I stopped by Gingersnaps Bakery to see if the hype was real and for the most part, it delivered. The standout was easily the Nutella Brookie. It's exactly what you'd hope for: classic chocolate chip flavor, delicious brownie cookie flavor with that Nutella stuffing sandwiched in between both doughs which actually has a balanced sweetness without being overwhelming. Definitely worth going out of your way for. This cookie HIT! I also tried a few other items: * The cookie dough truffles were solid. Fun and indulgent, deff a sleeper hit. * The snickerdoodle cookie was solid but not the main event. Thin, chewy, with crispy edges which I love so nailed the texture perfectly. Just wish it had more snickerdoodle flavor. * The cookie dough cheesecake didn't hit for me. I lean more toward a classic vanilla-forward cheesecake, the edible cookie dollop was good though. What really stands out about this place is the variety. Cookies, cupcakes, pies, cheesecakes, brownies and they even take custom cake orders. Well it goes like this! Me and my Lady when to visit her parents on our summer vacation . We heading there happens to see a beautiful bakery in the very familiar strip mall with several stores from Nayco to Subway! We also were going to her nephews house and we decided to bring something special and we happened to see GingerSnaps! I used to live in the arena when I was working in Lincoln . Upon arrival we saw gorgeous family owned bakery that looked so friendly we had to visit! We walked in and was greeted immediatey from a friend and kind voice! Love that! This place is amazing ! They have so many different savory smells coming from the homemade cupcakes pies and cookies! I couldn't believe how great it smelled in there amd not to mention this place it so clean you actually could eat off the floor! It is set up so nice and there is decadent sweets in every corner and to every turn! We didn't know what to decide on so see just took a dozen of the amazing cupcakes 1 of each of their tasty and hug cookies and lastly 1 of each of their delicious pies! You gotta support your local small business you know! This is one of the few places that made it through the tough 2020 experience! We go to my lady's nephews houses and our car was loaded with so many sweet smelling items they almost didn't make it inside the ! When we arrived we carried the amazing items in and showed them to everyone and said you had to try a piece of each and that's the way to do it so everyone can share the Ginger Snap experience !! I had an amazing experience with Gingersnaps! I needed a birthday cake for my son's 9th birthday party which we were having at R1 Racing in Lincoln. Our friends & family, in addition to my son & I, are sick of Stop & Shop cake's & ESPECIALLY their prices! They also didn't have anything I really liked for my son's go kart birthday theme either. I actually wanted a fondant cake- because they often MAKE the look of the "Main Table" SO GOOD! I started looking on Instagram & luckily stumbled across their page & was SOOO glad that I didl. I have reached out to many bakeries, patisserie's, confectioner's, restaurants, caterers, cake makers, & other various places for quotes and 9x/10x they take a SIGNIFICANT amount of time (as in a week or more) to respond & once they do, ordering is difficult, complicated & NOT AN EASY PROCESS. I emailed her & she PROMPTLY responded. We went back & forth confirming all the details, sent her a deposit (which is a bit higher than most places- at 50% of your item total) but I'm sure she has good reason such as frequent cancellations. Etc. Either way it is definitely a reasonable fee! The owner was super professional and friendly, very knowledgeable & full of information! She was direct & answered all of my questions quickly and efficiently. It kills me to write a review this low because I'm a new resident of Lincoln and who doesn't want a fantastic bakery in town? Even though I don't feel the baked items are my favorite I was happy with the establishment itself- the inside was nicely decorated, staff were cheerful, the place smelled wonderful, and $8 for a muffin and brownie I felt were very reasonable. My issue is that I ordered my birthday cake from here (raspberry almond). I felt the cake was dry with not enough raspberry filling and what we did have was very tart. Not a huge issue, I thought I had left the cake in the fridge too long. So, we stop in today for a salted caramel brownie and a lemon strudel muffin. I will say I loved the caramel on top- perfect consistency and flavor. However, the brownie was drier and cakey when I prefer fudgy. The muffin I also felt was dry and lacked lemon flavor, it felt more vanilla than lemon. I would never say this is a bad establishment- I put a lot of stock in costumer service and they are wonderful. I may just be ordering the wrong treats or come on days that they're over baked. read more

Stopped in this bakery on a late Saturday afternoon and was greeted promptly and there was plenty of a selection left to choose from. I got the strawberry and dulce de leche macarons, a strawberry cheesecake, and a cupcake called Jessie's dream. The star of the show was definitely the dulce de leche macaron which had a salty caramel drop in the middle and vanilla filling surrounding it. The strawberry was ok, a little skimpy on the filling. The cupcake was moist and just tasted like a birthday cake flavor. The cheesecake itself was good but I did not really enjoy the texture of the strawberry topping. I liked the individual packaging for the cupcake and cheesecake, great to make sure desserts don't smash into each other on their travels. The price for the four items was $14 and change which isn't too pricey but a little above what I would expect considering the portion sizes of the cupcake and cheesecake were pretty small. I will definitely want to visit again to try one of their stuffed cookies and another dulce de leche macaron. read more

This review is specifically for the macarons. I am a huge macaron addict, so obviously I was super excited when this little shop opened up around the corner from me! Unfortunately I was extremely disappointed. I tried each flavor: Vanilla, chocolate, pumpkin and apple. The macarons almost tasted stale. They were brittle and stuck to my teeth when eating them. The taste was more like plain meringue then the nice soft and chewy texture I was looking forward to. The filling to macaron ratio was way off as well. The small amount of filling I did get was very good - the flavors were there, but the textures were all off. I will stick to Woops! for my macarons for now. read more

Three words-Edible Cookie Dough! Yum! Everything was really good. Could've done without the cupcakes-the birthday cake one was wet inside-not good and the raspberry vanilla was just ok. However, the mini pies were delicious and the mini chocolate cream pie might just be the best I've ever had! No complaints from the cinnamon buns and lemon bars I dropped off. The fam and I were getting lunch at the burger place in the same plaza... then I remembered that Gingersnaps was there further down, so we decided to go in and see what the offerings were. The place itself is very cute... bright and airy and I like the black and white motif. The baked goods were displayed well. I saw that they had french macarons, so i knew I had to try at least one. I am very picky with my macarons so I was interested to see how these were. I tried the pink one which I believe was vanilla flavored. I liked it, but I think it would have been better if I had let it get to room temp first because it was quite firm from being in the refrigerated case. I also had the individual banana cream pie. This was super yum. The whipped cream was very good and not too sweet, which I liked. Hubby had the carrot cake cupcake, which tasted good but again, should have let it get to room temp for optimal taste. Also, can't beat that they had two for the price of one on day old muffins! They really didn't taste like day old muffins... still very moist and tasty. He said the flavor was there, but it would of been perfect if it was under baked about a minute or 2. I agree. -Raspberry bar- delish! I was going to skip this one until I saw there were free samples and I'm glad there were. The samples made me buy it! My recommendation would be to put the tray of samples some place when you first walk in, versus at the other end of the bakery- I almost missed it! -Cinnamon bun- the flavor is there for sure!! Was searching for a local spot to buy either a cake or cupcakes last minute for my father's birthday. While cakes are special order here, I was able to get a dozen cupcakes that we are eager to try! Several flavors and all beautifully decorated. The owner's mom waited on me and it was a pleasure speaking to her. I tried the pecan bar and hibiscus ice tea. Through countless recommendations we ended up at Gingersnaps and I was blown away not only by how adorable everything looked but when we got to tasting, how wonderful everything was! They did a fantastic job turning this space into a beautiful bakery. It's gorgeous inside. All of the baked goods looked like they should be shown off in magazines. We ordered a few cinnamon buns and ate them when we got home. We didn't put them in the micro like others have suggested and they were still amazing. Can't wait to go back and try the other baked goods. We even ordered a few coffees while we were there. The coffee wasn't terrible but I would love to see them expand the coffee selection with a local toaster. What's better with your cinnamon bun than a hot latte or espresso?! I was looking for a last minute unique graduation cake. They called me back very quickly (during phase 2 re opening) and were able to design a cake around my 'chocolate candy theme'. I dropped of my candy items and when I came for pick up I was pleasantly surprised. The cake looked fantastic, it was huge and very heavy.
