Earthy and rich, layered with a compilation of flavours. The bread was brioche and fluffy. Really great butter. For the main meal we had Alberta Lake Trout with an Atlantic Lobster Risotto Cake, Wilted Greens, Beetroot Gel, Sea Truffle Butter Foam. This was rich and very satisfying. I really loved how the risoto cake added to the meal. It brought a richness to the dish.
