Before dinner, I happened to be at the High Times Dispensary across the street, which overlooks Water Grill. When I mentioned to my budtender that I planned to eat there afterward, he told me he sees fresh seafood deliveries arriving every morning. That only increased my confidence and excitement about the meal. I started with a dozen Baywater Sweet oysters from Hood Canal, Washington. They were outstanding: fresh, flavorful, and perfectly sized. Not overly large or difficult to eat, just clean, delicious oysters that showcased their quality. For my entrée, I ordered the halibut, and all I can say is wow. Just take a look at the photo. It was beautifully prepared, incredibly flavorful, and absolutely worth ordering. The only reason I'm not giving Water Grill a full five stars is that the service was a bit slower than expected. That said, the food itself was easily five-star quality. I still had a fantastic dining experience. The cocktails were excellent, and there were plenty of TVs throughout the restaurant, making it a great spot to catch the Broncos game while I was in town. The cake cutting dragged the time way past our desired time to leave as we had a 7:30 show to catch, and the server was aware of this. The sever brought it out with our candles already lit which was great, but then left us alone for 15 minutes after he dropped it off with no plates or utensils. I finally chased him down and asked for these items, he came and whisked the cake away, then disappeared for another 10 minutes. I finally got up and found him near the servers station and once he saw me he pulled out the cake from around the corner in the kitchen and started cutting. Another server (wish I got his name) rudely said excuse me and lightly pushed me aside as if I was in his way. They clearly do not like it when people bring cakes. A gentleman later came to our table and apologized for the cake debacle and said they would waive the cutting fee. Gee, thanks. This definitely soured a good experience. Well, that and the cost of everything. We shared 3 sides and a couple apps, and probably 5 drinks, including 2 beers. It was over $120 per person. Only one person had steak. As a side note for management; Duck fat fries. The toy is gimmicky and toxic. Most plastics leech into hot food. I didn't try them for this reason.
