The equipment and preparation area also need to be handled appropriately to minimize cross-contact. I understand that a restaurant cannot guarantee a completely gluten-free environment, but using a visibly dirty slicer and counter for a gluten-free order is an avoidable sanitation and cross-contact issue. Jersey Mike's has a reputation for taking gluten-free orders seriously, which is one of the reasons customers with dietary restrictions choose to eat there. Why ask if it's an allergy or preference if you aren't going to even change your gloves????
