They weigh your bowl of stuff (veggies, meat, seafood, noodles, etc) and it's $15.99 per pound. If you don't pace yourself, it's very easy to end up with an expensive bowl of hot pot. Mines ended up weighting a little over 1.5 lbs, so my hot pot was over $25 before taxes. Some broths also have an additional charge (like the tonkotsu is $4.95 extra), so keep that in mind. I picked the organic miso broth, which had no extra charge. My hot pot was pretty yummy since I got to choose exactly what I wanted in it and even though I ordered a little too much, I enjoyed it the next day for lunch. The sauce bar is included and they offer iced green tea with refills for $1.99 more. If you need a refill of the iced tea, you can let them know and they'll refill your cup. Very refreshing! Even though we paid separately, they do charge 18% big party service charge for groups of 5 or more. Parking was plentiful and easy in the plaza.

And after a quick search on Yelp we came across Solo Hot Pot! We're all vegetarian AND we can't have onion or garlic. So that means our choices are limited.. BUT! After a quick call here we found out that they have 11 vegetarian broths AND neither of them contain onion or garlic! SCORE! I also have been wanting hot pot for the longest and my fiancé doesn't normally care for it but with my FFIL in my corner (he loves it too!) We decided to come here because it closes late as well! We came here around 8ish and it's in this dark parking lot that seemed so out of place.. But as we parked you see Solo Hot Pot just glowing.. Because all the other shops are closed LOL but we make our way in and it was much smaller than I thought! When you come in, to your left side you see a bowl as well as tongs to start grabbing what you want in your hot pot. It's just one long section (veggies in towards the entrance and meats towards the end) and after a close look I see that the veggies are frozen.. hm hm hm, I see you Solo Hot Pot, freezing them makes them a bit heavier when you go weigh it! (Cost is $15.99/lb) So I had to be strategic because 1. I don't want to build an expensive pot and 2. I couldn't eat as much as I have before so I need to get just enough to fill me without over doing it. You also have a variety of other stuff like udon noodles, ramens, ramen egg (UGH SO GOOD!) and other things too! We all chose our ingredients and made our way to the front and choose our soups: DISCLOSURE: If you CANNOT DO SPICY make sure you let them know in ADVANCE as you choose your broth! A lot of these soups are SPICY and my fiancé and FFIL learned the hard way because they can't eat spicy (unlike me LOL) but the nice thing is you do get unlimited soup refills (Not broths, just soup base) and tea refills if you buy their iced tea! Super nice! there's even a sauce station and you can add on rice for 1.99/bowl. I had to convince my fiancé to get some so he wasn't dying from the spice. Very interesting but you pay at the end of the meal even though you weigh everything beforehand. My fiancé doesn't normally care or like hot pot but he actually liked this place! So yay! We enjoyed this more so than the two big ones from South Coast Plaza and were stunned by the quality of their food here. We enjoyed every bite. We couldn't find a flaw in any of their dishes. Each dish was flavorful and you just couldn't get enough. The serving size is generous too. You really get your moneys worth here. The service here is excellent too. They only had one server here when we visited but she gave great service to everyone in the restaurant. She was attentive and very hospitable which made our experience even more pleasant. The place is fairly small and the overall aesthetics of the restaurant is fine. You're here for the food, not the ambiance. Skip those long lines and go here instead. Trust me, it's worth the visit.

A few of the XLB also stuck to the steam tray, so when lifting it, they tore from the bottom. Besides that, taste was spot on. The spicy wontons were also very good and a good portion size. Parking is very easy with plenty of spots in a large parking lot. Service was great as well. The restaurant is pretty small, but when we went, around 8:30pm on a Friday night, it wasn't very busy. They also have a lot of new items on the menu. I first ordered the seared salmon Yubu and also ordered their Gunkan sushi. I picked a potato & corn salad and a crab & avocado sushi. The service was a little bit slow, because there were only 2 tables had customers. I've waited for my to-go order for about 20 minutes. However, the food was fresh and delicious, though. The server was friendly. I will go back there again to try other stuff on their new menu.
