It was so nice, we came back twice! Well, nice is not the word for it...quality delicious food is more accurate. The restaurant looks much more like a specialty goods store from the outside than a restaurant. There is a small outside seating area as well as some seating inside, but the majority of the space is occupied by rows of canned, jarred, and packaged goodies. Most notably, there are many legs of iberico ham hanging from the ceiling and at least one leg on the shaving apparatus at all time. The place is a bit pricier than the more touristy restaurants/bars around, but not by much. The quality more than compensates for the couple euros more in price. They do not have a set lunch menu, as is common at other places, so this may also make the food seem a bit pricier by comparison.
We enjoyed their luscious salmorejo on both visits. Blended to a velvety texture, it was the best version of the Andalusian cold tomato soup we had at any meal. And yes, we had it at every meal in Sevilla. Flores' version was silky, with the perfect balance of oil, vinegar, tomato, and bread. Flores also adds an extra fine chop of iberico ham on top of the soup as well as a couple diced quail eggs, as is traditional to the dish. One must try the house iberico ham - it melts in your mouth in a velvety slice of salty umami. Because the ham is a Flores specialty (and you can buy everything you eat from their store), they incorporated it into many dishes. I had a tapa sized goose burger with a slice of the spanish ham on top. Deliciously gamey! Another memorable dish was their spaghetti bolognese with diced iberico in the sauce. Genius! The ham does a better job than bacon in incorporating salty umami flavor into the sauce. It adds depth even bacon cannot achieve.
The wait staff is very nice, though perhaps not the most attentive. We waited a bit for our second glasses of wine, as the place got a bit busier at dinner. However, they try their best to accommodate tourists with a very limited knowledge of Spanish and do provide English as well as French menus. read more
