If you close the kitchen early based on how busy the night is, that's understandable--but be transparent. Don't list 9 PM as your closing time if you're shutting it down at 8:30. That's just bad service and worse communication. Also, when a customer asks for clarification and your only response is "I'm not sure what your problem is, ma'am"--you've got a problem.
