I am a diabetic and sometimes finding something that fits into my diet can be a challenge when I am out at festivals. Most of the items on this trucks menu were options I can truly work with. My husband had the Salmon Burger and he actually let me have a bite. After that one bite I knew why he was hesitant to share with me. Both of us agreed that was one of the best salmon burgers we have ever had. I got the Fish Tacos for myself and I was blown away. Those are definately the best fish tacos in the area! If you are near this truck and you want something healthy AND very tasty- do yourself the favor by stopping and trying something off the menu.
