Don't let this new establishment concern you because these folks have been at it for years. Their previous place was in Rosenberg and it opened back in 1990. Prior to that , the owner's parents started their first place back in 1964. Proper, generational barbecue...it's in their blood. In fact, I'm pretty sure their blood is bbq sauce. They know what they're doing! The restaurant and covered patio are modern and industrial with wood, brick, and metal elements. Ample seating inside and out. The food is bombastic! Sometimes they have an Italian beef sandwich that I'm just crazy about. Love these other sandwiches too: Brisket Turkey Sausage Boyfriend loves the pulled pork sandwich. The brisket nachos are mouth-watering goodness. They have brisket tostadas that I've not tried yet but definitely plan to. I lose my mind for the peach crumble and the boyfriend loves the pecan cobbler. Sides we love: Brisket rice!! Tater tot casserole!! We were in San Antonio for the weekend to celebrate our grandfather's birthday, but Seguin isn't too far away (45 minutes on a good day or an hour and 20 minutes on a day when they've closed down I-10 and made a mess of a traffic; the latter was our experience). Friends of his drove from different places to meet us and we met them in line. Texas Monthly hasn't released the 2026 list yet, but Burnt Bean Co. was number 1 on the list in 2025. NUMBER 1! So, yes, there will be a line. The first of our group arrived around 9 in the morning for an 11 am opening. There's a bit of cover where the line wraps from the front door, but we were definitely baking. People brought chairs, umbrellas, handheld fans, cold waters, and more to stay cool. It was still sooooo hot. People who arrived around 9 got in right at 11 and had BBQ in front of them by 11:10. People who got there around 10 got in maybe a half hour later. People who got there later had to wait closer to an hour and got in around 12. (I noticed this, because people in our group weren't all standing together in line.) Once inside, the restaurant is really nice: high ceilings, great AC, tons of tables, and an outside area, too (if you prefer to continue to sweat as you eat your BBQ). The service was incredibly friendly, too. Staff came by and asked however everything was, took empty plates/platters to help us make room, and were very friendly when we were ordering. Almost everything we ate was exceptional. Their menu is huge, with tons of specials that change constantly. Between our group of 9 people, we tried most of the menu. The highlights for me were the beef cheek pastrami, the steakhouse bacon, the Moroccan spiced lamb ribs, and the turkey. I didn't have room to try the brisket, chicken, sausage, and many other things, because I had been eating too long by the time the folks with those meats got to our table! The sides were also very good. I tried the cheesy squash, the green beans, and the queso mac and cheese with hot cheetos - all good. On Saturdays, they offer several specials: the steakhouse bacon, the bourbon peach cobbler taco, and 2 free beers per person - as if they didn't have enough treats on the menu for a great time. Their location is Seguin is great - just off Central Park and Court Street. The service was fantastic. The vibes are great. The food was definitely topnotch. Even the line feels like a fun community experience - with people chatting and having a great time. There's nothing not to like about Burnt Bean Co. We all enjoyed my brother's birthday treat! I got the brisket (2 lbs), pork ribs (2 lbs) , jalapeño sausage (1lb), and quart sizes of the corn pudding, tater tot dish, and hot cheeto mac and cheese. The stars were definitely the pork rib (super flavorful and tender), the brisket was fall apart tender, and the jalapeno sausage had a beautiful snap and is properly spicy. I was a bit disappointed with the sides. My favorite was probably the corn pudding but I still prefer a nice roasted corn OR a corn bread but this was a very unique combo of the two. The mac was okay and same with the tater tot side (honestly the potatoes were quite salty). The sauce isn't my favorite since I personally prefer a spicier sauce. I asked the drive-thru employee, Enkenye, what came with the 40-piece meal. Her response was simply, **"I don't know."** I then asked if it came with sides or if it was listed somewhere on the menu that I was missing (it wasn't on the menu). She put me on hold, came back, and told me it included a family-size order of fries and a medium order of fries. Confused, I asked why it came with two orders of fries and whether I could substitute one of them for a different side. Her response through the speaker was, **"You're asking the wrong person."** I honestly didn't know how to respond, so I said, **"Well, you're the drive-thru person, so who should I be asking?"** If the employee taking orders can't answer basic questions about the menu, that's a management and training issue. To make matters worse, the drive-thru wait was around **25 minutes**, which is excessive for fast food. When I finally got to the window, I asked if the meal included pickles because every Bill Miller meal I've ever ordered has come with pickles. She asked, **"Did you order them?"** I said no because I assumed they came with the meal, and she looked at me and said, **"Nooooo, it doesn't come with pickles."** Seriously? A 40-piece family meal and you can't include a few pickles? It wasn't even about the pickles at that point--it was the dismissive attitude throughout the entire interaction. The food itself was fine, but customer service can absolutely ruin the experience. Between the lack of product knowledge, the rude responses, the 25-minute wait, and the unwillingness to provide something as simple as pickles, this visit was incredibly disappointing.
