    It's a little tucked away, on a side street near a recycling center.

    I never would have expected to find some of the freshest and tastiest seafood around from a food truck tucked away on a side street in Florence-Graham. To be completely honest, I had some misconceptions about seafood and food trucks, and in the past it was something I probably would have avoided. Fortunately, I got a strong recommendation for this place from someone I trust, and once I visited I realized it was time to let go of my unfounded bias. On my first visit to Mariscos Coliman, I tried the ceviche. It was the BOMB. It was so, so, good! It was actually way more food than I could eat, because the portion was really generous. Luckily, I was able to share my leftovers with some of my husband's students, all of whom agreed it was some of the best ceviche they had ever had. The menu itself it pretty extensive. There are a few different kinds of ceviche (oyster, shrimp, fish), they have tacos dorados, hot and cold seafood cocktails, tostadas, botanas. There is a nice menu with photos that gives you a good idea of what you are ordering. They also recently added some new meals to the menu, "nutri-combo" type plates that include a fruit/yogurt parfait. I tried one of these last time and I really liked that the portion was just right for what I would want for one meal. Ceviche is one of those things that doesn't make for the best leftovers, and I hate wasting food. The fruit and yogurt at first seemed like kind of a weird pairing, but it actually made for a nice healthy dessert (I love dessert). Lastly, the prices--very reasonable! I'm guessing that the low overhead is what allows them to charge so little for seafood. If you want to spend $28 for a dozen oysters, you can go to that oyster bar in Silver Lake. But if you want something just as fresh, you can get your oysters here for a mere $11/dozen. There are items on the menu under $5, specials start at $6.

Meat, cheese, whatever....no, this pambazo is something special. Each one is handcrafted to order and you can tell that each of the ingredients is super fresh. And, since this is LA, there are plenty of tasty vegetarian options....bonus, they're delicious and very Insta-worthy. I started off with their roasted Japanese sweet potato fries with the subtle curry flavor, aioli and yogurt-mint dipping sauces, and those nice crispy edges. I split Silvertongue's Chicken and the Doofwarrior with my fiancee. The fact that they had the tender, flavorful chicken and rich, complex tikka masala flavor downnnn (Silvertongue) and that dreamy roasted pork belly (Doofwarrior) has me convinced that these guys can do no wrong. The pambazos are HUGE and filled with layer after layer of tender meat and veggies. Each bite is a perfect mix of texture (crisp, chewy bun and shredded cabbage crunch), herbs, spices, and acidity. The Scrooloose taco was awesome too....tortillas made in-house from a food truck?! You can tell that these guys put care and effort into preparing the meats because it doesn't taste or look like it's made in a food truck. So good! And if the flavor-forward food isn't enough for you, they have about a dozen hot sauces that they make themselves! Since I am a bit of wimp, I did not try all of them but the blueberry habanero was my fave out of the ones I had. They don't post up at a permanent location so do yourself a favor and check out their location on IG or Twitter....it's totally worth it.

A big bonus was that they hand make every single corn tortilla. The Ton Ton Tattoo Taco comes with sliced brisket, kimchi diakon, scallions, and a korean chili vinaigrette. It was pretty good, the brisket was pretty tender and had a great marinated flavor to it. It might be a little bit spicy though, so fair warning. They have a great selection of sauces which complimented the tacos as well. Our favorite was the mango habanero but its got some real heat to it so watch out!

Two very talented and humble chefs run the truck and they are not afraid of suggestions or recommendations! I'll point out my favorites from their menu and some from their catering menu (yes, I ordered catering from them for Christmas) Ceviche- Seriously so good!! When I first tried it at their soft opening it was very spicy, I love spicy but I pointed it out through their DM and they kindly took my suggestion of maybe making less spicy for others that can't really handle the heat Smash Burger - SOLID comes with fries or tots depending. Eggplant Rollantini- OMG! I'm so glad I decided to try this because this is my favorite!!! It comes with spaghetti on the bottom and just all the flavors in this dish is just so satisfying! Borracha tacos - VALUE! 3 tacos smothered in meat and sauce... CCC Churo Chapsal YUM! There's always room for dessert! I had their Lomos but it seems like every review talks about their lomo so I'll skip and move on to some of the catering dishes I had. For Christmas catering we had the Lomo, Mediterranean Chicken, Spaghetti Meatballs and chocolate bread pudding The Mediterranean Chicken is absolutely delicious! The chicken breasts were so soft and tender, I had to read the menu again to make sure it was chicken breasts! I would totally order a whole catering portion for myself next time. Their guava lemonade makes me very happy haha Oh! They have something called the FUEGO SAUCE -- It is not for the weak.. it will set your mouth on fire but it is SSOOO good. I honestly eat from here at least 3 times a week and I seriously still crave it! I've tried a lot of their menu but my two FAVORITE items are the 'Smash Burger' and 'Borracha tacos'. -smash burger : 5/5 so freaking good! Also comes with fries which are perfectly cooked. The burger is a great portion as well and pro tip- add avocado and bacon. SO GOOD!! -borracha tacos: 5/5!!!! This dish I LITERALLY crave every week!!! Its a shredded beef taco but the way that they add the flavoring, juices, and sauces has me coming back!! P.s. ask for the el fuego sauce which is SOO spicy but I LOVE!!! I slather my tacos in it and cannot get enough! - also they offer special catering menus. I was able to try it couple times and I highly recommend for your next event!

This review is for the Paramount location. I got a few items: Dino rib, pork ribs, brisket, sausage, mac and cheese and corn bread. I'll start with the positives. The mac and cheese and corn bread were decent. Also they took 15 minutes to give me all the varied food I ordered which should have been my red flag to run, but I decided to live dangerously and was punished severely for it. Now on to the travesty, the meat. The theme for today was dry, old and shameless. The pork was somehow undercooked and dry. Which if you can endure the cruelty, is actually kind of impressive. The brisket resembled beef jerky. I'm including pictures of the brisket since those speak much more eloquently than I can. I love to cook and I infamously over season my dishes. But all these meats were at a whole another level. Not salty but aggressively peppery and just ham handed. The rub was flavorful but it blew out my palette instantly. Please take this to heart: less is more. In terms of meat quality? Cheap. My Dad is a butcher, I can tell. Everything being reheated did the meat quality no favors either. The seasoning was further exacerbated because the ribs, both dino and pork, were almost entirely bone. So you have a ton of seasoning on a lick of meat. It was a recipe for disaster. And price? Expensive, especially for what I received. Insulting for what I received. I'll end it here. I don't want to waste your time like this place wasted mine.
