Pilsner arrived first by mistake which I didn't touch. Turned out to be for the guy coughing real bad. Soon, mine arrived. It was one of the best tasting DIPA. I had to compliment the bartender. For dinner I ordered the Roast Rabbit with bacon & gnocchi, while P ordered Risotto with mushrooms. There was also lots of cold Pilsner and Czech wine. Prague is absinthe capital of world! My alcoholic drink of choice is absinthe. While I don't drink…read moreoften, when I do, absinthe is one of my choices, so of course I was going to drink absinthe while I'm here. Not only does Absintherie serve as a beautiful absinthe bar, it's also a small absinthe museum! They have displays with fascinating information about the history of absinthe, and items related to the making of absinthe. Since it's a Prague specialty, I chose to drink macerated absinthe. It was so fun to watch the bartender expertly handle the drink and the flames. Once my drink was made, I wandered around Absintherie while enjoying my drink and enjoying the displays and learning omre about absinthe. They used to sell absinthe ice cream here, according to a blog I read back in the early 2010s. Unfortunately, due to regulations in Prague, absinthe ice cream is no longer offered. However, the bartender who served me quickly whipped up a small bowl for me. When I asked him how much I owe him, he said don't worry about it, they only give it to nice people.
