The fill ratio was correct: I was able to hold it closed without really squeezing, and better, nothing was soggy to weaken the very lightly warmed tortilla. Somewhere in the chaos of downtown Austin you can find OneTaco - Frost Tower. One of many locations, this spot is conveniently located on the ground floor right next to a parking garage. The atmosphere was decent, a taco joint with self serve salsa and a few seats towards the back. Service was friendly and the food came out quick too. We tried a few tacos and cheese quesadillas so we had a diverse spread. As far as tacos go, it's hard to make bad tacos and these were about as middle of the road as they come. We were very excited for the birria taco and it fell very flat, the corn tortillas don't taste too fresh and the consome was pretty bland. The al pastor taco was okay, not a huge fan of pineapple on it but we can't dock points for something we could easily choose to remove. The best taco by far was the carne asada, it was juicy and full of flavor, all around delicious. They offer two vegetarian taco options which was helpful since on of our friends is vegetarian and they really liked them curing their flavorfulness. Our cheese quesadillas were okay, again hard to mess up cheese and bread. The flour tortillas definitely taste better than the corn here, which is something we don't come across often. I had the pleasure of learning about this place catering style in a parking lot at a Howler Brothers FC Party. The Barbacoa is BOMB. I think I had like 3 of them. Ok ok maybe 4.... I even wanted to ask them when the party was wrapping up if they had extra barbacoa that needed a home to go to. But...I didn't. Still kicking myself for not even trying lol. Juicy but not greasy. Corn tortilla was sturdy but not too thick. Veggie topping options were fresh. The flavor on point - I didn't even need to add their house sauce. And to speak for the catering - the setup was a great idea. They had heated servers of each of the meats and made your taco fresh to order. It was all new to me and walked up to order a Pollo Asado where the menu said was Grilled Chicken, Cheese Black Beans, Avocado & Chipotle Sauce along with a Topo Chico. The taco was just delicious with that Mexican flavor to it. The chicken was cooked perfectly, tasty spices, and soft touch to my mouth. I was amazed and definitely place One Taco in my Austin top 3. The menu has regular lunch and dinner options as well as all day breakfast tacos. I went with the Migas, I love Bacon, Jefe, and Barbacoa. Each came with eggs and a meat along with salsa. The one without meat was the Migas which was actually vegetarian. That one came with avocado and tortillas chips. An interesting combo but super delicious. It was also a bit lighter to the stomach. The low star is not about food but service. I ordered 6 street tacos to go (I bought food for my older brother and I), 5 al pastor and one Birria, as you all know al pastor is pork and pineapples. Mind you my younger brother had got 3 street tacos 2 of them was al pastor the biggest difference was he ordered to eat for here. So his tacos are displayed with pineapples but mines are wrapped because I wanted mines to go. We ended up eating outside and I opened my tacos and realized none of my tacos had pineapples (they don't sell trompo which is just pork), I go inside to tell them about their mistake and the guy that makes the tortillas gave me a personal cup full of pineapples. I thought ok everything is good.... NOPE. When I went to put the pineapples on my tacos I realized that they were all frozen. Dude gave me frozen pineapples like I ordered dessert in a Hawaiian joint. I know it's SXSW week and you might not care too much about first time customers "to go" but this is ridiculous. The barbacoa was tender, fatty, and flavorful as expected. The carne asada was tender, but the flavor of the meat felt drowned out by the sauce. Don't get me wrong, I loved the sauce. But the flavor of the meat itself was just average. Same sorts of feelings about the al pastor. The meat was tender, but the flavor needed improvement. I've also never had such big pieces of pineapple included on my tacos either. Call me picky, but I just wasn't impressed with the tacos and that's really the reason for a lower rating.
