This restaurant is "Wai Momi" (waters of pearl) a please near my home when I lived in Hawaii. Endlessly finding treasure, "pearls" every time I come. The flavors are beautiful, surprising and rare (at least in these parts) and very much welcomed. My first visit was to try the food, now it's the service that brings me back. It's a family and they welcome you with open arms. The ever changing specials menu keeps you on your toes and wanting more. It's adventures, exotic and sexy....yes, you heard me, the food is SEXY. This week, I was seconds away from proposing to a miso glazed black cod, before I realized that my or may not be frowned upon. It was silky, sweet and cooked beyond perfection. Flux is the best of the best in south central Maine! The food never disappoints and the customer service is second to NONE! Making reservations is extremely easy to do and the ability to find availability for service is great. My date and I enjoyed the custom made lemonades with fresh fruit purées and a touch of Magic! The restaurant appears to be a classical diner in the outside and a posh restaurant on the inside with some eccentric design. The main course of choice for this visit was the steak and frites for the Mrs and the Prime Ribeye and frites for me. The meal was perfectly seasoned and cooked amazingly. We aren't regulars as Flux because we want flavorful and (usually) spicy food, and That isn't what Flux is - they make high quality pub food. The cocktails are excellent, and if the rest of the menu matched the cocktails, we would be regulars. My Negroni was perfect - delicious and full of flavor, and my wife's lavender lemonade was visually interesting and tasty. We definitely recommend the tempura cauliflower - the batter is extremely light as it should be, not a heavy coating as is too common, and the sweet and spicy gochujang glaze was just the right amount of contrasting flavor and heat. My pan seared swordfish was nicely cooked - would gladly reorder it. And it is worth getting the recommended wine pairing - a crisp and tasty Spanish white. My wife had the haddock tacos and gave one to me A we agreed that the ingredients were high quality but the execution just wasn't what we want - was too heavily breaded and with little spice or salt in the breading or the taco. Our son had the crispy chicken sandwich - the chicken was perfectly fried and moist but as with the haddock tacos the breading was too heavy and relatively flavorless. I enjoyed the fries and thought they were just right, but some people might find them a bit too crispy. Our friends loved the Mere Point oysters and the fish chowder, so those would be great choices if you like seafood. Other friends ordered the mushroom fried rice A we all loved the flavor and texture of so many different mushrooms. As you can see, we had some wonderful beverages and dishes, but some misses, especially when the tab including tip was $275. For that, we want everything to be excellent or exceptional. We are very happy that Flux is successful and is thriving, but it just isn't the place we want to spend our limited dining out budget. read more

Flux is a higher end restaurant tucked away in the small town of Lisbon Falls and located inside what appears to be an old fashioned diner. We do not typically visit Flux because the menu is too adventurous with duck and octopus and carp roe, etc. But we had the opportunity of attending a Mexican pre-fixe dinner and it was fabulous. The kitchen and staff cooperated to make the execution of the four course dinner perfect, with the meals being delivered hot and on a perfect cadence with just the right amount of time for consumption and relaxation. The staff were friendly, helpful, and very professional. The atmosphere is cozy/quaint rather than luxurious, and we felt comfortable there. Back to the food: We started with the best homemade tortillas I have ever had, with just the right amount of salt and a touch of lime, served with excellent salsa. Then we had a chicken soup that had lots of unique flavors. Following were vegetarian tostados with cheese and radishes and pickled onions. There were then the most amazing birria tacos with richly spiced meat, lime, some melted cheese, and a broth to dip it in. Those tacos were fantastic! They had 2 oz drink pairings for each course that were unique and delicious. It was an experience to remember and we will definitely go back to Flux. read more

I think this place just isn't for me. The menu didn't speak to me, really. My kids ordered shirley temples and I was annoyed that they cost $6 each. I'm not sure what the solution to that would have been--they weren't listed on the menu and I don't think they have to be--but it was still off-putting when I realized I could have hired a babysitter for the same amount of money it cost me to take my kids with us, when you factor in the drinks and their kids meals. From the outside it looks like your headed into a diner. When you get inside it's a beautiful restaurant with amazing food and great service . Don't let the menu fool you, "fish and chips" is nothing Ike the plate with a bunch of fried food plopped on top. The presentation was styled balanced and well thought out. The fish was perfectly cooked and the tempura batter was light, delicate and crispy. Our salad was a deconstructed Thai spring roll, and the lettuce took on the role of crispy crunchy fried roll, except it isn't fried, it's just delicate delicious lettuce with a few cashews, some rice noodles and the salad dressing is a dipping sauce reimagined! I don't even know where to begin! After a friend recommended Flux, my husband and I planned a date night here and it was PHENOMENAL!! Everything from the service, the drinks, appetizers, entrees, and dessert just kept getting better and better! Although there is a small set menu, the star of the show is the daily specials!! I started with an espresso, followed by a deconstructed pina colada martini-- it was probably the best drink I've ever had! We enjoyed mussels as one of our appetizers and two of the daily specials for dinner which was a seared scallop and gnocchi dish and the other steak. For dessert, I had my first ever PAVLOVA!! It was **chefs kiss** for sure!! My only complaint is that I don't live closer to the restaurant however you are paying for the experience and I wouldn't be able to afford this place on a regular basis! What a treat! Flux rivals any top restaurant in Portland. After a week up and down the coast of Maine, this was our last and best dinner of our trip. The service was exceptional. Our server Kitty was so knowledgeable about the menu, pairings and provided drink samples and expert pairings and suggestions. As soon as we arrived we knew we were getting something special. The selection of local beers on draft and wine was impressive. There is a large amount of daily specials. We tried the beet salad special which was the best I've ever had, local beets prepared a few different ways with a really special blue cheese. Then we had the mussels off the menu which were scrumptious and uniquely prepared. We needed more bread to finish the delicious broth! We then shared the scallops special with a mushroom risotto. So unique and tasty with fresh local ingredients. Ended with the special dessert- lemon blueberry entremet. It was a work of art, and delicious as well. In terms of negatives, hard to name any. The food was so delicious we overate! I could see it being too noisy inside for some people, maybe older folks, but it didn't bother us we enjoyed the lively casual atmosphere. We appreciated not being rushed, the food came out in courses that were well timed. So many places lately seem to bring food too quickly. Definitely make a reservation for this place because it gets packed but the food is so worth it. I rarely give 5 stars for a first visit, but this place ticked all the boxes and more ( taste, ambiance, service, overall vibe) and we had a wonderful dining experience. We met my son and his girlfriend on a Saturday night for 7:15 p.m.reservation. We were easily able to get on street parking and later learned there is a small parking lot right there. The place was packed when we arrived (almost always a good sign). My son had been here multiple times before and was impressed and it was the perfect meeting point. Our server, Kitty, was stellar; a balance of cool and casual but ever attentive, professional, and knew all the components of the menu, attributes which are sorely lacking in today's climate ( I say this as a former server and current dining consumer). For starters we ordered the Poutine. This is not your regular, everyday poutine by any stretch. Phenomenal. I could write 10 paragraphs on the technique and preparation, just order it. Maybe enough for 2 if ordering mains, if not, 1 per person. We devoured it so sorry no photo here. For main courses: Fish and chips (again, nice little spin on traditional) Steak Frites (absolutely melt in your mouth, tantalizing) Mushroom stir fry- surprise hit! Full of texture and delicious fusion of flavors. Korean short ribs- a special which was beautifully presented. The meat was moist and perfectly seasoned with a dipping sauce. I didn't figure out until halfway through the meal to make lettuce cups with the meat, veggies, and lettuce leaves provided. Magnificent either way. We paired this with the recommended sake which was complimentary to the dish and silky smooth!!! Amazing! We felt relaxed, comfortable and well taken care of the entire night. I like that they use locally sourced products and have specials which reflect such, that all is made from scratch and that vegetarian and vegan options are available. We were looking for a spot to celebrate Mother's Day (on Saturday evening) with our in-laws who live in Auburn. We drove up from Kennebunk to visit Flux, as we'd heard about it for awhile now and thought this was the perfect opportunity to try it. I'm so glad we did!! We made a 5pm reservation about 10 days in advance, so we weren't sure what to expect arriving right at 5. Well, there was a short line at the door, and after we were seated the restaurant started to fill up. I'd say it was full by 5:20! That told me we were in for something special, and I was right. Service was superb! It was friendly and accommodating without being overbearing. The food was on par with the service! We each enjoyed unique and interesting dishes... not a bad bite in the bunch! We started with the fiddlehead salad (special), mussels, and fried cauliflower. Every bite was better than the last. I had the pasta w calamari (special) and though i typically opt for fried squid, it was cooked beautifully and very tender. The pasta itself was a homemade egg noodle which was incredible. My husband had the fish and chips and it was the most interesting version we've seen- super tasty too! My in-laws had the fried chicken sandwich and the beef stroganoff special... they were both happy with their choices. We went to Flux while in the area for parents weekend at Bates. When we arrived, the outside looked like it had been a diner at one point and time. Inside it was bubbling with activity and very inviting. We ordered oysters, a salad and the gluten free poutines to share. The Poutines were AMAZING! For dinner my daughter had the mussels which were wonderful and my husband and I shared the fish and chips. It was gluten free which made me extremely happy as I never find gluten free fried food. We have been going here for several years now -- There are some great standard items on the menu all the time -- Love the crispy chicken sandwich (I ask for it spicy), for example. And they always have good burgers -- Nice way to make it feel approachable to everyone -- It's in Lisbon Falls (the owner is from there and it's wonderful to see that he has invested in his community and it's paying off); and there is always a great mix of locals and food pilgrims. We come for the specials -- They vary quite a bit, so it's always a surprise. Last week we popped in and they served spicy goat! And it was fantastic! You can't get that everywhere. But you never know what they'll have -- sometimes it's homemade octopus ink pasta, or ramen; it's always different. This is my new favorite place in Maine! Across the board it's an easy five stars. The ambiance is perfect. You can dress up for a date or go casual and feel right at home. We ordered the poutine (you must have it!) and the cauliflower appetizer (I want it every day) the burger and the chicken sandwich were so delicious and perfectly cooked. Is it a diner? An upscale restaurant? A family affair? I don't know. The outside facade is diner-esk and you'll walk into a diner meets upscale mashup. On the left you have what appears to be a bar overlooking the server stations with the kitchen in the background. This felt like an underutilized opportunity to bring diners into the experience to engage more with the servers and possibly provide a view of the action. With bar stools present, I believe diners can sit there though the bar itself was being used for equipment overflow. On the right you have your traditional bar. And down the middle are your tables. In the back, you have a large "window" that is an open wall between the dining area and what appears to be a storage area for the restaurant. It seems out of place though I'm hopeful the owners have big plans to use that space to pull diners into the action. Service was okay - the server was friendly but not overly knowledgeable of the menu items. The menu contains items that the average diner is going to have to Google or ask for clarification. With a menu that appears high scale, I would expect the server to know more about the options for the evening such as the vegetables on the skewer. The food was good - and right for the price. If I lived in town, I could see it being a place to hang at the bar for a beer and food. Not living in town, it wasn't so amazing that I would return just for the food. We've been here twice and tried more things. The burger and fried chicken sandwiches are excellent and Flux makes the rolls they're served on. Fries are very good. The second time we went, I got the Far East salad for $17 with no protein (which would have been $7+ extra depending on the choice). I thought the description of lettuce, rice noodles, carrots, cucumber and spicy dressing sounded good enough even though the price seemed high. What I got was a tall pile of lettuce already dressed in a large amount of spicy dressing. There weren't many noodles, there was about 4 pieces of shredded carrot and cashews around the outside of the mound of lettuce. Sunflower sprouts and Asian micro herbs are also listed in this salad but there were very few of those. It was what I expected to add variety to this salad but really it was about 85% lettuce.
