    I don't even know where to begin! After a friend recommended Flux, my husband and I planned a date night here and it was PHENOMENAL!! Everything from the service, the drinks, appetizers, entrees, and dessert just kept getting better and better! Although there is a small set menu, the star of the show is the daily specials!! I started with an espresso, followed by a deconstructed pina colada martini-- it was probably the best drink I've ever had! We enjoyed mussels as one of our appetizers and two of the daily specials for dinner which was a seared scallop and gnocchi dish and the other steak. For dessert, I had my first ever PAVLOVA!! It was **chefs kiss** for sure!! My only complaint is that I don't live closer to the restaurant however you are paying for the experience and I wouldn't be able to afford this place on a regular basis! Highly recommend visiting Flux for any up coming celebration or date night!!

    What a treat! Flux rivals any top restaurant in Portland. After a week up and down the coast of Maine, this was our last and best dinner of our trip. The service was exceptional. Our server Kitty was so knowledgeable about the menu, pairings and provided drink samples and expert pairings and suggestions. As soon as we arrived we knew we were getting something special. The selection of local beers on draft and wine was impressive. There is a large amount of daily specials. We tried the beet salad special which was the best I've ever had, local beets prepared a few different ways with a really special blue cheese. Then we had the mussels off the menu which were scrumptious and uniquely prepared. We needed more bread to finish the delicious broth! We then shared the scallops special with a mushroom risotto. So unique and tasty with fresh local ingredients. Ended with the special dessert- lemon blueberry entremet. It was a work of art, and delicious as well. In terms of negatives, hard to name any. The food was so delicious we overate! I could see it being too noisy inside for some people, maybe older folks, but it didn't bother us we enjoyed the lively casual atmosphere. We appreciated not being rushed, the food came out in courses that were well timed. So many places lately seem to bring food too quickly. We can't wait to visit again the next time we are in Maine.

    The beet salad was amazing, the mussels were amazing as well, and the poutine was very good. I also highly recommend the alchemy of love cocktail. Definitely make a reservation for this place because it gets packed but the food is so worth it. We split appetizers and the portions were so generous we didn't even need entrees after and I'm not a light eater. Great ambiance especially if you are near a window. I hope to come back some day and save room for their pavlova or other desserts.

    What an incredible dining experience! The perfect blend of exceptional service, delightful drinks, mouthwatering food, and inviting ambiance makes this restaurant truly remarkable. Every time my daughter visits, we find ourselves drawn back to our new favorite spot. You don't need to travel to Boston or NYC to enjoy a five-star meal--just visit the Flux, and I guarantee you'll fall in love with it just as we have!

    I rarely give 5 stars for a first visit, but this place ticked all the boxes and more ( taste, ambiance, service, overall vibe) and we had a wonderful dining experience. We met my son and his girlfriend on a Saturday night for 7:15 p.m.reservation. We were easily able to get on street parking and later learned there is a small parking lot right there. The place was packed when we arrived (almost always a good sign). My son had been here multiple times before and was impressed and it was the perfect meeting point. Our server, Kitty, was stellar; a balance of cool and casual but ever attentive, professional, and knew all the components of the menu, attributes which are sorely lacking in today's climate ( I say this as a former server and current dining consumer). For starters we ordered the Poutine. This is not your regular, everyday poutine by any stretch. Phenomenal. I could write 10 paragraphs on the technique and preparation, just order it. Maybe enough for 2 if ordering mains, if not, 1 per person. We devoured it so sorry no photo here. For main courses: Fish and chips (again, nice little spin on traditional) Steak Frites (absolutely melt in your mouth, tantalizing) Mushroom stir fry- surprise hit! Full of texture and delicious fusion of flavors. Korean short ribs- a special which was beautifully presented. The meat was moist and perfectly seasoned with a dipping sauce. I didn't figure out until halfway through the meal to make lettuce cups with the meat, veggies, and lettuce leaves provided. Magnificent either way. We paired this with the recommended sake which was complimentary to the dish and silky smooth!!! Amazing! We felt relaxed, comfortable and well taken care of the entire night. I like that they use locally sourced products and have specials which reflect such, that all is made from scratch and that vegetarian and vegan options are available. We plan to return and we would highly recommend.

    We were looking for a spot to celebrate Mother's Day (on Saturday evening) with our in-laws who live in Auburn. We drove up from Kennebunk to visit Flux, as we'd heard about it for awhile now and thought this was the perfect opportunity to try it. I'm so glad we did!! We made a 5pm reservation about 10 days in advance, so we weren't sure what to expect arriving right at 5. Well, there was a short line at the door, and after we were seated the restaurant started to fill up. I'd say it was full by 5:20! That told me we were in for something special, and I was right. Service was superb! It was friendly and accommodating without being overbearing. The food was on par with the service! We each enjoyed unique and interesting dishes... not a bad bite in the bunch! We started with the fiddlehead salad (special), mussels, and fried cauliflower. Every bite was better than the last. I had the pasta w calamari (special) and though i typically opt for fried squid, it was cooked beautifully and very tender. The pasta itself was a homemade egg noodle which was incredible. My husband had the fish and chips and it was the most interesting version we've seen- super tasty too! My in-laws had the fried chicken sandwich and the beef stroganoff special... they were both happy with their choices. It's worth the trip from wherever you may be coming in from - so make a reservation and enjoy a super delicious and unique meal!

    We went to Flux while in the area for parents weekend at Bates. When we arrived, the outside looked like it had been a diner at one point and time. Inside it was bubbling with activity and very inviting. We ordered oysters, a salad and the gluten free poutines to share. The Poutines were AMAZING! For dinner my daughter had the mussels which were wonderful and my husband and I shared the fish and chips. It was gluten free which made me extremely happy as I never find gluten free fried food. It was light and delicious as well! We will definitely be returning to Flux.

    I had a fantastic duck meal with a sparkling moscato. I loved every bite! Crème brûlée for dessert was everything I could have asked for!

    Arguably one of the top restaurants in Maine. Amazing farm-to-table service, ambiance, and great food. Absolute gem.

Between the two of us, we ordered two appetizers, two entrées, and three beverages. Appetizers We started with the Boom Boom Shrimp and the potato skins. The Boom Boom Shrimp was decent--pleasantly sweet with a mild hint of spice--but ultimately unremarkable. The potato skins, however, were excellent and easily the standout item of the meal. They were well prepared, flavorful, and genuinely enjoyable. In fact, they may be my favorite item on the menu. It's also worth noting that potato skins seem surprisingly rare on menus these days, which made them feel like a bit of a novelty. If we were to return, the potato skins would likely be the primary reason. Drinks My wife ordered a strawberry lemonade, which was fine but nothing memorable. I had a Diet Coke and a strawberry daiquiri. The Diet Coke was exactly what you'd expect. The strawberry daiquiri, however, was a disappointment. The portion size was shockingly small--more like a sampler than a full cocktail--despite being priced comparably to daiquiris at similar chain restaurants. At places like Applebee's, you typically receive a generously sized drink served in a goblet or hurricane glass. Here, it came in a small mug that felt disproportionate to the price. That's a choice I wouldn't make again. Entrées For our main courses, my wife ordered the teriyaki chicken with a side of clam chowder, both of which she enjoyed. Unfortunately, my entrée--the baked haddock--was where the meal truly fell apart. This was, without exaggeration, the worst baked haddock I have ever been served. The fish had virtually no flavor beyond severely burnt breadcrumbs. The topping was sparse, lacked butter or seasoning, and tasted as though it had been cooked at far too high a temperature. The result was a dry, rubbery texture that made the dish genuinely inedible. At nearly $20, it felt like a complete waste and significantly detracted from the overall dining experience. Overall Impression While there were a few bright spots--most notably the potato skins--the baked haddock left such a negative impression that it seriously impacts my likelihood of returning. If we do come back at some point, I'll be sticking to the potato skins.

The issues were glaring though. We arrived early for a group reservation of 10 and started at the bar. The service was very slow and we got the sense that the bartender was frustrated that we showed up early with the idea to have a cocktail before our reservation. Bar service continued to be painstakingly slow throughout the night. The restaurant was somehow out of several of their menu options (despite the restaurant not being busy on a weekend day). Not the end of the world, but it left us asking some questions. The major issues really arose when our entree courses were served. They had somehow ran out of french fries, and you could see that in the portion size of the frites in our steak frites (the picture included in our review was our plate -- we had BY FAR the most fries out of those at the table who ordered steak frites). And they ran out of steak - one of the people at our party who ordered steak frites was served a hamburger (which isn't even on the menu). Overall, I thought that we overpaid for the food and if it wasn't for the good company at our dinner - I would have been very frustrated.

I have no issues with my waitress, Brianna or any of the other staff I interacted with. And, while the food certainly sounds interesting on the menu, it doesn't translate to tasty, attractive plates and this needs attention desperately. The menu is very small, all fitting easily on one page. There were no specials. My appetizer was the best thing of the meal, Roasted Cauliflower, with fava cream, roasted almonds, fresno puree, mint oil, and duck crackling. The plating was attractive. I liked the subtly minted fava cream (think hummus), the cauliflower florets tender and sweet from the roasting. But the mint leaves were whole (should have been julienned), the almonds didn't seem particularly roasted, and as for duck cracklings? I forgot they were even there until I reread the menu this morning while writing this review. There were 5 specialty cocktails listed on a card on the table. My Water Street Ol' Fashioned was made with Knob Creek bourbon, Liqueur 43, maple, honey, burnt orange. It wasn't sufficiently chilled. But the flavor was good, it seemed strong enough, and the cherry was of high quality; perhaps Luxardo. The wine list included some unusual selections, including an ice wine from Ontario by the glass, which I had with dessert and enjoyed. My entree was - there's really no other way to put it - a disaster. Braised Lamb: charred eggplant, blistered red pepper, polenta cake, mint gremolata. First impression: what incredibly sloppy plating! Everything piled onto one side of the plate, stray crumbs on the other side. Like somebody tripped but caught themself on the way to delivering it. This was not a cohesive dish. It was a collection of ingredients. The meat lacked flavor (what was it braised in - water?) and was divided into two odd-shaped chunks. The eggplant was chewy and sour, not noticeably charred as described. The greens (pea greens?) were a tangled mass off to one side, uncut and difficult to eat. Even with these flaws it might have been saved by a flavorful sauce to bring it together but there wasn't any. I would have added salt but there was none on the table and I didn't bother to ask. I hoped maybe they could redeem themselves with a good dessert. Sadly this was not to be. Just 4 things on the menu, none of them sounding very interesting. I should have just settled on the Affogato - hard to get this wrong. Instead, and untypically for me I chose the Chocolate Pot de Creme, unimaginatively described "... strawberry jam, vanilla granola." Like chocolate pudding out of a box (or how I remember it, being over 50 years since I've had it). The granola? Literally like they opened a box of cereal and dumped some on top. The jam unmemorable but it added contrasts in sweetness. Some whipped cream and maybe chopped mint would have been welcome additions. They had the audacity to list "Bread & Butter" in their small plates section. Described as "warm bread, lemon chive butter." How unimaginative! And while it is unfortunately getting more common to charge for bread, I believe strongly that table bread should be free. Always. Some good things too. The main dining room and bar are beautiful, with an uncluttered, modern look mixed with country touches like a farm table adorned with some wine bottles and potted plants, a worn oriental rug beneath. Knick-knack shelves on the walls, painted vines on the walls. Mostly soft jazz playing for music. But the long and thin layout is a drawback because no table gets good views, especially on the porch. I could have faced the outside windows with a view of the parking lot or the open windows to the inside, where I sat, where my views were cut off by large plastic plants. Really the best place to sit is at the very attractive bar. Where, by all means if you're staying at the hotel have some drinks and a snack, but I suggest you seek other alternatives for dining.
