I would sharpen my Santoku using a pull through sharpener but after having SGV Best Cutlery do it, there is no comparison. The blade slices through meat and vegetables this minimal effort. I could probably split a hair on the knife edge. Anyway, SGV's Best Cutlery hit's up a lot of Farmer's Markets plus he'll come out to you if necessary. It doesn't break the bank to sharpen a knife and make them feel brand new again.
