This shop has been repeatedly recommended by many coffee enthusiasts in Toronto, but it's not really like a "coffee shop." It's more like a roasting factory dedicated to perfecting coffee. I ordered a pot of hand-drip "Melona." The first sip wasn't particularly amazing. But it was very clean. Slowly, the clear fruity aromas of honeydew melon and cantaloupe emerged, not overpoweringly acidic, but rather a gentle, restrained layering. It's the kind of coffee you find yourself drinking the whole pot without even realizing it. The space inside is also a big plus. The front area displays various coffee beans and related products, and a whole wall of transparent glass allows you to see the roasting factory in operation behind it. Such a hidden spot inside office buildings in Markham but literally a gem of a place! I was first introduced to Hatch by my friend who is really into coffee and that her other coffee connoisseur friends swear by this place. At first I didn't think anything of it. I'm not much a coffee drinker. Fast forward a couple years I now know the difference between an ice coffee and a latte (hahah). I tried their latte with their gamma beans and wow the flavour was so different and really blossomed. I don't know how else to describe it. Ever since then, I've taken my husband here to get coffee beans as gifts for his family. I also love how there's a tiny little market slash vendor always out in the front selling other things such as stickers or artisan goods. Unique spot for such an unassuming neighbourhood. After doing some research, Hatch was on the top of my list to stop by while I was in the GTA. Fortunately, they were still open on NYE! As a coffee snob, I must recommend Hatch. The coffee shop has a minimalist, warehouse-like vibe, with the roaster in the back. I like that they have a vending machine in the front offering their beans, as well as coffee gear like V60 filters. They have a good stock of beans, ranging from affordable blends and single origins to premium coffee beans like Gesha. Their coffee menu is fairly simple, focusing on classic espresso drinks rather than specialty lattes. with no specialty lattes. You'll find the basics here, like latte, cappuccino, and flat white. Additionally, there are few pour-over options, which I'm excited to try on my next visit. CAPPUCCINO - 5 +1 for Holiday Coffee blend I got the cappuccino since I wanted a stronger milk-based espresso and the barista recommended the Holiday Coffee espresso instead of Supernova. Also, they only use oat milk here, which is great. The cappuccino was very creamy and the coffee notes were fruity and bright without being acidic. I really enjoyed the espresso here and so did my mom. It's truly been awhile since I've had a cappuccino like this. The light-roast espresso was pulled very nicely. Hatch a solid coffee roaster in the area. I bought a bag of beans even though I have so much already. If you're a fan of third-wave coffee, I'd highly recommend stopping. This is not your regular coffee shop. The staff are quite well-versed with the various flavours and roasting of coffee beans. Let them know what you enjoy and they will be happy to help you choose something that's right for your pallet. There's a little bit of seating where you can enjoy your beverage. There's also free parking, which is nice. They also had a variety of coffee making supplies if anyone was looking for something out of the ordinary. At the time there was also a pop-up bakery in one of the corners just off of the entrance. So, we tried one of their pastries, and it was delicious. Was difficult to find the location in a mainly industrial area. Very cool to see the large machine and all the magic happen from behind a window! They make their beans and can the cold brews at this location. I have tried many of the cold brew flavors and have to say that my favorite is the espresso martini. These small cans of cold brew coffee come in the cutest cans! I gifted a few and many of their first reactions were "I almost dont want to open it. Its too cute!" They also have hot drinks, beans, and pastries and the brand of oatmilk they use for sale here.The small "cafe" features a large high counter top table which can seat about 10 people. But as for seating, thats pretty much it. It sees more set up for a grab and go type setting. They also have some mugs and tumblers for sale on display. This is more of a coffee bean shop than a typical cafe, but definitely worth a visit. They usually have a small selection of coffee roasts you can try in a latte, flat white, espresso shot, or pour over. The ambiance is minimalistic but very open and bright. Location/Service This place is a little tuck away in a more quiet/commercial area - near Costco Yorktech area. Plenty of parking available around it and it's pretty easy to spot once you make the right turn in. Inside is very spacious - good use of natural lightning. They do have very limited seating available to actually enjoy a coffee. No tabs to actually do work. But they do have bigger tables for private booking experiences to do coffee tasting (kind of like wine tasting). Coffee They have a wide variety - I happened to swing by wanted to check it out and ordered a latte/flat white. I enjoyed it and it's reasonably priced. Not very knowledgeable on coffee - but this place is perfect for those who want to learn more, especially on the equipment, techniques and the beans. My fellow Yelper, Jennifer K highly recommends this place and I understand why once I visited there today. Hatch is a heaven for coffee enthusiasts. They not only roast coffee beans on site, but also have a cafe serving espresso and pour over coffee. The cafe is run by very friendly, knowledgeable, award winning barista from Asia. I would say this is more than a cafe; it is like a coffee lab where you can learn how to appreciate coffee properly. The barista asked me what kind of flavours I like and suggested 1-2 kinds of bean to me. He would ask me to smell coffee before drinking it. The experience is like wine tasting. I tried both pour over and espresso white during my visit. The barista answered my questions patiently and I learnt so much from him. I have been drinking coffee for so many years, but I learnt how to appreciate coffee properly today. Giving hatch a 5 for its flavourful Super Nova single origin espresso blend. Nice dark chocolate notes with an aftertaste of citrus, which wasnt overpowering and accentuated the taste of the coffee overall. The oat milk they used provided another depth of flavour. While I ordered a cappuccino and I felt that the foam didnt necessarily shine through, their milk was well tempered and it still gave the overall beverage a nice finish. Many of their pour overs are fruity so I didnt try (as I dont prefer the fruit berry notes dominating in my coffees). Staff and service was nice and professional. Factory setting so was a bit hard to find but otherwise a cute little spot for a nice cup of coffee. read more

Love love love this place!! They recently opened a cafe part alongside the roastery, so you can enjoy their delicious coffee right on the spot - and boy is it an experience! Hatch coffee roasters supplies to quite a few coffee shops around the GTA (think Elephant Grind, Sorry Coffee Co), and the beans are carefully sourced and roasted right on the facility. The main barista there, Benny, is absolutely amazing. After having a coffee from Benny, you know that coffee making is truly an art. The cafe partner Jenny and head of coffee Boris are also super cool people. You'd get to meet them if you go to one of Hatch's special events (I attended a coffee from Japan cupping event). Hatch, if you know, you know. If you don't, you would NEVER find them in the midst of all these commercial buildings. If i reviewed them after my initial visit they would have gotten a 5. I loved how there's a choice for which beans to use for your coffee. And they have a cute little sticker on your cup to let you know which bean you chose, and what flavours you can expect to taste. I also love how they default make your drinks with oat milk. So I think prices of the drinks are VERY reasonable, considering if you were choose an alternative milk at other coffee places you would need to pay an additional $0.75-$1 more. The only reason i'm 'dinging' them 1 star is because the second time i visited, we were not asked which bean to make my coffee with even though there were 2 to choose from, so we had to ask if we were still allowed to choose a bean. And also, for some reason my latte shrunk in size. For some reason my latte was in the same size cup as a flat white...... read more

Jennifer K., a coffee connoisseur, introduced me to Hatch, a little piece of heaven for coffee geeks. It's kinda set up like a lab and they do custom roasting and blending of coffee and tea, and also bottling. They have something to suit every taste, or they'll make it! We sampled some coffee that was prepared in a very precise and scientific (geeky?) manner. The beans were freshly roasted, a portion weighed on a scale and ground. A beaker (yes, a beaker) was placed on the scale and hot water carefully filtered into it through a drip maker and then poured out. The ground coffee was placed in the drip maker and more hot water was carefully poured over it until it got to a certain weight on the scale. This is not how I make coffee at home. Maybe I should. The coffee was good. I also sampled some of their cold brewed coffee, with their Signature Blend being my favourite. I would have sampled even more but this little venture kept me awake past 3:00am. In uptown, besides Red Bulb, this is probably my place to go for a cup of good coffee. This place makes and roast their own brand of the coffee bean. It is a little bit hard to find because the entrance is like a commercial office entrance. But once you open the door, you will know you are at the right place because the coffee bean aroma... boy oh boy.. hmmmmmm... This is the place that gets me to start appreciate pour over coffee. The last time I have it was at least 7 years ago and I hated it and stop having it again until at Hatch. and I will be honest with you, I know nothing about coffee and all I am relying on is my taste buds. My tastes buds and my nose are doing the happy dance when I try my pourover again at Hatch. :) High five to you Benny in giving me a good pour over experience! I am bias. I have this thing for local business that is friendly, innovative, enthuiastic and love what they are doing. And Hatch is one of them. They do Coffee well. Single Original Beans roasted on site and Cold Brew. The roast is lighter but I do like their Scandinavian concept from packaging to produces. Great for french press and pour over. Especially if you are into lighter roast with a citrus or floral note. Drop in for tasting is welcoming. You can meet the roaster and do some coffee geek talk. Wow, what an amazing coffee roastery in Markham! In a suburb full of bubble teas and Asian drinks, we were looking for our usual hipster coffee roastery. And we came across Hatch. Nestled in office building, Hatch is a roastery that specializes in their cold brews and just overall coffee. I walked in and was greeted pleasantly by the owner. He went into detail about how his place started, the beans he roasts, the methods used.. and then made me the most amazing pourover ever!! It was a lighter brewed coffee with their new supersonic beans.. and it was so smooth, light, and refreshing. What an absolutely amazing cup of coffee. Barely any aftertaste.. just a very clean cup of coffee. I sampled the cold brews as well and they were very well balanced (not too heavy or dark), and just overall really good. My favorite was the Chalo's Farm... oh man, so good! If I lived in Markham, I would stop here on a weekly basis. I haven't had that good of a cup of coffee for a long time.. I'm surprised not a lot of reviews have came through for the Hatch brewery despite so many coffee enthusiasts uptown. I was looking for freshly roasted coffee, only to find a few locations in Markham / Richmond Hill. I have had Hatch coffee from several coffee shops and was excited that I can buy fresh beans in store rather than online. The location is not obvious as a retail storefront, but the space is clean and does serve fresh coffee and various beans and mechandise. The only downside is that on most days, it closes by 5pm and not open on weekends, so it's difficult to actually come and visit. The door rings when you enter, and there's also a bell to press for assistance. The place is not heavily staffed, so you might need to wait as they might be at the back. I was greeted by a staff who turns out to be the owner Alphonso. I told him how I found out about their beans and what I'm looking for, and was happy that I can pick up a freshly roasted batch of the beans I wanted (300g packages). They also serve drinks and cold brew, as other reviewers mentioned. After talking with Alphonso, he hosts coffee brewing workshops that you can sign up for, but limited to small number of spots. The storefront is a little busy in April (you can ask him why in person) but otherwise he is super friendly and gave me tips for brewing. Will definitely come back to try other products! read more

Subscriptions are great value: $30 per month (six month subscription) for two bags of quality coffee (usually 300g each). Alfonso is helpful and prompt with replying to questions related to subscriptions. I learned from him that you can add-on orders to your subscription for free and that subscriptions can be halted temporarily. Most of the expensive coffees ($150/kg+) were very interesting. I really enjoyed their CM series and especially the Jasper - it was smooth, sweet, and tasted like strawberry candy. It's cool to see a roaster bringing out all sorts of exotic processing styles to the common market. Learned a lot from my six month subscription to Hatch! read more

Highly recommended if you're looking for a unique coffee experience! My friend and I went in on Boxing Day to look for some last minute gifts for family. My uncle is a coffee aficionado, so we thought we'd check this place out since it's a roaster. Ben is extremely knowledgeable. Ask him any questions about coffee and he'll totally help you out! We tried the El Paraiso Cherry on pour-over, the Supernova by espresso as well as the Nansebo ato girma by espresso. I often frequent Starbucks but never thought myself to have a sharp palette for coffee - however, the quality of these beans were incredible. I could actually taste the flavours that the packages advertised, haha. I got a latte with oat milk and the Supernova espresso. Really clean, powerful flavour. I purchased a bag of Supernova ($20) for my mom, and El Paraiso Cherry ($37) for my uncle. Will return if I'm ever craving a good cup of coffee. read more

We walked in and the place was aesthetically pleasing since the store was all white with wood tables covered with different types of coffee beans. We were able to sample a couple of their coffees and the associate was nice enough to explain the company and where there coffee beans are sourced too. Been here a few times and I really enjoyed visiting Hatch. Not only could I expect to get a great cup of coffee, i always felt like I learned something new.
