Only problem was the ramen soup. My wife tried the chashu miso Tonkotsu. I tried the tsukemen. First of all, the salt content of the soup was not properly adjusted. Like I don't think it was intentional because some people prefers low sodium. It was way out of the range low. Second, the soup felt watery. Like when I eat tsukemen, I need the soup to get better entangled with the noodles and it fell off thy noodles. And my wife's soup felt a bit flat. There were many various dishes on the menu, aside from the good array of Ramen, to choose from. But tonight we were craving Ramen. This place left me disappointed. I came here because I thought I would give it a shot. I was thoroughly disappointed with their ramen. Their chicken karaage was okay, and everything else was ok. This restaurant was amazing!! The ramen was incredible. Delicious broth with both the chashu and the vegetarian ramen. It is a small but very traditional looking Japanese restaurant with nice tables and chairs. My family ordered takeout for our first experience at Ichitaru Ramen last night although we know they have been open for a few years. The Koi Ramen (Spicy Miso) was delightful, rich flavorful soup, tender noodles and the meat (pork?) was so tender and tasty. My son ordered the Fried Chicken Ramen (Spicy Miso) and Spicy Garlic Edamame. He ate the whole bowl of Ramen and saved the leftover Edamame to finish as a snack later. We also shared (2) ordered of the hand made Gyoza and they were absolutely exceptional. My husband ordered the Katsu Don. Although he wanted it with the egg onion sauce, it came Katsu style with the Japanese BBQ sauce; he enjoyed it anyway. Next time he will clarify how to order with the egg sauce. Overall the quality of everything we ordered was excellent and will definitely ordered each of these items again. We were very pleased with the service. Thank you Ichitaru! Not sure yet if the food is actually good, but the wait time is awful--even though I preordered through DoorDash. On top of that, they pack hot food in foam containers, which is really disappointing. Styrofoam/foam boxes aren't meant for high heat, and when hot food sits in them, there's a risk of chemicals leaching into the food. The good was that they have seafood ramen (chanpon ramen), which hardly anyone carries, and which I've been eating since I first tried it in Cypress and later here near home in Carlsbad. The bad is that the quality of their pork chashu and their shrimp dropped significantly in recent months (the pork) and/or days (the shrimp). Don't think your customers won't notice this. I asked for the regular tonkatsu broth, and the server didn't even know what that is. Never order from a Ramen place that doesn't even know what the word Tonkatsu means. The Ramen and the pork buns came out and the bun was something you get an discount grocery store where the items have expired six months ago, and not at all fresh. The noodles or worse. Absolutely taste like trash. Looks like trash also, see photo. I ate a few bites and throw the rest away, and I was starving. Oh server also got a bad attitude. The interior of the place is absolutely greasy filthy and disgusting. Doesn't look like any cleaning has been done in a long time. Makes one wonder about the cleanliness of the food. I had this order through DoorDash and it was amazing that it was on time and food was fresh for us to eat. Kudos to DoorDash. Brian was able to find us and deliver the food with ease. I ordered the standard spicy 2 ramen while my friend ordered the wonton ramen and another ordered takoyaki. I had the spicy miso lvl 3, with egg noodles + ramen egg. Spicyness is a x/20 and level 3 to me seemed like a level 5 out of 10 at other ramen places. It was spicy! The broth was good and fatty, and the noodles were cooked to the perfect texture - not soggy but not al dente either. The ramen egg was tasty, a bit more flavored than i am used to. Noodles, broth and a tiny piece of meat for $16??? If it was good and full of flavor with plenty of meat and toppings then absolutely. Straight up, asked direct questions about what I was ordering, and I was assured that I was getting what I thought I was getting and instead got exactly what I told them I didn't want. 90% of the dish was bland, unseasoned thick gross noodles (that I asked if they were the thin kind and told yes), three whole shrimp, a couple slices of onion, and a few pieces of frozen broccoli. No detectable seasoning. $19 with tip. I'm so sick of spending this kind of money on a meal expecting better and it just sucks especially at this place. I've had better frozen meals from the grocery store for $5. This place needs to try a lot harder or close down. If memory serves correctly, we haven't done a ramen review since our trip to Vancouver, B.C., way back in March. Clearly that needed to change, so I paid another visit to Ichitaru Ramen. Since my last visit there have been a few minor changes (including no longer ordering at the counter, but rather from your table now). I sampled the "Garlic Bomb Ramen" and it was as good as in prior visits. Although it was never an issue in the past, I appreciated that they now permit you to select your preferred level of spiciness. While I found the broth to be a little salty, the noodles were buttery and the slices of pork were thick, tender, and flavorful. For dessert I felt compelled to sample the "Cocoa Milky Jujube" and I was disappointed to learn that it was pre-packaged. While it doesn't look like much once unwrapped, it does provide a spongy flavor fullness accented nicely by the crunchy almonds. Although I didn't partake during this visit , there are multiple hot/cold sake (as well as Vegan) options available. No matter what you order I'd recommend trying a "Ramune" Japanese soft drink if for no other reason than the experience. I found it effervescent and flavorful, with a little less sweetness than a typical soda. What makes this beverage remarkable is the packaging. Personally I can't recall another bottled beverage with detailed and multi-step opening instructions. I'll be honest and admit that after the first few steps I surrendered and requested assistance to cross the bottle opening finish line. Thankfully my server was friendly and attentive! The culprit in this happy conundrum is a glass marble at the top of the bottle that needs to be dislodged upon opening. You'll know once that occurs when you hear the associated fizz commencing. The glass marble rattles around while you enjoy the soda and somehow conjures comparisons to baby bottles and rattles. ‍ If you're feeling adventurous, perhaps you should consider their "Challenge The Spice Rules" Competition. If you can down "20 degrees of spicy" in a 30 minute period you'll be entitled to "a permanent free topping." I counted 20+ brave men and women who have proudly ascended this mountain of spiciness. The hubby and I came here for an early afternoon date. The establishment is in a plaza with plenty of parking. The service upon entering was very inviting. Staff diligently working at the counter and thoroughly cleaning the tables. Super friendly and attentive customer service throughout our dinning experience. The food was fresh cooked to order and didn't take long at all. Chicken was delicious and rice when combined with the soy ginger sauce... Chef kiss The chicken was garlic seasoned and not salty like some places. There is an orange sauce that the chicken is normally coated in however we asked for it on the side just in case it had too much of a kick but surprisingly it was very flavorful with just a little kick and made this dish really pop with flavor. I came in wanting ramen but the staff was more than happy to answer all my questions about the cuisines and expressed sadly that all ramens were made with pork based broth which is common (I just had no clue) or had pork in miso (which contains pork in the vegetable ramen) so those were a no go for me.
