The amount of copium this dude exhibits in each of his replies to negative reviews is palpable. He called me a bunch of times on instagram to 'hear me out' but instead cut me off to yell at me 'his understanding' of the situation. I hung up. I later scheduled a call back with him, he missed my call and now he attempts to control the narrative to protect his fragile ego. He fucked up my chef's deba and I made it right by replacing it, something Steven here should've known to do himself. He's a poor sharpener, based on his lack of progress in the craft since I first used him years ago to grind down some bolsters. He sharpened a single beveled knife at 90 degrees and left a plateau where an edge should be. The fact that a professional sharpener would hand that back as being 'complete' and taking money for the work is.... Embarrassing. I left all the editorials out until I read his response. The facts are this: he destroyed a deba that belonged to a chef client of mine. When I asked him to correct the work, he refused. I ended up covering the cost of replacing the knife. $250. My grinder is in storage so I had Steven do grind work that I would then finish and polish by hand. He gave me... not what you'd call a working knife back and charged me for the pleasure. Steven did a great job with my knives! I'm comfortable maintaining mine, but still like to defer to a pro once a year. I also find my local pop-up site to be very convenient/accessible (that is, parking at a grocery store is a lot easier than a farmers market, in my view). I agree with one of Steven's social posts: The paper cutting test is fun but has limitations (thin tomato slices are a great measure); I'm glad to see on his other posts that he has a tool to objectively measure sharpness. As a chef who has worked private events to commercial kitchens, my knives are used to their full extent. I've had chips and dents from who knows what. I have gotten my knives sharpened at countless places from DTLA to specialty shops but, this place takes the cake. Many places have turned down kitchen scissors, meat cleavers and serrated knives but Steven did it all. He even helped me fix some chips and dents on a knife I was contemplating on letting go! The price was reasonable and he was quick with sharpening my 8 knives within less than an hour ( looked like he had quite a lot of knives to sharpen after I dropped mine off so time varies). Immediately within 5 minutes I got a response saying it was no problem at all. Fast forward to the drop off - I was pleasantly surprised when Steven said he'd be able to get it done in 5-10 minutes if I could stick around. Normally a lot of places require several days lead time, so I was definitely taken aback by this (his website says typical times are 1-2 hours).
