For anyone living in the Irvine area this is the guy to come to if you need your knives sharpened. I don't think he has a storefront in Garden Grove, that's just where he is based out of. I noticed Sharp Edge has a booth (actually his van) every Sunday at the OC Great Park Farmers Market so I brought a couple cheap kitchen knives as well as a couple high quality kitchen knives to be sharpened. Great mom and pop business. Best part for me was that if you go to their website, they show all the local places they will be at, they seem to frequent many of the various farmer market venues in OC. I sent an email to them verifying if they would be at a particular location on a particular day, and they replied very quickly with the confirmation I was looking for. My chef knife had a slight ding at the tip which was trivial to grind down as part of a normal knife sharpening process, but for some dumb reason (apparently liability concerns), both Sur La Table and Williams Sonoma refused to do it. Talked to OC Knife Sharpening, and he took care of the sharpening and tip in less than 10 minutes, he even straightened out the blade which I wasn't aware was slightly bent. I have been coming to Junhao for over a decade now and I won't go to anyone else. I am very very picky about the way my Wustoff, Henkels, Rykoff knives & scissors are sharpened. I have seen sharpeners damage not only the blade but the bolster. He does an amazing job and it incredibly honest. He's straightforward about what can be sharpened well and what cannot. He also sharpens the kitchen knives of many of the area's restaurants including Eddie V's so you know he is trusted. Chefs do NOT mess around with their knives! Absolutely blown away by the personal service, professionalism, and overall experience dealing with OC Knife Sharpening! I have a Henckels knife block of which all the knives needed to be professionally sharpened but the 8" chefs knife in that set had been so badly previously damaged that I honestly assumed it was a goner. However, they not only perfectly restored that particular knife, the entire set was so expertly sharpened that they were the sharpness equivalent of premium razor blades - and far, far better than they ever were when new!!
