I've had fried chicken, budae jjigae (kimchi stew with ramen noodles, spam, etc.), bulgogi ddukbaegi (soup), yangnyum makchang (marined intestine) and makchang bokkum (stir-fried intestine). I only approve of the intestines, they're cooked very well. This place is well-known for those dishes. However, the other dishes are just okay... I think I could have better korean food somewhere else. I haven't tried the bossam yet, but maybe I will one day if I feel the need to come back to this place. read more

The dishes we enjoyed the most were their bibimbap and fried chicken. The kfc had a satisfying crunch and came in 2 flavors. Their bibimbap had the usual assortment but was well done. We ordered fried chicken (half sweet/spicy and half regular), spicy squid stir fry and the seafood pancake. Of the 3 dishes, I only enjoyed the squid. Instead of serving a whole chicken chopped up into smaller pieces... they were all little drumsticks and wings. The seafood pancake was below average for sure. I didn't like the flavor and it wasn't crispy enough for me. Last, but not least... the food took forever to come out. The place wasn't busy, but I'm assuming they were understaffed. This location has changed a lot over the years, with new owners, etc. I'm not exactly sure when the current owners took over, but I was pleasantly surprised. While Gilson has a full range of Korean offerings, there are two items which sets it apart from other restaurants which are bossam (steamed pork wrapped in lettuce) and fried chicken. The bossam is extremely soft and very flavorful and is delisious on it's own. Fried wings are also very good either seasoned or not. Service, however, can be very slow. I haven't tried some of the more traditional dishes but Gilson is known for these two and for good reason. read more

Lights! Just look for the pretty twinkling lights on the west side of Highway 99 in Edmonds and you can't miss it. We stopped in late one night when we were craving something hearty and warm. Our food arrived quickly: some mandu and a scalding bowl of BooDae JjiGae seasoned nicely with a hearty helping of gochujang! I wished that our server was a little more attentive but she was friendly. We will definitely return to see if they can gain another star. read more

Nothing to complain about here. We had a hankerin' for some Korean food late one night and had a hard time finding anything that was open and decent. I've heard about Gilson before but never really made my way there since it's in a weird spot on Highway 99 that I don't prefer driving to. But we came in and asked if they'll still serve food and she welcomed us in. We got the 2 types of chicken wings and a soup. All of it was really good and there was a good variety of banchan that the waitress gladly refilled. I have no complaints there! The service was really good, she was polite and never rushed us. I tried this place out twice... both on Friday nights. First time it was horrible. Not only was the food average but there was only one waitress working so it took forever to order, get food, bill etc. Second time I was impressed. The food was superb I tried several dishes and they were all good. There were two people working this time so the service was a bit better but they still could need extra help since it was difficult getting the attention of waitress. As far as a la carte korean restaurants go, this one is my favorite. It is reasonably priced for lunch, the service was fantastic when I went there, and the food was great. I kinda wish that I had not asked for the wings to be really mild, because they ended up being just about sauceless. I knew that if I had said I wanted it medium or mild I would have had their awesome sauce-coated wings. The portion size was great. I usually eat quite a bit, but I was stuffed before I finished my entree, thanks to their tasty banchan (little family-style appetizer-type dishes) which is added to most entrees free of charge. Maybe this place was once great, but this wasn't my experience today. I'll grant maybe it was an off day, and I didn't order one of the most popular items on the menu, but there was a LITANY of flubs that made it a terrible experience for me: I showed up on a Saturday, having checked hours online in advance. Opening time: 11am which was also clearly posted on the door of the restaurant when I arrived. Staff showed up at 11:55am, so I wound up sitting & waiting for ONE HOUR for it to open. Yes, profuse apologies were offered, and there was a bench outside the door to sit on (probably because they're in the habit of not opening on time). There were 2 tables populated in the room (including me) at the time. Still, I had to wait 30 minutes for my food to arrive. I called a week in advance, asking if gobjang gui was on the menu. I was told yes, and asked a 2nd time: are you sure? Gobjang gui? YES. Guess what answer I got when I pointed out it wasn't on the menu: NO. Similar intestine dishes were available, but not what I specifically called & asked for. I'm guessing the person who answered the phone doesn't speak English & is just in the habit of saying the one word she knows to any question. Banchan: mediocre. The spinach namul tasted like dirt, like it hadn't been rinsed enough. Now I'm no great shakes as a Korean cook, but can hold my own on a number of dishes, sigeumchi-namul being one of them. So I know what this is supposed to taste like when prepared right, and it ain't that hard. FAIL. I tried an alternative intestine dish (makchang bokkum). Bland, with way too much cabbage & onions to cover the fact of small quantity of meat. Ridiculously overpriced for what I got. Finally, asking to take the rest home, I got it in a STYROFOAM container. Seriously? Banned in Seattle Jan 2009 and five years later they're still using them? SHAME! Yes there are lots of one-note 'this place sucks' unjustified reviews on Yelp, but I'm a veteran Korean food gastronome, and Gilson had a laundry list of things that just pissed me off to no end. 1 star. I am a regular and have been frequenting this place for over 2 years now, along with my sister and BFF and several other close friends... and now my Hubby. My husband is Korean (from Seoul) and likes the food pretty well (though it's not his favorite) so you know it's good. ^.^ the one thing, if you're not Korean or with a Korean person you need to make sure to speak up because the waiters won't pay as much attention to you. The best Korean bbq place I've tried by far! This is my second time back. Pretty much ordered the exact things we got last time: Wine pork belly, pork intestine, La kalbi, spicy fish roe soup and egg soup. You could definitely taste the wine in the pork belly. It's so unique, I've never seen any other places offer that. The pork intestine is so good when you grill it, nice and crunchy on the outside and soft on the inside. La Kalbi is my bf favorite. However he did say that his spicy fish roe soup was very fishy.. Though I have to say it is pretty pricey for the portion you get. Service is pretty fair, this place does get pretty busy. The last time we came it had seem they only had one server..which took some time for us to get our food and seated. But, today there was about three servers and we got seated right away. The food here is so so. Hit and miss depending on what is ordered. The bad: The chicken wings are not good. The batter is too thick thus making a very soggy not crispy exterior. The frying oil was not fresh for batch as I could taste overcooked oil. This is almost beer batter fish and chips like consistency not a true bonchon or kyochun chicken double fried chicken. Light batter and double frying creates a very thin and crispy exterior. The seasoned chicken tastes mainly of gochujang and not a well balanced seasoning sauce. The good: I will say the bossam was good. The fresh kimchee was very good and not spicy. Well seasoned pork and really quality cut of meat.
