While waiting for my order, I noticed the staff (who seemed pretty young, not saying that negatively, just observationally) loudly talking about not getting tips. Loud enough for the whole place to hear. That was my first sign that the atmosphere might be off. When my order was ready, they didn't call out the item or confirm anything, they just said my name, tossed the tied-up bag on the counter, and walked away. I watched them call other orders properly with names and items, so the contrast stood out. Regardless of how good food may be, customer experience matters. I didn't ask for a manager because I've worked in management before, and I know staff behavior often reflects internal leadership and environment. Still, it's something worth noting: even for quick-service or takeout spots, courtesy and professionalism go a long way. This interaction felt dismissive and honestly off-putting. I'm not writing this to be harsh,just to be honest. This is why I prefer to tip in casHopefully it's something the team can improve on, because small interactions shape the whole experience.

The room decor is nice and music track of instrumental songs was pleasant for conversations We tried Bun Bo Hue the middle region spicy beef and pork soup, tempura salt and pepper garlic squid appetizer, and stir fry chaxiu roast pork & vegetables with pan fried egg noodle dish. Surprisingly, this restaurant has served me one of the best rendition of Bun Bo Hue , it has the right level of Unami and spice for my tastebuds to make it a return item better than others in many places I have tried in CA and NVA. The thinly sliced beef brisket and pork meat dumpling and roll were tender and flavorful to add interest to an amazingly complex broth cooked with probably toasted ginger, onion, bones, lemon grass, fish sauce, rock sugar and fermented shrimp paste. The only thing missing was the tender skin on pork feet and correct side herbs and vegetables for this type of soup. If they have these, I'll be there every week and gain weight fast. We liked the other dishes also for their great sense of seasoning and variety of fresh ingredients. Their dipping sauce for the squid is delicious. The stir fry noodles and pork tasted great to get a thumbs up from my son. The kitchen seems to know its business when it comes to taste. We will make it a point to return for other dishes as well to explore the range of their kitchen. I could see that they were a little understaffed so folks were a little impatient when the kitchen gets a little back up with orders. Service over all is good because the one waiter had to cover the dine in, carry out , and bussing the tables as well and has a chilled sense of humor to handle minor fussiness from hungry customers. People often don't tip folks in this type of ethnic restaurants even the normal 15 percent even on holidays. It is probably very hard to find dependable hard working service folks for small business these days.

This is the only pho in Calvert County, and while it's priced slightly higher than pho in Northern Virginia, it's solid, and a dependable option here in this county. That said, the restaurant was so messy on Saturday, it was likely to drive potential customers away. Clean the tables, please! The area in the back on the way to the bathroom is a disaster too, but the front tables were covered with dirty dishes, and the debris from previous patrons. Good luck finding one clean/empty table at 6 on a Saturday. The food is good but if the interior stays like this, I'm very unlikely to to return much, unless I get take-out.

The Castellano had a crisped pile of gorgeous beef, with crispy fries, and super fresh veggies (basically a cheeseburger on a sub). My husband ordered this one, so I didn't taste it personally but he absolutely LOVED it. The Thommy, The Three Fingers is a chopped cheese. It's, by god, the best I've ever had in my life. I add peppers, provolone and mayo and an extra side of tzatziki (labeled garlic cucumber on the menu), and oil and vinegar (which tastes like Italian dressing, but who's counting?). The bread is phenomenal. I may literally just order a sub roll with no ingredients one day, just so I can eat it toasted with butter, with every meal I have. It's soft and fluffy, crispy and chewy all at the same time. (It almost gives bagel, but not tough). I also got the y cheesecake. Not as special, perhaps from the Cysco truck (iykyk), but I still bought it and scarfed it down. Strawberry topping was def the average canned-strawberry topping (but I personally love that). I cannot stress, the food is OUT OF THIS WORLD! As for service, the entire team is so friendly and helpful. They kid around, make silly jokes and make sure your order is prepared fresh and fast. It isn't "fast food fast", but also doesn't taste like shit either, so the wait is worth it. At most 10-15 min if you don't call ahead. As for seating, in winter there are only two two-tops so seating is extremely limited. It is mostly a deli-and-get-outta-here kind of place, but nonetheless welcoming and charming. They have tons of Italian memorabilia all over the walls including giant GodFather posters, taxi plates and more. Today was my first time inside, but I've had my husband go pick up food several times on the way home. I cannot live without one of these subs AT MINIMUM once a month.
