The only type of food course I had ever taken was one where the hostess showed 50,000 ways you could use pillsbury croissants!! Boy am I glad I have a different experience now!! My daughter arranged a private charcuterie and wine pairing class with Gina and Sam for my 50th birthday and I have to say it was informative, fun and DELICIOUS!! We arrived to a beautiful engraved personalized slate charcuterie plate waiting for us. In the middle of the long family style wood table was ALL of the yummy ingredients we were going to use for our "class" along with a sparkling wine flute and 2 wine glasses. Gina, the cheese lady :) talked to us about placement of the different ingredients and how they go together. Sam the sommelier showed us how to air out our wine, explained why they smelled and tasted the way they did and what made them pair so well with certain cheeses. Gina went into detail about why she chooses certain cheeses for her boards, where they come from and how they are made. After visiting Grazing Theory I have a new appreciation for local grown products! Both of these amazing ladies took pride in that the majority of the products they use are locally grown or sourced! They had a local florist provide flowers for the table, they used a local grown honey for our plates and knew the people that provided the majority of the food on our plates and in our glasses. I have been lucky enough to enjoy the delicious charcuterie boards Gina and her team put together! The meats, cheeses, and other goodies are such high quality, and the presentation is simply beautiful. You almost don't want to destroy it all by eating it, but you can't help yourself - so good! It's worth the splurge to have the larger boards as the centerpiece at an event or even just to enjoy at home by yourself with a glass of your favorite wine (because you're worth it)! I LOVE the vegetarian mini boxes, and that's my go-to now at Danza del Sol winery! Their location in Vail Ranch HQ is also so cute, and I loved their Wine Education workshops, pairings, and you can even host your private events there!
