This is what food trucks are all about! The menu offers a fusion of American and Korean bbq goods. My co-workers and I walked over for lunch on Miracle Mile and this truck immediately caught our attention. I ordered a mini Fat Queso (6 inches vs 12), which was very fulfilling! Slightly on the greasier side but the braised bulgogi is so darn good. The ideal quesadilla food truck - don't skip it! The avocado fries are definitely on my radar for next time. This food truck has exciting ingredients and the right attitude, but the Fat Queso falls short with the execution. The 8-hr braised Fat Queso caught my attention (after all, it is also the name of the truck) and it looked and smelled great! A couple of bites in however, I found it difficult to find my reaction. There is a lot activity going on with the flavor which was more distracting than pleasing. The Fat Queso wasn't bad but it was disappointing because I couldn't find the appreciation for the brisket, which was what I was looking for. The Fat Shrimp, however, is a different story. The insides are filled with large shrimps and has a much more balanced overall flavor, making it a very delicious quesadilla! The Fat Queso deserve a better rating and I want to rave about them, but I can't. They have potential and I hope their business continues on a successful path but I'll be holding my recommendations for now. read more

Pretty good although not as cheesy or gooey as I was expecting it to be. I couldn't decide what I wanted so my coworker friend offered to split multiple dishes with me so that I could try a couple different items! We got the 6" Big Southern, 6" Big Shrimp, and The Dirty Fries with miso marinated chicken. My favorite of the day was definitely The Big Southern. It stars mac and cheese, bbq pulled pork, crispy fried onion straws, and bbq sauce. One piece of these bad boys is enough to make you feel satisfied because they're pretty hefty and artery-clogging. I really liked it though because it doesn't taste as oily or heavy as I'm sure it is. The Big Shrimp was good too--I liked the slaw in it, but the shrimp pieces just weren't as big or juicy as I was anticipating. The fries were also just okay... Maybe it was just the chicken that didn't go well with the fries, but I don't know if I would order that again. Maybe I would but I would definitely recommend it with either pork or beef instead. And actually, all the dishes just need a lot more cheese!! Yummm.. Service was friendly. I'm looking forward to trying The Big Queso and The Southern Vegan the next time around! read more

Vegan Mac and cheese was surprisingly very good. I had the opportunity to try their food when enjoying a brew at Timeless Pints in Long Beach. Food came out in a timely manner and was fair priced. I also got to try the fried avocado and it was REALLY tasty . The portions were also a little more than I expected which made me and my buddies pretty happy. This food truck comes at you with not one, but several vegan options. Considering its specialty is utterly oozing cheesiness, I was impressed! It gets real old real fast checking out a menu and seeing one salad as your sole option. The Fat Queso really brings it! I had the Fat Vegan, a huge 12" quesadilla cooked to the perfect texture combo of soft and satisfyingly crisp, stuffed with beer-battered avocado fries, black bean-mango salsa, chipotle aioli, and absolutely dripping with cheese. As someone who mostly eats whole foods and avoids the "Junk Food Vegan" trap of a processed food lifestyle, I was all about this meal's ingredients, yet also super satisfied that it checked off the pure comfort food box. If you're debating, it's worth the price tag simply due to how delicious it is, but also because it's massive enough to keep you full for hours. I'm still drooling thinking about it. The big southern quesadilla is just what the doctor ordered in terms of cheat meals. Whoever came up with this spectacular combo of pulled pork and Mac n cheese- I could really just kiss you. The portions make the $14 price worth it. It's so filling; it took me 3 different meals over two whole days to finish. The only thing keeping me from leaving 5stars is the expectation I had of it being extremely cheesey since it's, well, a QUESAdilla, and queso is in the very trucks name, but the cheese in my dish was a bit underwhelming. I was, however, in the middle of an extremely long line of hungry cheese-lovers though, so perhaps they just ran out? What a QUESADILLA! To call The Big Southern just a quesadilla would be an understatement. Stuffed with homemade Mac and cheese and slow cooked BBQ pulled pork, this was probably the single greatest quesadilla I have ever eaten! Oh and don't even get me started with their sides. We ordered some of the avocado fries, Dirty Cup of corn and crispy taro lime chips. All of them exceeded expectations. The wifey was not too sure about the avocado fries but quickly became a fan. Top the whole experience off with the co-owner that works out front and takes everyone order from a handheld device, actually giving a damn about service. I'm super digging The Fat Queso! My hubs and I keep running into them for all the right reasons. We've tried each of the quesadillas at this point and like that there's the 6" option so we can get a few to share. My favorite hands down is the Miso Cheesy, the marinade on the chicken combined with the cheeses was so good!! Had these guys at my bar in Long Beach, Muldoons Saloon. They came correct with their avocado fries. I ate one of their vegan options and it definitely impressed me because people take me to vegan restaurants and you have to pretend it was delicious so they will still be your friends... this wasn't that place... I could destroy their vegan quesadillas over and over again... with no evidence because it actually tastes good. I ordered the namesake, The Fat Queso, with light cheese, and every bite was so flavorful. The brisket was tender and juicy, the radish and carrots paired really well with the meat, and the garlic aoili sauce was ah-mazing. The portion size was good for the price, but still on the higher end ($15). But that is typical food truck pricing. Because of the brisket sauce, you definitely cannot eat it like a quesadilla, with your hands. Be prepared to use a knife and fork...otherwise, come prepared with plenty of hand-wipes. Or just lick the sauce off your fingers to not waste a drop of it. read more

Went here on a whim because it was our first time at First Fridays on Abbott Kinney and the pictures from their insta looked good. And boy were we happy with our decision. There wasn't a line to order at the time, which was around 8:30pm. We ordered and it took about 20 minutes to get our one quesadilla. Which is a bit long, but the guy outside was keeping the kitchen accountable and telling them how long we've been waiting for. Once we got our food, we were so excited to eat because it was beautifully displayed and looked so yummy! And indeed it was! The Mac n cheese was perfectly cheesy, the meat was tender and plenty, and the tortilla was extra crispy. I was surprised that the tortilla wasn't actually that greasy! I was afraid the inside was gonna soak through and make everything gross, but it didn't! Might be because we ate it super quick but the tortilla had some sort of super power and stayed crispy. It was a bit on the pricier side, but worth! You'll definitely want a full sized quesadilla if you're eating by yourself, but I suggest to share so you can taste what the other trucks have to offer! read more

The only thing I'm pissed about is this truck is parked next to my apartment every Thursday. Helllooooo winter weight! Im not normally a food truck kind of girl but ever since I tried this truck 4 weeks ago I make it a point to see Romel every week! The avocado fries are amazing and his vegan Mac and cheese quesadilla is incredible! I'm not vegan but my friend is so I tried hers and it's probably one of the top Mac in cheeses I've ever had (I'd never be able to tell it's vegan). I love Fat Queso! This week, the Fat Queso truck came to the Burbank street fair, where I ordered the amazing Fat Shrimp quesadilla. That's garlic-pepper marinated shrimp, red cabbage, cilantro, lime slaw, and Monterey Jack & sharp cheddar with avocado aioli. And yes, those are cranberries giving it a hint of tartness. So tasty--and reasonably priced! The Southern Vegan quesadilla was also a wonderful surprise: macaroni and three cheeses, BBQ oyster mushrooms (there's also a meat-eater's version) and a tangy, home-made BBQ sauce. The Fat Queso is far from what it used to last time I showed up I expected to see mike co-owner/ chef was told he took the day off which I found surprising, but oh well came to get some food none the less spent over 80 bucks in food for my buddy's shook the fact I spent that much cause I knew quality was being served but that wasn't the case nothing tasted like what I knew it to be... It was refreshing and i'd eat it again. The dirty cup. I really really wanted to like this! I think it would have been better with more corn and less soup. This is a quesadilla on STEROIDS. I loved it!!. There are 2 sizes and the large is pricey but enough for 2 people. I had the shrimp quesadilla and it was like an explosion of flavors in my mouth. The truck sits outside a brewery in Frogtown and i am just sorry that it took me so long to try it. It is the food that you didn't know you wanted while you are happily drinking great beer. Look...if you are in doubt drive over and try this food truck yourself. I was already picturing my next order. I want to try everything else on the menu. After reading all of these reviews, I'm extra disappointed! This looks like a great place. I was at Ten Mile Brewing testing out some beers and was thinking about what I'd have for dinner, checking out the food truck there tonight, The Fat Queso. As I finished up my beer, the food truck drove away! It was only 5:30! It seems like a bad business practice to drive away from a place that advertised this truck being there. Unprofessionalism trickles into other areas of business, so I'm not sure I'd try this food truck if I came across it in another venue. read more
