Most notably, the wood-fired Neapolitan dough is superb! Beautifully charred, with a great chew that I'd happily eat dipped in olive oil and balsamic all day. UNFORTUNATELY, the execution of the Rucola pie fell short on fundamental balance. After finishing a 7-mile hike, we were eager for a well crafted pizza. What arrived was a red sauce base overwhelmed by a mountain of raw arugula and shaved parmesan, lacking any melted cheese structure. NO CHEESE! WHY THOUGH?? A melted cheese layer provides crucial savory depth and acts as a moisture barrier. Without it, the wet sauce saturated the dough, rendering an otherwise stellar crust soggy and unseasoned (we had to request salt to bring out any flavor). It ultimately felt like a salad served over softened bread rather than a cohesive pie. When we provided feedback, the response was polite but indifferent. While the foundation is clearly there, the balance was completely off. I'd consider giving them another chance with a different pie, but Flagstaff has too many incredible pizza joints to settle for soggy bread. I'll post a follow-up review if I go back.

Despite the place getting crazy before we left, our waiter was very attentive and got us a box for our last 3 slices (all from the pep) and to-go drinks. Being hot and sunny, we placed the pizza box on our dash and had the last few slices hours later on the road. The only problem with Fat Olives is it being in Flagstaff and not in metro-Phoenix. Okay...2nd problem is I want to try every pizza they have. If the first problem gets fixed, the 2nd problem may go away! The Italian soda was definitely on the sweeter side, but interesting to drink. The vibe was also good, and the staff was friendly. Be sure to make a reservation so you don't wait too long.

At least the night was entertaining..... Our group of 5 including a 2 year old sat down ready to devour delicious pizza. The waiter came, looking like he would much rather be anywhere but there, and took our order of 2 pizzas and a salad. We were told the pizza would take 15 minutes and the salad 30 since the cheese was made fresh. How very mistaken he was. An hour later our pizza came with nothing to serve it with and absolutely no silverware or napkins. Yes, it was still very good, and I know "good food takes time", but an hour? That's ridiculous. However, the best part is yet to come. Our 2 year old was needing to get out of the chair, so 3 members left to walk outside while the remaining 2, including myself, waited for the check. We had already told the waiter that if the salad came after we were done with the pizza they should keep it. However, the waiter comes after another 20 minutes (an hour and a half total) with the salad. Again, we told him to bring it back because we had to go and it had already been long enough, but he told is it would have to go on our bill. We replied we would like to take that mater with the manager. Biggest mistake of the night. He leads us to the front counter, were we explain we had been there almost 2 hours now with half just waiting for the pizza to arrive, and now we had to go. That proceeded with the manager telling us to "pay for the fucking pizza and get out" and then screaming in our faces " I work twice as hard as you for half the pay" which resolved to "leave the fucking restaurant". How delightful. I'm not really sure what we said that led him to say so much of the word "fucking", but apparently in his mind we were very offensive. I don't believe New "Fucking" Jersey will be receiving very much business from us. *A word of advice (even though I've practically already written a novel here) - If your going to this restaurant, come with something to do, a semi full belly, and a book of praise for the manager. I've eaten here for 3 years. The first year I ordered take out every Thursday for a winter as I drove back from work. I would get a large pizza, maybe a salad. They would say, "It'll take about 15 minutes." I would show up in 15 minutes, 20 minutes later I'd have my pizza. But at least the pizza was really good! Later that winter I thought I'd try delivery, so I wouldn't have to wait for my pizza in-front of their counter. For a large three topping pizza on a Thursday they would say, "It'll be about 30 minutes." It took 55 minutes to get to my door. But at least the pizza was good! The next year I still ordered from New Jersey because I thought the pizza was good, and would just deal with the slow order. I'd get a large three topping pizza for delivery. "It'll take about 50 minutes," they'd say. At least by then they knew it took a long time. The pizza would show an hour later, but it was strangely lacking the topping quantity it used to have. I tried another place for a while. It was good, but they didn't deliver. So, back to New Jersey. In November of this year I ordered a large three topping pizza and hot wings. "It'll take about an hour." An hour went by and no pizza, but I got a phone call. "We forgot your wings, they are in the oven, it'll take about 20 minutes." Never got the wings. This last Thursday I ordered a large three topping pizza. "It'll take about 70 to 90 minutes." WOW. The pizza showed up in TWO HOURS. That's right, one pizza, TWO HOURS. What's worse? Couldn't find but traces of my toppings. My girlfriend said it tasted like a big cheesy cracker. No more New Jersey for me. It's not worth $18 + tip to wait TWO HOURS for a big cheesy cracker. Good luck with the move, if it's true. I hope the contractor tells you it'll take 3 months to finish the place but actually finishes in 6. read more

Nice folks but if you pay $28 for a pizza you expect it to look like the pictures: loaded with goodies. You could hardly tell the difference between the half with cheese and the half with (very obscure) ingredients. Lots of 'flop' to the crust, which is tasty. You've gotta work on those ingredients! I feel VERY cheated. read more
