Disclaimers: I usually don't post a review after only one visit. This is my first visit to Rolla and my first visit to NaCl + H2O, or "Saltwater". But what the heck, I get to be the first review posted for this restaurant, so here goes. Saltwater is an upscale seafood restaurant located in the quaint downtown of the college town of Rolla, MO. I love that the owners have chosen this location for a fancy restaurant, and I sincerely hope that Saltwater helps the downtown area to continue to develop and thrive. This is a nice place for a fancy date or a special occasion meal. The big-city pricing will probably prevent most students and locals from having dinner at Saltwater too frequently. I guess it isn't cheap to get fresh seafood to the middle of Missouri. First the positives. My salmon was cooked PERFECTLY--super hot and moist with a smokey (apple wood?) flavor. It came off the grill exactly at the right temperature, without one second more or less cooking than ideal. My wife enjoyed her fish and chips and my daughter liked the seafood pasta. Service was good and particularly friendly. The proprietor busily worked the dining room, assuring that all guests were satisfied, but not in an overbearing way. The decor is contemporary and pleasant with good music and lighting. As mentioned, Saltwater is not cheap. We ordered the three cheapest entrees, one dessert to share, and one drink apiece, and the check was $40+ per person with tip. I don't blame them for aiming high, but time will tell whether their pricing strategy needs adjustment. I really prefer my food to be very hot. The salmon was awesome, but the potatoes and asparagus were not as hot as I like. Maybe Saltwater could consider using heated plates? Our wine was good, but from what we could tell, wine-by-the-glass ranged from $10 - $18. For our budget, that means only one glass apiece. Why not offer a cheaper table wine priced so that guests order two or more glasses (and make more money!)? And something little, like a complimentary bread basket, would enhance the value for diners. Dessert was a bourbon bananas Foster that we split three ways. We all agreed that it needed at least one more shot of booze. Still tasty though. I hope you will try Saltwater for yourself. They have started strong, and will probably only improve with time. Hopefully it will thrive and be a staple in downtown Rolla for generations to come. We look forward to many more visits! read more

Never left a review before but felt compelled to write this one. We came in town for a softball tournament and just pulled up local restaurants on yelp and this one looked cool. A nice atmosphere for what it is. They come across as trying too hard. Their current menu is only a small soft open menu. It seems as if they took a lot of notes off of Food Network but the food is only okay. The portions are small, the price is extravagant and walked away feeling like it was very kitschy. They hit all the trends far more than they hit any amazing flavors. read more

In summary: Very limited menu. Too expensive for what you'll get. Fish or shrimps aren't fresh enough to warrant the price (I am a seafood lover, so I know what fresh fish and shrimps should taste like). In comparison, you'll get more food, pay less, and get about the same quality of dishes from Olive Garden or Colton's. The service was good, but I'd rather go somewhere else next time. read more

What a nice place to go! It is an actually nice restaurant and tries to keep it up, so don't show up in your UA camouflage hoodie and ripped jeans. I love that it is downtown. Helping to revive the place! The service is great, very polite. House salad is delicious. I had the grilled salmon and it was very good and fresh. Came with asparagus and garlic mashed potatoes. It is a bit pricy, but I have no problem paying if they will continue the level of quality. read more

Outstanding service and food on this visit! Our family has been pleased with this restaurant may times in the past, but we had a bad experience and were concerned that perhaps we needed to look for a new "Favorite. Not to worry, things were back to normal this visit. The clams special on the appetizer specials was a meal by itself! I finally tried the Ciopinno and it is now my #1 dish there. I got a dinner special and it was excellent only issue is everything took forever and it wasn't that busy.

Yesterday my GF and I took a Day Trip out of St Louis with the sole purpose of having dinner at NaCl + H2O. Our expectations were hi as we traveled I-44. After many stops along our route we arrived at 5:00. We were greeted very friendly as we entered at were seated a a table of our choice. Our Wonderful dining experience started with a basket of Fried Clams and an order of Seared Tuna. We had to stop ourselves from reordering them a second time. For our main course my GF ordered the Cioppino, I had the Alaskan Platter and we shared a bottle of wine. These main courses were excellent and both consisted of large portions. Dessert consisted of Ice Cream with Banana Bourbon Sauce. That dessert deserved a reorder also, but better judgement prevailed and we just had to end this Wonderful experience. The whole experience was elevated by our server Barb, who was friendly and very attentive from the time we walked in until we left. The trip was worth taking and we will look forward to returning. read more

Excellent seafood in the middle of Missouri! Great atmosphere, with great service. The craft beer selection was terrific, as was the wine selection. I had seafood platter (salmon, scallops, shrimp)...great. My wife had the shrimp and grits....great. And my daughter had the shrimp pasta carbonara....great. We also had the Maryland Crab Cakes, which were true Maryland-style....lots of crab meat, not lots of stuffing. Excellent! The dessert menu looked awesome, but we were too full to eat anything else. I had high hopes for this place being close to FLW and offering a wide seafood selection. The reviews seemed to indicate both good food and service. Unfortunately the food was mostly awful. Over-seasoned and over cooked for the most part. The server (Brandon) was very good, he was attentive without being too much in our face. I will not dine here again solely based on the food. Experience was decent with the exception of the altercation between an unruly customer a member of the waitstaff. They did offer us free dessert for our trouble which we politely declined but we did have coffee. Overall I really try to support small business but in this case I am unlikely to give them another opportunity. read more

Excellent food we were a group of 5 on a Monday night. Great atmosphere. Had to wait 15 minutes for a table, got seated and the staff was very attentive. Ordered 3 fish and chips, tuna, and shrimp & grits. Good beer selection on tap also. Everyone really liked their food, shrimp and grits was especially good. Thought the food took a little too long to prepare, but maybe they were backed up. Fish and chips were great, fish was good and the batter not too heavy. The tuna order was good as well. We did not have a great experience. We were one of two customers in the restaurant and we still waited over an hour to receive our food. The shrimp in the entree we ordered (shrimp 'n grits) weren't deveined. This place has 5 star prices without the 5 star extras. No salads with the meals, no bread while we waited, and the drinks were terrible. I expect to pay more for a seafood meal but charging $14 for a burger is too much. read more

What a pleasant surprise. Big city cuisine and preparation in a rather small town venue. Grilled seafood platter was excellent. New potatoes as an accompaniment were tasty and well seasoned, but slightly overdone. Wedge salad was probably the best I have ever had. Pleasant, prompt service topped off a very nice evening. If I could give 4.5 stars, I would. Not quite a "5", but close, and I expect it is the best "nice" restaurant in town. read more

We were surprised to find something this trendy in Rolla- despite the college, it seems pretty down-home country in terms of eateries. Overall it was very enjoyable with the exception of a couple of off notes. Despite the room being 70% empty, we were seated in the extreme back next to the kitchen door. Then our dinners were brought out in record time - before we had finished a drink apiece. It felt like some combination of being hidden and then rushed out of the door? Our dinners were good- very large portions with plenty of seafood in each. The drinks were creative and tasty, good wine selection. I just wish we had a better table and weren't in & out in less than 30 minutes. I think if patrons choose a place like this, they aren't looking for a speed dining experience. Absolutely atrocious service, the restaurant was highly understaffed, the kitchen/waiter managed to mix up our orders after it took over two hours to receive them. The waiter spent the majority of her time apologizing for mishap after mishap, not to mention the food was bland and basic at best. Even after the waiter noticed we did not consume hardly any of our meals she made no attempt to bring out management etc to rectify the situation. One would assume at an upper class restaurant that basic services would be performed. Such as when hot and cold desserts are taken to go they packaged in separate containers this is not the case at this restaurant. Take my advice save your money and stay and eat!! read more

Skipped it. NaCL + H20 refused my request for a reservation for a party of 6. I always wonder about "no reservation" policies for restaurants. Do they really want large parties milling around their entrance waiting for a table to open? I don't get it. read more

The food is generally overpriced, and underwhelming. $40 for a plank of salmon is a bit much, especially considering that the plank was smaller than my credit card. I also did not like the parking situation, as the restaurant is located on a one-way main street with only 3 parking spots in front of it. Very poor location for a "fancy" restaurant. read more
