Some friends recommended checking out Indigo Cow. There wasn't a long line, but it quickly got crowded right after us. The parking is challenging. The interior is cute and nicely decorated. Hokkaido Milk, MBR (Mochi, Brownsugar syrup, Roasted soybean powder). This was so good! Soft, creamy, and refreshing! The mochi was very soft and pillowy. Great ice cream and a good location! Located inside the Whale Tea building, so it shares a nice open cafe space. The ice cream is really smooth and creamy, much better normal vanilla soft serve. You need to walk straight ahead to get to the self-ordering kiosks, or you can just order at the counters with the staff members. So, the layout is a little funky to me. Other than that, the shop is spacious for what it is. There is even shared outdoor seating. The menu is quite limited at Indigo Cow, which can be a pro and a con. It makes your choices less overwhelming at least! My boyfriend and I decided to do the swirl (Hokkaido Milk and Hōjicha) soft serve ice cream in the waffle cone with the Theo Dark Chocolate wall as the topping. It's really expensive. We paid $19 for my matcha soft serve + waffle cone + the MBR and a creme brulee soft serve. Both smalls. I understand you pay a higher price for the quality of ingredients but I think some things could have easily been better. Like, the waffle cone was soooo subpar like it was so thin that my soft serve kept melting through the tiny cracks. Also maybe I came at the wrong time but my mochi was a bit harder than I was expecting. The creme brûlée was also okay but nothing special. This place just seems a little sad. Excited to finally try this soft serve spot! It's been on my list for a really long time and the Bellevue location is super cute. They share a space with Whale Tea and it's located near a little parking lot. The inside has booth and plenty of seating to enjoy your drink or ice cream with friends. I got their vanilla soft serve and added their Halloween special for $2 more. The Halloween special came with a strawberry and pumpkin sauce which tasted amazing and had some fun little Halloween sprinkles and spooky decor. My family and I visited the Indigo Cow in Wallingford during COVID when it was a walk-up window. We enjoyed it when we first tasted it and then saw that they had opened in Bellevue so we decided to try it out. It is located inside The Whale Tea Boba Shop and has its own counter right at the front door on the right when you first walk in. There aren't many choices when it comes to the menu. My first introduction to Indigo Cow was to the location in downtown Seattle and although it was expensive, the quality truly impressed me as it was the closest to Hokkaido soft serve you could probably get out here. Thus, I was super excited to find a new location in Bellevue had opened with indoor seating! Unfortunately, this location provides a severely subpar experience. The milk soft serve didn't taste very creamy and that might have been because it was so completely freezer burned; it was to the point that you could feel the ice crystals with every bite. The dark chocolate wall was really nice quality chocolate and the waffle cone was solid, but I walked away from the experience with soft serve that was worse than McDonald's and 5-6 times the price. The store was at 50% capacity on a late Sunday afternoon and parking appears to mostly be along the street. read more

Tasty soft serve! Coming by on a Sunday evening around 6:30 there were a decent amount of people here though no line to order. Being that it shares a store space with Whale Tea, and it was my first time here, it wasn't immediately clear whether to order at the Indigo Cow counter or at their digital kiosks located at the wall directly opposite the main entrance. There were three ordering stations, two tablets and one larger wall-mounted touch screen (think similar dimensions to the ones that McD's uses for their self-service touch screens). They seem to have the same menu though the wall-mount screen also had photos of each item and topping, which was more helpful to new customers since I wasn't as familiar with the menu. Either way I ended up placing an order on a tablet and paid directly via contactless credit card payment, then sat to wait on one of the booth sections to wait for the order number to be called by the front counter. After about 10 minutes our number was called, and I went up to the front to pick up. A regular Hokkaido milk $6 with strawberry topping +$1, a regular Hokkaido milk/matcha swirl $7.50 with roasted soybean powder and mitarashi dango mochi +$2, a small matcha $6.00. Mine was the matcha soft serve which was well-made and delicious. I enjoyed the amount of matcha flavor, it was mellow, green and grassy without being bitter. Two things: 1) serving size felt a little smaller than I'm used to, comparing to similar matcha soft serve ice cream spots like Matcha Cafe Maiko, Tsujiri, Taiyaki NYC, and Soft Swerve, Cha Cha Matcha (latter three in NYC). (And I haven't been to Nana's Green Tea so can't compare yet!) Though I also haven't seen Hokkaido milk products represented in the US in a significant way like they are in East Asia/Japan, so cost of imported products could be a contributing factor. 2) aside from ordering directions above, the printed menu itself was a bit confusing in layout, I think visually it'd be easier to understand if a) l the steps could be laid out vertically or horizontally in order, instead of from left to right, then down. Similar note on the toppings, esp since they are diff costs it'd be easier to read if they were laid out in two columns or just vertically listed with wording on the left and $ on the right. read more

It may be unfair to make this comparison but after having Hokkaido milk soft serve during my recent trip to Japan, Indigo Cow is just okay. Their soft serve was creamier than typical soft serve that you would encounter in America but it wasn't overwhelmingly creamy as it was in Japan and even had some occasional ice crystals which was disappointing. But once you step inside, it's clear where to order for The Whale Tea and where to order for Indigo Cow. We saw a sign that said we can receive a free topping if we had dined at Santouka, so when we told the employee about this, she told me to get the coupon to redeem for our free topping, which I did. My friend and I both scored a free topping with our soft serve and if you dine here first, you can receive a free coupon to dine at Santouka and get five dollars off a combo meal. This promotion ends at the end of October, so make your way at both spots! I ordered the small swirl of Hokkaido milk and matcha in a cone with Theo's chocolate hard shell while my friend had the same order, but with strawberry sauce instead of chocolate. I like soft serve, and this one was solid. The Hokkaido milk and matcha was light in texture, and I liked how abundant the matcha flavor was. For anyone who loves chocolate like yours truly, I recommend getting the Theo's hard chocolate shell, to complement the soft serve. The waffle cone was also good. I thought the small size was a good amount. The menu isn't large, as it's straightforward with one or two flavors, a handful of toppings and two sizes. Prices increase the more toppings you add on. I was very excited to see that Indigo Cow had opened up a location in Downtown Bellevue! I had been once before to their location in Wallingford, but living in the Eastside, this location is much more convenient to get my ice cream fix! If you're not familiar with Indigo Cow, Indigo Cow is a soft serve ice cream chain from Hokkaido, Japan. It opened up its first American location in Seattle a few years ago. The chain uses cow milk that it only gets from a specific pasture in Hokkaido. And, yes you can definitely tell the difference! This Indigo Cow location shares the same space as Whale Tea off of Bellevue Way, right next to Hokkaido Ramen. Their parking lot is very tight and limited, and so I recommend finding street parking elsewhere and walking over. I believe Indigo Cow switches out their flavors every so often, but when I went a couple of weeks ago, they only had original cream or ceremonial matcha (+1). You could also get a swirl of the two. The small size is $4 and the large is $6. You can also add toppings, such as mochi, for additional cost. I opted for a small CEREMONIAL MATCHA soft serve with no toppings and I can honestly say it was absolutely delicious! The texture was super creamy and just melted in my mouth. It had a strong matcha taste and wasn't overly sweet. Presentation was on point and you can tell that the green color isn't artificial. I also liked the little wooden spoons they give you - reminded me of the little wooden spoons I used to get with the ice cream from school lunches. Their logo, a thick blue cow with a soft swirl cutout beneath it, is super cute too! The interior of the restaurant is modern. They have some couches and a bar with seats next to the window that they share with Whale Tea. It's not a huge space, but the space is fairly deep. TIP: If you're torn between going here or Nana's Green Tea (which is just a street over) for Japanese matcha soft serve, I'd say that Nana's gives you more value for your money. Their matcha soft serve is $5, comes with a free cone, and is a much larger portion than Indigo Cow's (at least their small- their large might be comparable, but is $1 more than Nana's). Both locations' soft serves are comparable in matcha taste and strength in my opinion. HOWEVER, as aforementioned, Indigo Cow only sources its milk from Hokkaido (hence the higher cost) and its ice cream texture and flavor is much more unique than Nana's. If you want ice cream that is light on the tongue and has a more robust milky flavor, I would highly recommend giving Indigo Cow a try. If you want a smoother and thicker swirl OR want other matcha desserts besides soft serve, I would give Nana's a try. It reminded me of some of the luxury Japanese chocolates (like Royce) that also use the same milk - the creaminess and taste are similar. Been going to their storefront on 45th in Wallingford for years and so glad they've got a spot now closer to us in Bellevue! No big changes to the quality of ice cream and the storefront is shared with a boba shop that used to occupy the old Mango Mango. I liked how there was window seating and also tables that you could sit at indoors (Wallingford has outdoor seating). There is also street and lot parking outside, although it can get busy during peak dinner hours since Kizuki Ramen is next door. There was only one worker there, but service was very fast. We got the matcha swirl with MBR and we were so happy because the Wallingford location's machine has been broken for a while. The matcha was so rich and smooth - I'm not sure why but the matcha taste was so much better than I remember it to be. The Hokkaido milk was similar to the Wallingford location - creamy and perfect amount of milk flavor. The rice balls were perfectly chewy!
