Fairchild is easily one of the best restaurants in Madison and maintains a cozy vibe inside. Their food is unique and delicious (across apps, entrees, and pastas), there's a good drink list (N/A and wine/beer/cocktails), and the service is perfect. We never had to wait for the server, our water was regularly filled, and the food was brought out at a good interval. All around great experience. read more

Three of us had dinner at Fairchild last night. We started with cocktails, which were very good. I had a Rhunette, which is vodka, rhubard, moscato and mint. I quickly realized that the two sticks were in the drink in order to muddle the mint, and it made a big difference. Excellent concoction! We followed up with a bottle of Syrah, which was quite lively. It's unfortunate, IMHO, that the wine list skews strongly toward expensive wines. No $35, or $45 or $50 bottles here. Gulp). I ordered the chicken after the server explained many and complicated steps to creating what looked like slices off of a roll of chicken. It was an interesting shape and the flavor was good. You know, chicken. Some kind of crispy potato cubes were served with the chicken, and they were particularly tasty and crunchy. We finished by sharing a wonderful piece of rhubard cake. The server was polite, friendly, knowledgeable and there when we needed him. The ambiance is puzzling. It's beautifully executed, but reminds me more of a pub than a restaurant. Remarkably, and sadly, there isn't a single piece of art on the walls, so the atmosphere, despite all the wood, felt rather neutral and lacking warmth. I remember that, in its day, Charlie Trotter's lacked art, and the room suffered miserably because of it; but at least the room was treated with materials that deaden sound, resulting in a wonderfully calm and elegant atmosphere. Would I return? Most certainly yes. read more

MUST TRY FRIED OLIVES! My husband I went to Fairchild the second night it opened and it was half full on a Tuesday night. The bar is very cozy and welcoming with dark liquor bottles lit up on the bar back. The dinning room was bare bones, they may be waiting on some art to arrive but other than that it has simple tables chairs. Great cocktails, I must have been inspired by the bar bc I got the aspen glow which was a dark colored spin on a margarita. For apps we got the deviled eggs and fried olives, eggs were good but I highly recommend the olives! The entrees were decent but very small, and I just moved from nyc so I am used to small dishes but my husbands $42 ribeye was smaller than a deck of cards. I got the cod which was quite good, very buttery in a good way and the Swiss chard was incredible. I would love to go back to try their pastas some time because they look delicious. read more

This place is an amazing find. Everything was delicious, from the small bites (deviled egg, shrimp croquettes and sturgeon mousse) to the entrees (rainbow trout, agnolotti and tagliatelle carbonara). We tried this restaurant after watching a Wisconsin Foodie episode. The food and service was excellent. Had the deviled eggs, oysters and beets with goat cheese for appetizers; simply marvelous. Service staff was attentive and polite, but the food is over-rated. The menu is limited and although I tried a variety of items on the list, the flavors and ingredient components all seemed to be playing separately. They try to plate it with flowers and decorative elements but the main palate and cohesive center of the plate is weak and dismissed. The chairs are very uncomfortable and hard to sit on it for more than 30 minutes. Service tends to get slower and slower and you are waiting in the uncomfortable chairs in discomfort followed by disappointing main dishes. I don't think I would recommend the restaurant to others. read more

Came to Fairchild for the first time last night and enjoyed every single bite! Chef Itaru definitely puts careful consideration into each dish and pairing. The foie gras was exceptional and something I normally wouldn't considering ordering. Also the night's entrees (halibut and pork loin) were off the charts tasty. Absolutely the best meal I've had in years. Every course so beautifully balanced, each bite had me wishing I had more. I didn't want the dinner to end. I can't stop thinking about the flavors, I can't wait to go back...The decor is warm and comfortable and very welcoming. Fresh flowers everywhere were a lovely added touch... Our server Nancy is simply the most amazing person and gave us perfect recommendations for wine and dinner, she is so knowledgeable and made our evening one we will cherish forever. The bartender Matt was wonderful. The whole team is above and beyond, I cannot say enough good things to really give Fairchild justice...You have to experience it for yourself to understand how incredible it is! We've ordered take-out from here many times and this place is incredible. I just scarfed down the crudo, pork, and a side of asparagus - so good! And I think Fairchild compares with some of the best Michelin starred restaurants we went to in San Francisco. Food impressed two snobby chicagoans and staff were incredibly accommodating with our unruly toddler. They opened up their side patio so our kid could run around while we ate, which was so gracious of them. Perfectly executed Old Fashioned, great wine recommendation from our server, and the food... Take away menu is lovely. We enjoyed the cassoulet, sprouts, both pastas, and risotto and a wonderful bottle of zin. Full disclosure, it all reheats nicely which is a must when the plan is to heat everything that comes into the house before eating for Covid-19. Really hope this restaurant survives social distancing. We enjoyed the food more than L'etoile and everything was reheated. Would expect it's even better fresh. 12 days later: another awesome meal as take-out. Snapper with cauliflower and delicious green sauce (yum!), pasta with meatballs and red sauce (kiddo's fav, very good), the butternut squash pasta (so good again), potatoes, and brussel sprouts (very nice), and zin again was lovely. One of the best meals we have had in Madison. All the food was really fantastic. My wife had a pasta Bolognese special and I had cassoulet and they were both delicious and hearty without being too much. We had the beets appetizer and it was unique, earthy and really wonderful. We also did dessert with a wine pairing and that was great too. The owners and servers were warm and friendly and overall there is just a great vibe. This place is a gem. read more

We stopped into Fairchild last night - no reservation and they welcomed us in. There were only two other tables full and a couple at the bar. We felt very safe with the distance of the tables. Our servers were beyond helpful, knowledgeable, and spot on with service. Removing empty dishes and replacing silverware at each course. Drinks and food flowed seamlessly between courses as well. Now to the food! We tried all 3 snacks on the menu, 2 appetizers, 1 entree and 2 desserts. Every single thing we ate was absolutely delicious and well thought out. It was one of our best meals of 2020. The goat cheese pastry puffs are an amazing full flavor bite - forgive me I cannot recall the name. The butternut squash soup was to die for with the most perfect diced chunks of butternut and candied nut. The desserts were the fireworks at end of meal. Light crispy apple strudel was one of the best apple desserts I've ever had. The squash pie with whipped cream was also light but full of flavor. Oh and the cocktails! My husband and I tried 3 different cocktails and each was perfectly balanced spirit to sweet to herbaceous . Food was mostly very good, except my snapper was a great disappointment. Appetizer and side portions very, very small. Cocktails excellent. Our family of 4 went to celebrate a special occasion, and let them know that in advance (they ask on the reservation form). We spent well over $300 and didn't get so much as a candle in either of the desserts we ordered. For the money, I think there are better options. read more

We ordered takeout due to the pandemic. The servings were generous and the food was consistently top-notch. We are relatively new to Madison but, with the exception of L'etoile, have been relatively unimpressed by the diversity and vibrancy of the food. Fairchild was impressive. The duck was cooked well, the risotto was rich and flavorful and the beet salad was worth savoring. The food managed to be creative and different, despite the format. The food here is fantastic. Chef Itaru (ex-L'Etoile) is incredibly talented and clearly has front of house staff who are equally skilled and dedicated. We had very high expectations for the food and were not disappointed! For the 3 of us we ate the braised bacon snack, heirloom tomato gazpacho, boar with coconut milk and lemongrass, linguine with clams, lamb with corn and green beans. The boar appetizer was phenomenal - the flavor balance of lemongrass, coconut milk and ground boar with a rice crisp was like no other dish I've eaten anywhere. The lamb (for 2) was cooked exactly right (medium rare) and incredibly tender - it's some of the best lamb I've eaten. Basically a chargrilled extra thick lamb loin chop thoughtfully served cut from the bone in slices. However the real star of the lamb meal were the sides - we chose beans with sofrito and dehydrated olives and corn. Ok the beans were excellent and the olives were an excellent salty touch (and I don't eat olives!), but the corn! If I say it was creamed corn it does not do it justice - it was the most decadent serving of corn I have ever eaten. Fresh sweet corn in a creamy sauce with hints of nutmeg and black pepper with a dollop of marscapone. Don't think about the calories - I'm sure there are sinful amounts of cream and butter involved. We ordered a second dish of it because it was incredibly unseemly to actually fight over the last remnants of the sauce left in the bowl. We also ate the Shishito peppers in smoky soy sauce - again a side dish that lets the vegetable be the star. Dessert was the coriander beignets with chocolate ganache, raspberries and jalapeños. Sounds weird but is actually the perfect dessert for people who don't like super sweet desserts. Again the flavors were really well balanced and complementary. Love the soundtrack and the ambience ( even with reduced capacity due to COVID). Great wine list and a bartender who is able to mix up mocktails (for our birthday teen). Very friendly staff. Fairchild deserves to be a really successful - great chef, high quality food, great staff (esp. Marc Antoine!). We thought Fairchild was very well priced for the high quality food and service and we look forward to many more visits! read more
