You can order by piece (1 or 2 ribs, 1 or 2 slices of brisket, etc) and it's weighed or you can order by pound. If you get pork ribs, try not to get the last piece...there's no meat on it and you're essentially paying for the bone. You'll order from 3 different stations (sides, dessert then meats) I opted to skip the sides to focus on trying the different meats and a dessert. The dessert was the mistake. I got the banana foster by staff recommendation. It didn't have any chunks of banana and too much cinnamon. But the worst thing is getting sick from it. I'd probably come back to try the beef ribs and sides next time I'm in the area. The brisket was one of the best I've ever had. It was tender juicy and not too fat. The pork ribs were very tender except for the end piece which was a little dry. The sausage was OK, nothing special. The two flavors of BBQ sauce (sweet and original) were different but okay.
