First, you line up at the entrance, then you ring the doorbell, but only once as the sign warns. You are greeted through a peekaboo window in the door where they ask your party size. You are then taken in groups of three or less to a vestibule where they lock down your phones so you can't take any pictures and then you are seated in the dark and moody atmosphere. They don't split checks, so be ready to order as a group. There's a 90 minute time limit as well, so don't dawdle. Highlights of our order included the Butter Pecan Old Fashioned (so good!) and the Banana Daiquiri. We stayed for the full 90 minutes and when we left there was a long line waiting to get in. Go early if you want to get one of the few seats inside or be prepared to wait. We loved our experience.

We ended up checking in at the restaurant next door and they told us where to find it and to let them know that we had a reservation. (Not sure if everyone has to do this extra step or if you can just go here) We let the gentleman working know that we had a reservation when he popped out from the peep hole. We first went into a very small room full of books and he explained the process and locked our phones in a bag. They take this seriously. You were not going to have access to your phone. I'm sure the material was made to protect it from getting anything sneaky through. They do, however, tell you to keep the phone with you so it is always in your posession. The inside was quite beautiful. It felt like a speakeasy, quiet and through magical doors where you are not meant to be found. We were seated at the bar and were immediately given water. I first started with a raspberry mojito. I forgot what my husband got the first time. For his second drink he tried their version of the Grasshopper which claimed to taste just like mint and chip ice cream. He was absolutely blown away and said "Wow!" every time he took a sip. I tried it and it was spot on! I didn't want another alcoholic beverage so I got their mocktail version of an Orange Julius and it was delicious! We told the bartender (I forgot his name) how amazing the drinks were and especially the Grasshopper and he got into it and told us how it is made and what processes they go through. It actually has milk but you would never know by looking at it. Service was great. When we left we had to hand the bartenders our bagged phones so they could use a machine to unlock it. I told them this felt like Fort Knox. Too funny.

The ambiance is dark but fitting--dare I say, even sexy. Who doesn't like a little sexy? The wine selection is always excellent and served wonderfully by the staff. Andrea (short, yet incredibly vivacious) greeted us with a smile and complete professionalism. For someone that short, you might expect the vibe of an older sister teasing you and your buddies for being idiots--but she was anything but that. Having a place in town where you can go on a random date night--cover charge or not (get over it, people, the cover isn't that much)--is fantastic to have as an option. It's Paso, folks. There's only so much we can do here, and what Libretto and their staff are doing is hospitality first. Sadly, that's become a bit of a lost art in our town. But the people here are nothing like the heathen hostesses elsewhere who claw the menus with their freshly pressed gels while seating you at the worst table, all whilst saying "thank yeeewww." Thanks, Libretto, for doing better and for having such a wonderful team to host our evenings out.

Everyone is nice, welcoming, and makes you feel right at home. On this visit, we shared the Shishito Peppers and Chopped Salad, along with a few cocktails. I ordered the Fried Chicken, which was the Wednesday special, and my wife chose the Shrimp & Grits. Both the salad and Shishito Peppers were on point. The Fried Chicken came out hot and fresh, and they definitely give you plenty. The flavor was good, but most of the seasoning was in the crust rather than the meat itself. Without the crust, the chicken didn't have quite enough seasoning for my taste. That said, the crust was crispy, flavorful, and definitely did its job. Now, the Shrimp & Grits were a HIT! Buttery deliciousness and a straight-up flavor bomb! The grits were perfectly cooked, and the shrimp were tender, buttery, and delicious. Definitely a winner. Whether you're popping in for a cocktail and some snacks or sitting down for a full meal, either way, you won't be disappointed. The Hatch has a great atmosphere, good food, and friendly service. We paired everything with a bottle of red wine made specifically for Della's, and it was perfect with the meal. And a huge shoutout to the busser who went above and beyond! As soon as you walk in, you can smell the wood burning, smells great. The inside is small but not cramped, it's modern and cozy. They have a nice bar, it seems cute for a date night or to grab cocktails with a few friends. Pretty simple menu, they specialize in wood-fired pizzas and cocktails. We got the seasonal salad, which was solid. This rotates based on what's in season - it had nectarines, tomato, burrata - nice and clean, but the portion was pretty small. We also got the chicken cutlet, which came covered in a salad-type mixture. The salad topping was actually great, I would've eaten this as a salad by itself, but the chicken cutlet didn't have much flavor or seasoning. The sun-dried tomatoes in the topping helped add flavor, but on its own, the chicken was very thick and bland. We also got 2 pizzas, Girl Crush and Chicago Fire. These were thin crust pizzas, and while the dough and the toppings were good, there was WAY too much cheese on them. I say this as a cheese lover, but the pizzas were weighed down so heavily by the cheese that it was very difficult to pull slices apart. The ratios just seemed off. Flavor wise, we preferred the Girl Crush. The lemon fragrance is pretty strong on the Chicago Fire, so it overpowered the other flavors. Lastly, we ended with the classic tiramisu, which was good - nice and light, not too sweet. Food was just okay, our server Adam was great!!

The line was long and it took us about 30 minutes to order. When we sat down, we quickly realized they were serving 1 person at a time. Not one table, not one order. 1 person. It took nearly 10 minutes to serve each table, and everyone ate by themselves. We could over come that, had it not taken 75 minutes to get our order. We were grumpy, cold, and very hungry by the time to food arrived. My $15 nachos with $9 of brisket on top, was the size of a kids appetizer. I was so surprised when it was brought over, that I asked if another tray or 2 were coming. They were not. The side dishes were not correct. The bbq sauce on my 10 and 12 year old's burgers was not on the side, which they didn't like. Sad to say, we won't be returning until they 1) figure out how to cook at a pace a restaurant requires, and 2) figure out how to make orders as they were placed.

I especially want to recognize the young woman working the Starbucks/food service counter in the lobby during our visit. She never stopped hustling and kept everything moving with a great attitude. Honestly, the fact that one person was left to run the entire cafe by herself feels like a management staffing issue, not an employee issue. Management should make sure the cafe is properly staffed, and if someone calls in sick or doesn't show up, leadership should step in to help rather than leaving one employee to carry the entire workload alone. That said, our cafe experience remained positive largely because of her work ethic and professionalism. She deserves recognition for holding it all together and taking care of guests under what looked like a very stressful situation. I only wish I had gotten her name.
