Squcho's Nachos is quietly throwing down some of the best food in Eugene, and their smash burgers are pure gold. I went with the Avocado Bacon Burger and doubled down with an extra patty--loaded with two quarter-pound smashed patties, crispy bacon, melted Swiss, fresh avocado, burger sauce, and that killer raspberry chipotle BBQ sauce. The sear and seasoning on the beef were absolute perfection, and that sweet, smoky BBQ kick takes it to another level. Messy, juicy, and insanely satisfying. Do not sleep on this place. Hands down one of the best food trucks/dining options in town. I surprised my dad with the soul bowl, and hoped he would like it. He devoured the whole thing (minus a bite, which I had and it was amazing). He couldn't stop saying how good everything in it was. The chicken sandwich with pepa chicken was delicious. My one complaint? Too much bread. I love me some carbs and bread, but the chicken was so so good that the bread just didn't match the awesomeness of the chicken. I got through half the sandwich minus a couple bites and was stuffed. I have a healthy appetite, and couldn't even think of eating the second half (right now). The Mac was delicious too. The crew was super friendly, and they obviously have a great relationship with their regulars, but they were kind and energetic and happy to see every single person that ordered when I was there. I will absolutely be back, and can't wait to try the other things they have!

It's a fairly plain looking truck and the options were straight forward. I got the brisket mac and cheese. The gentleman running the place was the only one working it so we were prepared to have a bit of a wait, it cannot be easy to run a whole kitchen all by yourself. He was very friendly and helpful. We didn't have to wait nearly as long as you would think, definitely quicker than a sit down restaurant. Thankful that he wrapped my meal in foil within the recyclable cardboard container so I didn't have to worry about leakage or the thing falling apart. I loved this. The mac was creamy and flavorful, the brisket was melt in your mouth and so good. I also appreciated that he didn't drown the whole thing in BBQ sauce (too many supposedly good BBQ places do). Couple things that count against this place - price can be a bit high for people but you really get two meals for it. A somewhat unclear operating schedule. And for the mac, I thought, at first, it would have been nice to have the brisket broken up into the mac. But considering how easily it comes apart, it isn't a huge deal. Try this place!

I ordered the Tacos and a Pina Jarrito. Turns out they did not have Pina... so got Tamarindo instead. After a few minutes, they let me know my tacos were ready, and I went and got them. Good tacos... lots of cheese, fair amount of meat, and fried up in some of the drippings. The consomme was ok... very lacking in salt (and since I am on a low sodium diet, I guess that is good? lol! ) Beans and rice were good also. I would order again.
