The arancini was soft and soggy but probably the best tasting item. The pizza was just ok, nothing special but not bad. The real issue was with the pasta, specifically the capellini balsamico which was bland and had way too much sauce compared to pasta - it was almost like a soup. The vodka pasta was ok, slightly less bland but also just swimming in sauce. For the price I expected the quality and taste to be better. After 2 tries I think it's safe to say I wouldn't try again.

When you walk in, you place your order at the counter, and bring an order number to your table. I'm on the search for the best pizza in Madison, and Novanta made it pretty high on my list. I'm a huge fan of pizzas baked in stone ovens, and I was not disappointed by Novanta's ovens, which were imported from Italy. The staff was very friendly! With 2 Wood fire pizza ovens and an open kitchen concept, this place was it for me. Pizza: personal size, got the Salsiccia ($13) which was delicious. Crust was amazing, thin but scrumptious. Service: it was empty when I went at 2 and you order and pay first even if dining in. A lady (I believe her name was Lugenia?) was manning the front. Had to ask for napkins and asked for a cup of water. Got the napkins and an empty cup, water never showed up, no explanation. An elderly white couple showed up afterwards and they got the whole speech, come to find out (by eavesdropping) that there's a water fountain in the back. Well now I'm glad I tipped for no service at all. As I was leaving, a young lad was changing shifts with her and he seemed very friendly and thanked me for coming in. So maybe I just got unlucky with the service because he seemed a lot chipper. Parking: in the back, make a right at the light after passing the bagels shop. TLDR: come for the great pizza, but service could probably be a hit or miss. Takeout pizza would be amazing here.

It was a long line, and no direction to indicate if all the people were awaiting MAKING an order, or Receiving their order. So I returned to my car and created my order online. It informed me the pizza would be ready for pickup at 5:45. So I went home and turned the oven on, watched TV and waited in comfort. At 5:45I drove back and by 5:58 I was once again faced with a line of customers. Not a line, but a clump. Some were certainly in a line, three, actually one mommy with two little kids. The rest was a confused group who may as well have been a group of Alzheimer's geezers, judging the dazed looks on the more elderly among them. I stood at the counter where I saw a sign stating "pickup for online/phone orders" Directly across the counter in front of me was the last kid in the assembly line. He was the wrapper, and most certainly, this kid was employed by all appearances in the job that suited him. He was possibly either really baked or simply couldn't find the right length of bus and wandered into this place. I stood there, fully expecting SOMEONE who might be an employee to greet me or perhaps just tell me when/where I might find my pizza. Stunned silence. The entire group, possibly 17-18 in all, dead silence. After beginning to really feel uncomfortable, I saw someone (a veteran of PMs I realized) walkin and go directly to a rack of shelves and pick a pie and leave. So that's how it works. You just walk in grab any old pizza and it's yours for free! Man I feel stupid. I paid for two! That's only because I grew up in the Chicago area where bad pizza is hard to find. Ever since Marsala's went out of business, "ok" pizza was the only choice we had. Well, I like Lucas. The sauce is good, they did finally get a good crust, although I don't think it is hand tossed, it's consistently cooked properly. The sauce and fresh ingredients is what makes a pizza. Proper proportions of toppings, fast service add to the experience. It's my choice every time I get to make the decision. Sometimes my wife likes to go somewhere else and that's the only time I deviate (keep the peace) There are occasions where the crust needs to be covered more to avoid too much dry crunch. I forgive this as good pizza is hard to find in Stoughton. I realize that everyone is accustomed to the food they grew up with and other places suit them just fine. But for a guy that grew up with some of the best pizza in the USA, Luca's is as close as you can get to my home.
