Found this place when I was in town for work. The pork wontons in spicy sauce were amazing! I should of gotten 2 orders! The sauce had spice and peanut flavoring! Yum!!!! I got the kids spicy miso. And wow they're not joking with the spice! I asked for hot sauce on the side definitely did not need this! I went in to pick up my order but wish I would Of stayed! I recalled visiting Nudo four years ago when I was previously in Spokane and really enjoying my meal. Being once again back in Spokane with work, I stopped in with friends and really had a great bowl of ramen. I was torn between Vegetable ramen and the Tan tan because spicy sesame broth just sounded perfect. My server suggested doing the veggie with the tan tan broth and it was ideal. I also added an egg, because ramen is better with an egg. We also had the spring rolls which were fine--very standard cabbagey filling and five to an order. The vibe of Nudo is very mod modern. Lichtenstein-esque murals on the walls, tables flanking the restaurant with community seating long tables in the center. Full bar available. read more

I was in Spokane for my union convention and trying to get a good walk in at lunch time. It was April and a freak snow storm thundered in and cut my walk short. And you know what's really good when you are unexpectedly cold and soggy? RAMEN. As the food and beverage guru for my delegation I had vetted many good places in Spokane on a long walk a few days before so I had been past NUDO downtown and thought it looked great. So I stepped into the sleek space decorated in white and bold art, was seated and cruised the menu. I ordered the Vegetable ramen that happened to be vegan and waited while scoping out the space and customers. There were a few others dining solo and wolfing down a quick lunch and a few groups (probably other union groups) seated at sleek, long tables making awkward conversation while trying to eat. I was kinda happy to be alone. Ramen is kind of a full-contact dining experience if you're me. The big bowl came and I added some Chile paste and dove in. It was a great combination of crisp vegetables, tender noodles and hot broth. I thawed, ate some more, warmed, ate some more, then sweated! Ramen nirvana achieved! I would go back here in a snap if I lived in Spokane! The rest of the menu looks good but the ramen was fantastic so I'd probably do that again. read more

Stopped by Nudo on a whim and was not disappointed! Had a few appetizers that were good enough I would def go back. The fried tofu wasn't super crispy, but that sticky glaze on it was great. I used the black vinegar from the guisa to dip the tofu in and it was just the right amount of acid to cut the sweet sauce. Gyoza was pretty good, I wish it had been just a little More crispy on the bottom though. read more

Went here Saturday night. Wasn't to full, staff was welcoming and pleasant. They were quick to take our order. For appetizer gyoza & crab wontons , I thought both were delicious. They were cooked perfectly with a nice crisp. My boyfriend got the spicy ramen and thought it was delicious. I got spicy tuna & the Seattle roll. I thought the spicy tuna was yummy, however would've like it a bit more cold and the cucumber slice was tiny. I also did enjoy the Seattle roll but it was almost to rich & sweet w/ a very small random placement of avocado. I think I should've just stuck with their specialty, ramen. Overall experience was 8/10, we enjoyed ourselves and the food and would return. read more

NUDO is such a good destination for your next sit down lunch when in town. From the moment you walk in, you're met with lovely decor, and the pop art on the walls makes it even more exciting of a dining space! (Love that special touch) Our hostess was quick to get my friend and I seated, and gave us plenty of time to thoroughly glaze over the menus while also keeping us well refreshed with constant refilling of our beverages. My wife and I love Nudo. We get takeout quite often. The fried rice, ramen, katsu, are all favorites. The only reason it's not 5 stars is that they pretty consistently mess up our order. If you order beef fried rice, you may get chicken. It's happened twice now. I really hope they can iron out these issues so I can change the rating to 5 stars. read more

The Good: Quantity is really good and will definitely fill you up. The noodles are cooked really well and the meat is juicy too. Ambience was good too! The not so good: I didn't like my broth as much as I would have. But obviously considering the location, I wouldn't take the above with a grain of salt. First time here, I tried the spicy miso ramen. The soup is just spicy and has not much flavor. The takoyaki is really good. The ice tea has a free refill. I guess I shouldn't use my CA standard to judge the food. The egg is a regular boiled egg and not the soy sauce egg I had in CA. I hope they have more time to improve their taste of food read more

I came in today right after open with a coworker. We were greeted, sat down, and then given menu's and drinks (one of which was not delivered). Only at this time, were then told that we could not place an order...the kitchen needed to catch up with a catering order and would have to wait 30 minutes to be served. In what world is this okay? When did we stoop so low as to not prioritize people physically in the building? I'm very disappointed and appalled with my trip today. That is a huge slap in the face to walk ins. This may be the last time I ever visit, which is sad, because the food is actually pretty good. read more

Yikes. Nudo took advantage of the lack of ramen in town and made a name for itself without much effort. It's like when a candidate wins office because there is no opposition. Sigh. I ordered the tonkatsu ramen lunch combo and was grateful that I had not ordered the standard size: the lunch size was more than enough for me in what I could stomach. The broth lacked any dimension and tasted like unappetizing tap water. I'd bet a pretty penny that Spokane has bad-tasting tap water and that Nudo uses that for the broths. The noodles were also overcooked. Ramen should be al dente or at the very least have some texture...the noodles I ate blended right into the bamboo shoots. Oh, and preservative-stored, bagged eggs? Really? The egg is everything for some people and I almost didn't eat my deformed piece of sadness if not for the need of protein. The yakitori needed a LOT of seasoning. Oh, and it needed to be taken off the grill about a minute prior. It was super dry and tough. Can't give up yet though. The spicy ramen still tempts me, so I hope that redeems this place next time! read more

I was pretty excited to try the Chicken Ramen Burger - this was their specialty. Unfortunately, it didn't meet my expectations. The portion was small, and the noodle bun didn't taste anything. Even with the special sauce that they have didn't make the burger taste great. Tonkotsu Ramen was good; Spicy Miso ramen was just ok. The ramen bowls here are very generous you might want to split them! The service was good and drinks were also very generous. We stopped in here before a show at the knitting factory and had a great time, though the nature of the seating makes it hard to avoid being right next to your neighbors and hearing their conversations - maybe not the best for an intimate evening but it was fine for our purposes. read more

The veggie review! Food: I was so excited when I saw two vegan ramen options in the menu. While the noodles and vegetable choices were on point, the broth for both of them weren't great. The miso broth was extremely bitter, I couldn't even finish it and that has never happened before. The sesame broth had a little curryish flavor to it, but the taste combinations didn't work out. The pineapple fried rice and the chowmein in the menu were the two things which stood out, the taste was on point. read more

Customer service is amazing and you can never go wrong with the takoyaki. Their ramen... MAJOR NO. The broth literally tasted like water. My group had to personally SEASON the ramen for us to be able to eat the ramen. Just to reiterate, the customer service is AMAZING 10/10 but when you're thinking about coming to this restaurant for ramen, I'd rather eat the instant cup of noodles. read more

NUDO is our go-to for takeout. Their ramen is certainly full-flavored and tasty, but their dishes are where it's at. We regularly get 2-3 meals out of their dishes, especially the fried rice which is always packed to the max. And speaking of, their fried rice is possibly the most flavorful fried rice I've had, especially the beef which has no up-charge and includes high quality cuts of beef. My wife craves their chow mein, and the pad thai is also fantastic. And we cannot order without either their gyoza or spring rolls. We look forward to eating in more, but if you're looking for a takeout option downtown, look no further. Staff is always friendly and there is free pick-up parking out front. My only complaint would be their ramen to-go is lacking in the amount of broth. You can pay for more, but it still doesn't provide enough in my opinion. read more

We specialize in all things Ramen. Amazing drinks, a huge list of appetizers and skewers, and an atmosphere that is both relaxing and cool.

History

Established in 2014.

After years of traveling, NUDO's owner Josh and Jingou Hissong had decided that what they always missed when coming home was the food. Whether it was a hole in the wall ramen shop in Paris or a warehouse sized noodle house in Beijing, they always missed the ramen. Being the owners of an Architecture firm (HDG Architecture) and another local restaurant (Ginger Asian Bistro) the couple knew that they could bring some of that flavor back to Spokane; both in the design and the menu. The interior is a mix of Japan cool, clean lines and an open street-side feel. The food is thoughtful, simple, and will surely please every palette. The full bar and ever growing sake menu completes the experience. Join us when you have some time to relax and really take it all in. Reservations are not required, but will help during peak hours. We also accommodate to-go food for the large hotels in the neighborhood. Please feel free to call us with any questions or comments.

But this was obviously a ramen place so as long as the dish tastes good, there is nothing to complain about...which is exactly what I experienced. Service was very friendly, and ambiance was just what you would expect. I cannot comment on the ramen or any of the other dishes, but definitely endorse their Pork Katsu curry with rice if you are in the mood for a Japanese-style curry.

I had a few questions about the menu and drinks, but our server seemed rushed and a bit annoyed, which made the experience feel less welcoming. Ordering drinks felt a little hurried, and while my husband really enjoyed his, mine were just okay. Overall, the food was great and the atmosphere is worth checking out, but I do wish the service had been a bit more attentive and helpful, especially for someone new to the place.
