Springfield, VT is halfway between my place in north central Connecticut and my pal's place in the White Mountains. How delightful for us that we can meet at Maebelline's for lunch like we did today. Food first: my choice was the pulled pork sandwich and my friend chose eggs Benedict with corned beef hash. The pork was seasoned and cooked perfectly. I didn't use much of the side of bbq sauce (ray's) because the coleslaw, grilled roll, and chips (yes I did put some of the home made WARM potato chips on that sammy) were so flavorful. The eggs Benedict received high marks and I tasted both the corned beef hash and the crispy breakfast potatoes which accompanied. Both were excellent. Btw, the folks who recommended Maebelline's raved about the donut French toast, but I'm not a big fan of Nutella so I passed. Breakfast seems to be available all hours which is a big plus in my world. Service: top notch. We were greeted, seated and beveraged in minutes by friendly staff. Our server gave us time to peruse the menu, but assured us everything is good. I believe her. Atmosphere: very pleasant with multiple skylights and a view of the river. My only question is why are the high tops next to the window (in the bigger dining room) where they block the view for the parties at the low tables near the wall? We took a high top because of the view as did most people. Clearly a minor issue but I'm the curious type who always wants to know WHY. P.S. my friend figured out that the chef included cloves in the brining of the corned beef and vows to incorporate it into her own cooking. read more

Very good! Happy accident pit stop when heading back to NYC from our Anniversary celebration weekend. Everything was delicious and our server Amelia T. was extremely polite, attentive and friendly. Only thing that was a little off - the women that sat us down wasn't as friendly or attentive. As everyone walked out of the establishment they received a Happy Holidays but when we left she didn't give us the same warm greeting. Which I had already told my Hubby we wouldn't get. She made it a little obvious our skin color didn't match hers. read more

We could not have had a better experience than our meal at Maebelline's. I had a short list of places from which to choose for our day trip, but this was our first choice. We arrived at about 1:00 on a Friday after our big errand, and they were winding down. Because we have to mask for health reasons, the server (whose name we never even asked, unfortunately) was a darling and let us sit in the section she'd just closed. "Lights are off, is that okay?" It was a beautifully sunny day, and the skylights let in plenty of light, so we liked it even more with the lights off! We chose a table by the windows, so our view of the spring melt on the river was perfect. We'd come to Maebelline's in quest of pancakes, but the menus scuttled that plan pretty quickly. There were several breakfast options that looked so good, I didn't even look at the lunch menu, I'd have never been able to decide. Spouse got eggs Benedict Maebelline-style, which isn't meat, but tomatoes, avocado, and spinach. The hollandaise sauce was light and tangy, avocado was mashed not sliced (they made the right choice), and the entire thing was delicious. He said it's a rare meal where the last bite is as good as the first, but this was one. I had biscuits and gravy with eggs (scrambled soft, just as I requested) because, like pie, it's what I almost always order if I see it. Idon't eat much meat any more, but my family was a biscuits-and-gravy-on-the-weekend family. My dad'sausage gravy and mom's biscuits make tough competition, and I've been known to make a mean plate myself, so, unfair though it may be, if a place looks like it's any good, I test it. Wow, did Maebelline's pass. Biscuits were light and paired perfectly with well-seasoned gravy. The whole dish was light, flavorful, and creamy. Despite being near the end of their day, the gravy was perfect: thick without being, well, globby, which is always a danger with milk gravy, like the most perfect first batch of the morning. Our server brewed a pot of decaf for us, and we did our best to honor that pot and the rest of our feast by enjoying literally every crumb. The only, only thing that is irritating and not perfect about Maebelline's is that we have to drive so far to get there, but if I could, I'd make the drive again today. We happened to stop at this diner enroute east. So glad we did! Very bright cheery homey place! Great view of the little brook or river that flows through town. Had breakfast and it was excellent! I wish I lived closer. It's almost an hour drive to this place for me and it IS so worth it. The decor is not going to impress anybody but the Sketchy-Noir interior is a sign of the times and place.
