I don't normally write reviews, a live and let live kind of guy, but had to step in here as we chose Fuyu as it was a 4.8 on Google and a 4.5 on Yelp.. I have had the privilege of eating very good sushi (Nobu and alike) as well as your smaller strip mall sushi places to scratch the itch at an economic price. I don't expect anything more than halfway decent service and ok sushi from the itch scratchers, so my expectations were not high, but wound up extremely disappointed none the less. I ordered online and got an email response to pick up 30 min later. I arrived about 35 min later and was told it was not ready and I sat with two others to wait. Bags came out and they would walk by to put bags in the shelf and go back to the kitchen with asking any of us if the order was ours to the point where I got up to ask them to check. That helped the other two as their orders were out, but I still waited. An hour and 10 min after I placed the order, I was finally on my way with a gratuitous 8 oz Cherry Vodka drink for my patience. When I got home 15 min later found that the soy sauce they packed spilled in the bag and covered my front seat of my new car. Cleaned up and went inside to eat to find the fish to be a disappointment. The rice was soggy and clumped together, see picture, as we just ate the sushi off the top. The discoloration of the sashimi was concerning enough to dump it. If you correlate sweet shrimp with raw ebi, don't here, you get cooked shrimp when you order sweet shrimp. As I had time to observe while in the restaurant, it seemed like they had regulars based on greetings, and it was probably at half capacity.. so I don't know if my experience was the exception but thought I needed to share in case it was the norm and needed to warn those who expect a little more from their sushi experience. read more

This was our first visit to Fuyu Sushi and without question it won't be our last. The sushi was phenomenal beyond belief. The fish was served cold and absolutely fresh. The artistry and creativity with theses dishes showed how well the chefs took their time without making us wait too long. Our waiter could've been more friendly with us. He suggested some more sushi that we hadn't tried. In our opinion, this place has raised the bar among many other sushi bars / restaurants. This little spot is a new hidden gem. We've tried a dozen or so sushi spots in Denver over the years and have been lucky enough to find a couple of go-to spots. That said, this new spot will absolutely be joining the go-to list. The sushi itself is great and the ramen was pretty good as well. We tried a handful of things (maguro, hamachi, spicy tuna, yellowtail jalapeno rolls, etc) and all of them were high quality and delicious. I love a good maguro or hamachi but can be a little picky if it doesn't taste like quality fish. Not the case here, the selection was great! Also, if you time it right, they look to have some pretty good happy hour deals. The service and atmosphere were extremely friendly and welcoming and we'll absolutely be back! read more

Had a great meal with my toddler - even on a busy Sunday night they were very accommodating. You can walk up to the sushi bar, fish is fresh and love the hamachi Kama collar. Every table gets a special treat of sesame balls and they are hot and deliciously crispy coming out of the fryer. read more

If you've read my other reviews, you know one of my sushi restaurants changed owners and I was so disappointed. Fuyu Sushi, which is much closer to my house, is a new sushi restaurant that I heard was real good. We decided to give it a try Saturday night. I used to come to this restaurant as well when it was a different name but the owners weren't the most friendly people and I was a regular. However, the minute I pulled into the parking lot, I knew this would be a good experience. The lot was packed!! We were lucky there was a booth open. The place was bustling and both sides were filled with people. The energy was fantastic as was the service. Fiona took our order and checked on us to make sure all was well. She was awesome! Fiona made us laugh! She was so nice! The collar was amazing as was the sashimi though the sashimi was very thin. It should have been thicker. Loved the Cherry Blossom roll! I'm not sure I'd order the mussels again as they were drowning in the mayo. I brought a miso soup and California roll home to my daughter and she loved both. So glad I gave Fuyu Sushi a try. The stench when I first walked in hit me, no I'm not talking any stereotypical stuff; it smelt sour, like the mystery liquids from trash bags.
