Dinner at l'eau de vie is truly the water of life! This is a must-visit restaurant if you are in Nice. The menu is French with a clever fusion of Japanese, using ingredients like wasabi and yuzu or special cooking techniques to achieve beautifully balanced and subtle flavours. Everything right down to the garnishes, croutons, and ice cream is hand made in the restaurant.
The service was beyond excellent - very attentive and articulate, helping us understand the dishes. We had the prix fixe menu which was a fantastic value for the quality of food we received.
I highly recommend the gazpacho - it was so incredibly fresh and delicious, I had an honest-to-goodness Ratatouille moment, reliving a time from my childhood eating a similar soup with my Italian grandfather!
