Let me start by saying I really loved the service, the tea, and the food my husband got. With that said, I did not like my dish at all- AT ALL. I'm a vegetarian and I ordered the veggie ramen. First it had fish cakes in it which make it not vegetarian and ruined the dish- I took them I tried to power through. However, the broth was so tasteless that the fish taste complete overpowered everything. Even if the fish cakes were not there, I would not order it again. It had no taste. None. I wish that I was informed that there was fish in the dish. I specifically asked if there was meat, I was told no- I'm guessing fish is not meat to everyone but I am a strict vegetarian. Sigh. Ambiance was nice.

Service was super friendly and helpful. I enjoyed the dumplings - they were flavorful, crispy, and had the right dough texture. The ramen noodles were fresh and had a nice chew, but the soup was missing that umami punch I've become accustomed to with Japanese ramen. Overall, a solid place with a ton of menu choices.

I loved the tomato base soup with the fish slices! It was full of tomato flavor and the toppings were plenty with slurpable noodles. My partner tried their beef brisket noodles in the chicken broth and it wasn't terribly flavorful. The broths besides the tomato are definitely more bland but overall it's a solid noodle place.

TLDR: great broth for good value Chicken fish maw broth has finally made it to Edison and Ji Bei Chuan is doing a great job representing it. Their flagship broth is rich, flavorful, and nourishing. At $15 a bowl this is a great deal for a cold weather meal. I'll definitely be coming back in the colder months for this noodle soup.

Been driving by this new noodle spot for a few months now. When a particular pic popped up on my Yelp app, I decided to finally give this place a try. Their Supreme Fish Maw Chicken Rice Noodle Soup is the photo that caught my attention. To start, I had the Cucumber Salad with Garlic. It was fresh, crunchy and refreshingly tasty. It definitely stimulated my appetite. My dish came to the table piping hot, first thing I do is take a couple of sips. The chicken based broth was on point. I can tell it has been simmered for hours. I felt healthy drinking it. The rice noodle was slurping delish, the chicken pieces were tender. I felt like I kept finding lots of surprises in the bowl. What do I find? A piece of morel. I never had it before and OMG, it was so delicious. It was nutty, earthy and woodsy. There was only one piece but I wanted more. Lol. What a treat. Morels are usually found in Italian, French, British and American cooking. For me the soup had a hint of herbal taste so just be aware of that if you are ordering it. I will definitely return to try their other dishes. I never do this but I took the leftover broth home with me. Chicken bone broth has many health benefits, it helps with digestion and joint pain. It can also rehydrate your body better than water. High in protein, vitamins and minerals, I'll be sure to drink every last drop. On a late note: I couldn't help but admire their thick heavy metal soup spoons. I wanted to ask if I could buy a few but was too chicken to. Lmao. Service was a 10/10. Decor is clean and aesthetically pleasing. Ji Bei Chuan is one of the fastest growing noodle shops in China with over 400 restaurants.

The Yelp reviews are accurate and truthful. The food is great. This is a small cafe with only approximately eight tables. I do not recommend large parties of five and greater. It is no-frills, but not exactly "hole in the wall" type that lack in aesthetics for upscale lavish atmosphere but the deficiency is resolved in the food quality. There is one sole functioning restroom in the whole business, ergo, stand in line and wait. We entered hungry in a lugubrious sense of deep sorrow, but exited hunger pangs fulfilled. When exiting upon completion of our lunch meal, there was a line that quickly formed outdoors waiting. Unfortunately, access to this cafe in Edison, NJ is by car only and there is a free parking lot that is shared with neighboring businesses located in a small shopping complex. There are no business cards, and no takeout menus available. Customer service is efficient as the staff worked methodically hustling busy to take orders and fulfillment. Our male waiter was attentive to respond to our inquiries and make suggestions based on our desires. I was able to keep the sales receipt. Price is in the rationale realm of stagflation totaling $41.75. Nota Bene: No table hibernation as the table turnover is fast pace with a line overflowing outdoors which cannot interrupt the flow. This is my favorite default dish for every visit at any Shanghainese ethnic cuisine. However, there were no serving tongs provided for this particular appetizer which is industry standard. Preserved cabbage with pork noodle soup, syut3 coi3 juk6 si1 min6, 雪菜肉絲麵 $9.50 This is a satisfying Chinese comfort food. This noodle soup was abundant with noodles, pork and chopped vegetables. It provided warmth to my very broken heart. Shanghai chicken in wine sauce, zeoi3 gai1, 醉雞, $8.95 A traditional Chinese cold appetizer, aka Chinese Drunken chicken made with Chinese Shaoxing cooking wine. It has amazing flavor and texture to be deliciously enticing. Of course, the cooking wine brings flavor to this appetizer making you want more. Fried Pork Chop, Crispy Fried Intestine, Fish Fillets in Chili Sauce from the mains, and Orange Beef from the lunch list. If you're in NJ and craving Hong Kong-style wonton noodle soup, head to Wonton Guy in Edison. It's a no-frills local gem tucked away in a tiny strip mall off Route 27, with a few parking spots out front and more in the back. The space is small (only 10 tables!) and nothing fancy, but the value is hard to beat. It's always busy, and after you take your first slurp of the soup, you'll get why. Service is fast, so the tables turn over quickly. I was able to grab a seat when I walked in on a Saturday evening. The menu is simple and offers 3 main options: 1.) noodle soup with toppings 2.) soup with toppings (no noodles) 3.) lo mein with toppings served with soup on the side From there, you pick your noodle type (egg, flat rice, vermicelli), as well as up to 3 toppings (wontons, dumplings, beef brisket, etc.). There are also a few side dishes like shredded pork in chili tomato sauce, deep fried fish skin, and curry fish balls. They even sell some items raw like wontons, noodles, dumplings, and sliced beef. And the best part is... the prices are very affordable! Most of the dishes are around $11-$16. My order: *Two Toppings (wonton + beef brisket) Noodle Soup [$12.75] - Where do I begin? Every single part of this meal SLAPPED. The wontons were MUMBO JUMBO and generously filled with fresh, plump shrimp that were sweet and juicy. The noodles were soft and springy. The beef brisket was SO tender with a melt-in-your-mouth texture. And the broth? Super rich, aromatic, and savory. It's made of shrimp skin, pork bone, dried flounder fish, dried shrimp, and dried monk fruit, but it doesn't taste fishy at all. Each table is stocked with condiments like vinegar, homemade chili oil, and soy sauce to customize your soup. The chili oil packs some SERIOUS HEAT, so watch out. This was hands down one of the best noodle soups I've had. I was sad when I finished it :-( *Hong Kong-style Milk Tea [$6] - I really enjoyed this! The black tea was bold and strong--almost too strong for me, but the milk balanced it out nicely. I only wish it had boba! Everything tasted authentic. Quick backstory: The owner comes from a family with GENERATIONS of experience making wontons and running noodle shops in Hong Kong. He grew up there and brought those family traditions to his own restaurants in Toronto... and now Edison. All those years of experience clearly show in his food. The broth is simmered overnight, and the wontons are freshly prepared every morning. No shortcuts here--just decades of tradition, skill, and a whole lot of love in every bowl. Ugh, I wish I lived closer because I'd be a regular. It's hard these days to find a place that REALLLLLLY delivers a memorable meal that's both tasty, reasonably priced, and served in generous portions. If you're within driving distance and debating whether it's worth the trip--DON'T! Wonton Guy is absolutely worth a visit, even if it's just once. I drove an hour to try it, and I still think about those wontons all the time... no joke LOL.
