The West Coast Steak Sandwich was delicious. It was cooked perfectly. I got it with a side of crispy jalapeno potatoes. The potatoes were flavorful. I tried my husband's steak and it was really good. It was cooked the way my husband ordered it. He ordered his steak with a side of crispy jalapeno potatoes as well. As part of my husband's birthday celebration we ordered a slice of the Cinnamon Toast Crunch Cheesecake. The cheesecake was so good. It tasted exactly like Cinnamon Toast Crunch. The food was outstanding, and the view overlooking the quarry made the evening even more special. One of our favorite perks was that Happy Hour is available all day on Sundays. We started with a traditional margarita, a mango margarita, and a few mocktails, all of which were excellent. For appetizers, we shared the shrimp cocktail, fresh guacamole, and chicken flatbread. Everything was fresh, flavorful, and a great way to begin the meal. For our entrées, I ordered the cedar-planked salmon with miso soy glaze, and it was absolutely delicious. The salmon was perfectly cooked and practically melted in my mouth. My partner enjoyed the same dish and loved it as well. My youngest daughter ordered the New York strip steak with mashed potatoes, her boyfriend chose the ribeye steak with French fries (they definitely have expensive taste!), and my other daughter had the grilled rainbow trout. Every dish was beautifully prepared and thoroughly enjoyed. The red wine paired perfectly with our meal, and the staff graciously allowed us to bring a birthday cake, which made the celebration even more memorable. Between the exceptional food, beautiful atmosphere, great drinks, and attentive service, it was the perfect birthday celebration. It's something that seems perfectly possible in pretty much every other country but the U.S. The moment you sit down, the waiter asks what they can get for you. They handed you the menu three seconds ago. There was absolutely no time to glance through it, evaluate your options, or discuss them with whoever you're sharing the table with. This happened at Roaring Fork, but it also happens 95% of the time I go out to dinner. Then the food comes, you eat, say no to dessert, and voilà: the check is waiting for you! Again, you can't just sit back and relax, take your time deciding whether you want dessert, maybe order a coffee or another drink. They want you out of there ASAP, and somehow you're still expected to tip 20%, which is ludicrous, but this is another conversation. Now, specifically regarding Roaring Fork, I do wonder what actually constitutes a "fancy" place. What is it? The view of the lake isn't exactly impressive. The inside is cute. Does having a cute interior make a place fancy, is that it? Or is it the high-priced menu? There's no bread offered at the table, nothing particularly special. I am genuinely lost when it comes to what makes a place "nice" these days.

Heaven was the lead on the day of the party, and she was fantastic--warm, helpful, and always making sure everything ran smoothly. Everyone we encountered was so kind and welcoming. Cale was our server, and he truly went above and beyond. We kept him very busy with a party of 25, but he handled it all with a great attitude. He was hardworking, personable, and just an incredibly nice guy. The food and drinks were amazing. I only wish I had been able to eat more myself, but all of our guests raved about everything! Most importantly, my husband was genuinely surprised, and everyone had a wonderful time. Catarina, the general manager, followed up with me afterward to make sure I was happy with the service and how everything went. She was amazing as well, and I truly appreciated her taking the time to personally check in with me. The atmosphere was fun and lively, and the entire event was exactly what I had hoped for. I highly recommend Culinary Dropout for a private event--especially working with Tra, Heaven, Cale, and Catarina.
