    I'd give this place a 3.5 stars. Been here twice now. Location is convenient for the Erie area. Portions are fair and meat is generous. I like the pho broth as well as the Bun Bo Hue. bun Bo hue has a tom yum flavor profile which I appreciate. I wish there was pork hock and blood in it. I seemed to only have brisket and tendon in mine. The reason I give this place a 3.5 is because of the apps. I was quite disappointed in them. The fish sauce chicken wing flavor is actually good, but the portion is inaccurate. It says 5 pieces but what I got was 2 drums and 3 half wings? Lastly I don't recommend the scallop..it was very dry and stuck to the shell.

    Please take this with a grain of salt - PHO-Ever is brand spanking new and I imagine needs some time to get into their groove as a new place in a town that is rapidly expanding. There aren't a ton of restaurants in the general vicinity, so I feel like everyone's super excited to have another food option. The restaurant right near downtown Erie next to the new Colliers Hill residential development. It's in a small commercial/retail area surrounded by various businesses and small shops. Parking can get tight, as the lot they're in is shared between a few other suites, so keep that in mind if you're planning on visiting during peak hours. With all the development happening, I fully expect that it will only get more busy. The interior is bigger than it appears from the front, and the decor inside is pretty sleek and neat looking. The colors are a little dark, which I am a fan of, and there is a lot of natural light let in my the front window; lots of art and plants are around to give the ambiance a nice, chill feel. We stopped in for lunch on a Saturday and it was busy, but not packed. We were able to get a table pretty quickly and the gentleman that helped us was very friendly. The menu is good sized with lots of different options, including some pretty bomb looking appetizers. Unfortunately, there were quite a few things on the menu that were unavailable at the time we visited. Our waiter had to come back to us three or four separate times to let us know that various menu items were out of stock. Here's where I'm giving lots of grace; they're super new and I'm sure working out the kinks, but I am hopeful that they will be able to bounce back quickly and get into the swing of things. Having a pho place nearby is so awesome, so I am hoping for nothing but the best. We ended up settling on dumplings, pho, and a banh mi sandwich. The dumplings were our third choice of appetizer after the first two weren't available lol. It took a little while for them to come out, but they were hot and had good flavor! If they were served with a couple of small plates as a standard, even better. My bf was pretty underwhelmed by the sandwich; there was not a lot of filling compared to the amount of bread, so he felt it lacked sustenance and wasn't super flavorful. He also initially wanted to order the lunch special that comes with a fruit tea, but alas, no fruit tea was available. The pho was actually pretty tasty; the broth came out very hot (which is always something I look for), there were a lot of veggies (added separately), and the amount and overall flavor of the chicken was pretty good. I'd say the pho was very easily the better of the two meals. I'm anxious to give them another shot when things are more settled! I think being more up front about out of stock items would be helpful to avoid a bunch of back and forth, but the overall experience was otherwise pleasant.

    Best Pho in Northern CO! I was so happy to see a pho spot in Erie, Colorado. It's super clean, spacious, and there is plenty of easy parking. The service was very fast, they were friendly, and deserving of a great tip! In terms of food, the egg rolls were small in size but freshly fried with a great crunch and tasty filling. I really enjoyed the pho broth, it was authentic, rich, and fatty with a clean flavor. There is only one size for the pho, I would say about between a medium and large bowl. But they also have kids sized bowls. Finally, I appreciate how well cleaned the vegetables for pho were, they looked new and fresh. I will be a loyal customer and can't wait to try more!

    It's awesome that they have a whole page of vegan options on their menu. Can't wait to go back and try all the other vegan dishes. The people that work there are really nice too.

    Best Vietnamese food within 20 miles of Erie. It's always fresh and fast. Perfect for a lunch break or a date night.

    Got the tofu spring rolls and steak pho. Everything was hot and delicious, broth had great flavor. Highly recommend very yummy lunch!

I got the Hellfire Ramen, a tonkotsu-based ramen served with their house spicy sauce, chili oil, pork shoulder, and a soft boiled egg. The broth was rich and flavorful, the spice level was perfect (quiet hot but still maintaining a good balance of flavors), and the pork shoulder was tender but still has a bit of nice toothsomeness. Overall, this was an excellent bowl of ramen comparable to any of the top spots in Denver. The only slight downside is that the broth was just a tough too salty for my liking, and I would've preferred a soy marinated egg over a soft boiled egg. They have other ramen here was well, such as a chicken-based shio ramen, a regular tonkotsu, and a Thai curry ramen. I definitely would return to try the other ramen. If the other items on this menu is as tasty, I wouldn't hesitate to give them 5 stars.

Asian Cajun has neither. $20 for the fried oyster platter: the smallest flavorless oysters ever, obviously bought from SISCO, and a small handful of Cajun fries that I needed to dunk in ketchup, and if I need to use ketchup on your fries, that is a very bad sign, as I rarely use ketchup. I know from talking to the owner that the fries are $4 and you get a small handful. $16 for a soft shell crab basket: The difference between a basket and a platter is that the basket does not come with fries. These were small, overcooked, super oily crabs that tasted okay when dipped in their remoulade sauce. But nothing a Cajun or an Asian would say was seasoned properly. $50 for 3lbs of crawfish boil: I got the "all in" sauce, but could not taste any garlic, lemon, or Cajun seasoning. This is Prime time for Crawfish supposed to be the largest and best crawfish, harvested right now (but these were probably imported frozen from China; the shells were super soft and clung to the meat like previously frozen, cheap crawfish). There were a couple of medium to large crawfish in the bowl, and the rest were tiny, as small or smaller than my pinky finger. When you cook really small crawfish with medium to large crawfish, the little ones get mushy and are very hard to peel, and fall apart with the shell. $5 for added broccoli, which appeared to be frozen, thawed broccoli that turned to mush when cooked with the crawfish. When I got home, I added MSG and Old Bay seasoning to the bag, so hopefully it will taste better later. (I peeled all the crawfish there to make eating later easier and less messy.) You can buy a pound of frozen crawfish tails from Louisiana for $25 and get a ton more meat, much higher quality meat. $3.50 for a Diet Coke and $1.00 per refill. That is criminal pricing for the item on your menu with the highest margin of profit, and they do not tell you beforehand that refills are extra. And the waitress was so reluctant to get me refills, at one point, I had to walk to the counter to get a refill. They were not super busy, but she (the owner) was the only person working the front of the house. Three not very large sodas for $5.50 total... Circle K sells a 44-ounce soda for $1, tax included, and I am sure they still make a profit. Angel (the owner) was super friendly except for when asking for refills, but took a really long time to get back to me for anything. It was nice that she brought the check to the table and took my payment there instead of at the counter, since I walk with a cane. But no amount of friendliness, cleanliness, or nice decor will overcome bad food, especially at these prices.
