The large shrimps inside the Fat Shrimp steals the spotlight from the Fat Queso!
Michael T.

This food truck has exciting ingredients and the right attitude, but the Fat Queso falls short with the execution. The 8-hr braised Fat Queso caught my attention (after all, it is also the name of the truck) and it looked and smelled great! A couple of bites in however, I found it difficult to find my reaction. There is a lot activity going on with the flavor which was more distracting than pleasing. The Fat Queso wasn't bad but it was disappointing because I couldn't find the appreciation for the brisket, which was what I was looking for. The Fat Shrimp, however, is a different story. The insides are filled with large shrimps and has a much more balanced overall flavor, making it a very delicious quesadilla! The Fat Queso deserve a better rating and I want to rave about them, but I can't. They have potential and I hope their business continues on a successful path but I'll be holding my recommendations for now.

Pretty good although not as cheesy or gooey as I was expecting it to be. I couldn't decide what I wanted so my coworker friend offered to split multiple dishes with me so that I could try a couple different items! We got the 6" Big Southern, 6" Big Shrimp, and The Dirty Fries with miso marinated chicken. My favorite of the day was definitely The Big Southern. It stars mac and cheese, bbq pulled pork, crispy fried onion straws, and bbq sauce. One piece of these bad boys is enough to make you feel satisfied because they're pretty hefty and artery-clogging. I really liked it though because it doesn't taste as oily or heavy as I'm sure it is. The Big Shrimp was good too--I liked the slaw in it, but the shrimp pieces just weren't as big or juicy as I was anticipating. The fries were also just okay... Maybe it was just the chicken that didn't go well with the fries, but I don't know if I would order that again. Maybe I would but I would definitely recommend it with either pork or beef instead. And actually, all the dishes just need a lot more cheese!! Yummm.. Service was friendly. I'm looking forward to trying The Big Queso and The Southern Vegan the next time around!

Dropped by this food truck last week (and have had them previously) and was super happy with their signature "Fat Queso" as well as their dirty corn (elote). Service is great! Food comes out quickly! I'll definitely eat here again (when I find them)

I have no words! Omg! DELICIOUS! I had the Southwrn Vegan and it was so incredibly cheesy and flavorful! Way too much food for one person and that's okay! Super nice people and wonderful food! Highly recommend! The bbq sauce is on point!

Vegan Mac and cheese was surprisingly very good. I had the opportunity to try their food when enjoying a brew at Timeless Pints in Long Beach. Food came out in a timely manner and was fair priced. I also got to try the fried avocado and it was REALLY tasty . The portions were also a little more than I expected which made me and my buddies pretty happy. If I see this food truck again I'll definitely go out of my way to order the fried avocado again.

Avocado fries!

A very efficient food truck with a lot of interesting food choices. My friend got the avocado fries and loved it. I got some dirty fries as well, and the portion was huge, definitely a meal in itself and probably will have leftovers as well.

The big southern quesadilla is just what the doctor ordered in terms of cheat meals. Whoever came up with this spectacular combo of pulled pork and Mac n cheese- I could really just kiss you. The portions make the $14 price worth it. It's so filling; it took me 3 different meals over two whole days to finish. The only thing keeping me from leaving 5stars is the expectation I had of it being extremely cheesey since it's, well, a QUESAdilla, and queso is in the very trucks name, but the cheese in my dish was a bit underwhelming. I was, however, in the middle of an extremely long line of hungry cheese-lovers though, so perhaps they just ran out? Regardless, the rest of the jam-packed flavor was enough to have me returning veryyyy soon!

Pretty decent. I had the Fat Queso quesadilla. I'd be happy to try another option next time they roll around.

Today, food trucks serve gourmet, unique and awesome food. Thank you Get Toasted for making us believe in the power of food trucks!

Today I had some time to kill, and decided to try to catch the Glowfish food truck (which rarely…read moreseems to come downtown) at CNN (Sunset & Cole in Hollywood.) I didn't get there until 1:50, and just as I park and start walking toward the truck, it pulls out and I watch my planned pancake disappear. But hey, when life hands me lemons, most of the time I can make lemonade. Instead of heading back to the car, I decide to see what other food trucks are there (there's still a half dozen left.) I've had too many mediocre food truck meals, so now I usually only hit those that score a 4-5 on the Yelp-o-meter. So nothing catches my eye until I see "Get Toasted." It's got a line bigger than the others, but I'm not pure sheep, so I Yelp it and it scores solidly. I get in line, study the menu, and am pleasantly surprised by the prices. I decide to go for the three salbutes (mini tostada-like things) and drink special, and get the day's special salbute on the side. The staff on the truck were super-friendly and polite. They earned one star for great service before I even got the food. WHAT I HAD: Trio of salbutes (I chose carnitas, short rib and pork belly) Small peach vanilla iced tea Extra salbute (spicy crab, their daily special) MOST FAVORITE TO LEAST FAVORITE: (but to be honest, I'd eat all of them again except maybe the short rib) Carnitas - DE-FREAKIN-LICIOUS. Moist and juicy and lots of flavor. Pickled onions and cilantro were perfect complement. Pork Belly - Crispy and fatty and lots of flavor. Spicy Crab - yummy -- and loads of crab -- but not really spicy. Would have been a clear fav for me if the flavor was punched up just a little more. Either more spice or a citrus kick would've made this my #1 instead of my #3. Short Rib - a tiny bit dry and not quite enough flavor. The only other two notes I'd give: 1) Take some of the stems off the cilantro before chopping it. I love cilantro, but the stems can get bitter when there's a lot of them. I ended up fishing some of them out and enjoyed it a lot more. 2) The peach vanilla iced tea (which was a sweetened black tea, I believe) was really good, but too sweet for my taste. It was in the ballpark of most bottled commercial iced teas (Snapple, Nestea) which is a little sweeter than I like. But that's me. Others no doubt will love it as it is. FINAL VERDICT: I thought it was an excellent (and a very good value) meal for $10 flat. I would definitely go again. A few tweaks and I'd give it 5 stars.

Two very talented and humble chefs run the truck and they are not afraid of suggestions or recommendations! I'll point out my favorites from their menu and some from their catering menu (yes, I ordered catering from them for Christmas) Ceviche- Seriously so good!! When I first tried it at their soft opening it was very spicy, I love spicy but I pointed it out through their DM and they kindly took my suggestion of maybe making less spicy for others that can't really handle the heat Smash Burger - SOLID comes with fries or tots depending. Eggplant Rollantini- OMG! I'm so glad I decided to try this because this is my favorite!!! It comes with spaghetti on the bottom and just all the flavors in this dish is just so satisfying! Borracha tacos - VALUE! 3 tacos smothered in meat and sauce... CCC Churo Chapsal YUM! There's always room for dessert! I had their Lomos but it seems like every review talks about their lomo so I'll skip and move on to some of the catering dishes I had. For Christmas catering we had the Lomo, Mediterranean Chicken, Spaghetti Meatballs and chocolate bread pudding The Mediterranean Chicken is absolutely delicious! The chicken breasts were so soft and tender, I had to read the menu again to make sure it was chicken breasts! I would totally order a whole catering portion for myself next time. Their guava lemonade makes me very happy haha Oh! They have something called the FUEGO SAUCE -- It is not for the weak.. it will set your mouth on fire but it is SSOOO good. The line was long but the prospect of gooey goodness was worth it. After placing my $29 order for a bottle of water and the beef brisket poutine, it didn't look amazing but looks can be deceiving. Sadly, the looks represented properly the dish. I don't know what was going on, but every element was terrible. The beef brisket was dry, the gravy didn't have flavor and was so thin that the minimal portion all seeped to the bottom of the dish. Literally 5 cheese curds in the poutine and they were not gooey.
