You know, I was a little sad that Molly's Cupcakes was closing but when I found out the folks behind Dixboro Project were opening up a bakery here, I was no longer sad.
Their grand opening was Aug 19, 2026 and it looked hopping. I came the second day and it was manageable around 8:15am.
As you'd expect from the genius behind the Dixboro Project pastries (Jin Capobianco Gorian), the laminated pastries are IMPECCABLE. Because I always get my fill there, I decided to go for some of the different items:
*Ka'ak bagel ($5 each)- got both the sesame and za'atar! This was LOVELY and so glad I can get this on a reliable basis in town. It's like an oblong bagel!
*Flan Patissier Tartlet ($8 each) - these look like little de natas/dan tat and are just as delightful - nay, maybe even MORE delightful because of that laminated flaky crunch on the outside. Wow. This ended up being my favorite.
*Pop Tart ($7 each) - it didn't state the flavor so I wasn't sure if it was just going to taste like the color pink. Nope, it ended up being SUCH good strawberry. The interior is like what Pop-Tarts tried to do with the new super stuffed line but without being overly sweet at all. Also, the icing was perfect - it was also so fruit forward! You can tell in something like this that they use really good ingredients!
*Brown Butter Cherry Oatmeal Cookie ($6 each) - the flavor was so so good on these. The browned butter with the oatmeal. Not too sweet either. I also like the way they baked these, they're almost puck like!
*Mazagran Cold Brew ($7) - YOU ARE STUNNING. Mazagran is Algerian beverage - sweetened and with lemon. It's like Hong Kong Lemon Tea meets Cold Brew. For this alone, I will be back (with a pastry ofc).
This location is going to be tougher for me to get to than Dixboro Project but will be worth it for the expanded offerings
