews and the food pictures looked amazing. It's about 13 minutes from the airport, which made it super convenient. From the outside, it looks small, but once you walk in, it's surprisingly spacious. We were seated immediately, and our server was absolutely phenomenal -- so friendly, attentive, and welcoming. For an appetizer, we ordered the queso fundido with chorizo (you can choose corn or flour tortillas). This is one of my favorite dishes to get at any Mexican restaurant if they offer it, and this one did not disappoint. The cheese was perfectly melty and stretchy, and the chorizo had great flavor that paired so well with it. Wrapping that cheesy, savory goodness in a warm tortilla? So good. For my main dish, I ordered the quesabirria -- corn tortillas filled with birria and cheese, fried crispy, and served with consommé for dipping. It was decent, but I will say it didn't have quite as much flavor as I'm used to with quesabirria. Still enjoyable, just could've used a bit more seasoning. The beans were actually delicious and full of flavor, but the rice was a little bland and could've used some salt. Overall, the service was amazing, the restaurant was clean, and even though it was busy, everything came out in a timely manner. The prices were also very reasonable -- definitely not expensive for the quality and portions. I would absolutely come back to try other dishes. With just a little more seasoning in some areas, it would easily be a five-star spot for me!
