I honestly can't recommend Pho Central in Carlsbad enough. After trying a lot of different pho restaurants around North County, this has easily become one of my favorite spots. From the moment you walk in, the atmosphere feels clean, welcoming, and relaxed, and the staff makes you feel like you're genuinely appreciated as a customer instead of just another order. The first thing that stood out to me was the pho. The broth has that rich, comforting flavor that you can tell comes from taking the time to prepare it properly instead of rushing it. It's clean, aromatic, and full of flavor without being overly salty or greasy. The noodles always have a great texture, and the meat is fresh and tender. This place makes the best Banh Mi ever. I come here literally every single day. I cannot make this up how flavorful the meat is and the crispy baguette and how fresh the cilantro and pickled carrots inside. Its the best combo of extremely fresh and flavorful. My husband and I came here for lunch on a Friday. There were quite a bit of people having lunch but there were no lines into most of the eateries in the area. We opted to grab lunch at Pho Central. I was going to order pho but I thought I'd order something different. I ordered #21 - grilled chicken with egg rolls and rice noodles. My husband ordered #28 - grilled chicken with egg rolls and rice. It came out in a reasonable amount of time. The portion size was good. The egg roll pieces in the dish was the best part. The sauce was in the side, but it wasn't for me personally. I ate what I could and brought it home and added my own sauce. I do look forward to returning to trying their pho. read more

My husband and I stopped in for dinner and was able to watch the World Cup on their giant TV . This establishment has indoor outdoor seating which is great for a cool breezy day/night. I visited with my family because of the great reviews, but the food was extremely disappointing. The Pho Special had very little meat or other toppings--just a large amount of noodles. The fresh spring rolls contained only one very thin slice of shrimp, one tiny slice of meat, and were mostly filled with noodles. The egg rolls were as thin as a finger and were served without any lettuce. The pho broth was extremely salty. I also asked for sliced onions, but they only gave me a few tiny strands. Overall, not only was the food lacking in flavor, but it was obvious that they were cutting corners on the ingredients. We paid a lot for a very disappointing meal. They have indoor seating, yet if you dine in you're given plastic to-go utensils which is a big pet peeve of mine, especially when eating pho. Located in a shopping plaza in an area that mostly has office buildings, it was quiet on a Saturday morning, but there still were people coming to get their fix. You order at the counter and then they bring you your food to the table. The cutlery was all disposable, but the dishes and bowls are reusable if you are tracking that sort of thing.
