Layout and design of this fine establishment is minimalistic, not in your face... It's open and huge which means it's easy to have some space without feeling like you are sitting in someone else's lap. 5/5 Breakfast - yep, I had the Sir Charles Benedict (I'm a genius) and it was all sorts of amazing. Wifey had the Corn Fritters while that was good it wasn't no SCB. The breakfast was perfectly accompanied by tasty three quarter latte and a double shot latte 6/5 ( it's that good!!) Dinner - Pork Belly Boa in a Trio. Yep as good as it sounds. Immaculately served yet the photo is after I fiddled with it (hey! Don't judge I was hungry!) followed up by the lamb ribs. Not my favourite, a lil on the fatty side but amazing taste and once again served with style. I was given a steak knife - not needed as it falls off the bone. Honestly no need for cutlery... The coffee can be sublime if certain baristas are working, but when they're not then it's passable but not the best you'll get in Fitzroy. Until they're all on the same page with technique then your coffee experience may not be in the territory of sublime but your food experience will be! I love that the menu swings firmly in favour of vibrant south east asian flavours with the likes of miso scrambled eggs and BBQ pork with roti and fried eggs. For kidlets big and small there's boiled eggs and soldiers and if you're after something a little more "regular" then go for the avo on toast or get simple poached eggs on toast, maybe with a side of bacon and house made kimchi? Breakfast runs until 4pm, and there's a lunchtime menu that runs 12 until 4pm if you don't believe in eggs after noon (what's wrong with you!). Thursday to Saturday there's also a dinner service, where the menu is made for sharing and filled with great flavour and spice. The son-in-law eggs are a standout as is the sashimi. These guys are licensed so you can have a beer or wine from a small list that hopefully will grow more creative in time. Service overall is friendly and doing well in such a large and busy space considering the newness of Sir Charles. In time, as systems are refined and they settle in some more, I think they'll really hit their straps. Until then, be patient and cut them a little slack while you wait for your tasty meal.

The flavors are impossible to describe in these dishes but are absolute perfection. She got the eggs Benedict which is placed on a base of yuzu instead of the traditional muffin. We scraped the sauce up using the lotus root and lettuce until nothing was left. The steak was tender and flavorful with a mushroom gravy that wasn't too heavy but perfect for dipping the fries and eggs into. It's all I think about now, day in and day out until I can go back and eat it again. It haunts my every waking minute. I don't know what I'll do when I have to fly home and can't get it back in the states. If you find yourself anywhere near Melbourne...or Australia...make the trek to Humble Rays in Carlton. It's worth it. Everything on the menu looked amazing. The banana matcha cloud and Orange espresso are both unique and unexpected plays on the traditional drinks that will change your mind about all sorts of flavors. The service and ambience also win! The Thai iced tea was also FABULOUS. Great service and free wifi. Absolutely a top notch spot.

The interior inside the cafe is rather spacious but felt a little more budget, industrial and rustic thanks to the major applications of " ripped" wall and exposed bricks. After glancing over the menu, my eyes locked on the 'Reuben,' thinking 'this can't go wrong.' The staff were kind and friendly. Despite not dining in, they allowed me to sit and wait at a table. After a few minutes, I received my order and rushed back to the hotel because I couldn't wait! Excitement led me to open the box like a treasure chest, revealing a huge sandwich - the portion I had been searching for. In Japan, where I live, the general trend is to reduce portions to maintain prices rather than increase prices to keep portions consistent in the face of inflation. Now you understand how crucial this is. Another crucial aspect - the taste was on point. With a generous portion of meat, it dominated the experience along with the sourness from the pickled cabbage. As this is a busy place we had various people both sides of us throughout our brunch. They now know more about my life than I'd prefer. The dishes my companion and I had were mighty impressive. For a start, both dishes were visually stunning (see photos), impressively composed and very flavoursome. Mine was the Huevos Sucios or the Dirty Eggs. I cannot fault the dish particularly as the jalapeño flavour was so beautifully balanced that it gave a delightful length to the meal that lasted well after I finished it. It was never over hot either. The temperature was bang on. Plus, I thought it was good value for money. The Dirty Mary for $10 with this dish is a steal and it's a superb drink. This is better than any version of Mary I tried recently in Hawaii where they'd claim to make the drink better. They don't. My dining companion had the king salmon which he declared as delicious too. Our coffees to finish were lovely as well and topped off a pleasant and successful venture. I'd like to give the place a 4.5, but that option isn't available as has been canvassed here at length. On balance, mainly due to the squeezy tables for two, I'd round down to 4 this time not up to 5. Tough judgements these.
