Stopped in for brunch this morning with my aunt. We both opted for a cup of coffee to start, which was just kinda average (but you don't go to a bar for the coffee anyway). I had the breakfast burrito sans the tortilla and it was delicious. Fluffy scrambled egg, sausage, caramelized onions, white bbq sauce, a maple glaze, cheese and gravy with crispy breakfast potatoes. It was full of flavor and the perfect mix of salty and sweet. My aunt had the chicken and waffles and although it looked good, we've had better. The waffle was really soggy and the chicken didn't have enough coating but was perfectly tender and just salty enough. My friend and I have come here many times since moving to Arizona. They have a great happy hour which is a great deal. This place is always busy when we come, but we never have to wait long for a table. The servers are really welcoming and our drinks and good always comes out fresh and quickly. We always get the chili cauliflower bites because they are on the happy hour menu. They are some of the best cauliflower bites we've had. The food was subpar, at best. The place is filthy....the booths are disgusting all around the restaurant. My kids didn't even want to sit in them! Service was the best part, and that was not great by any means. It was slow, and inattentive....and there were only 3 other tables in the entire place. Our apps came before our beers! Came in with my friend for her birthday brunch -- she got a free birthday shot and the bottomless mimosas were delicious. We both got the recovery burger and it was honestly probably the best burger I've ever had-that pepper jam is amazing. The bartenders were great and there was live music on the patio. Stopped in on a Saturday afternoon to get some food and catch the 2nd half of ND game. Hubby ordered the Rogue Hazelnut Brown Ale and a shot of Jameson. The shot was a larger than usual pour and the server asked for it to be served chilled for him which he loved! Julie took great care of us today! She was quick to change our TV to the game we had requested, and was quick to greet us, as well. We ordered the spinach artichoke dip to start. It was thick and creamy more like a cheese ball or schmear than liquid dip. It was delicious spooning it on to the pita pieces which were grilled and added a smoky flavor. Hubby ordered the whiskey burger with garlic fries. He ordered 2 shots of Jameson during our meal and both were chilled... which is something that he'd never considered before. They were a very strong pour, and super smooth. He really enjoyed the Rogue Hazelnut Brown Ale, which is a beer that he'd never had from Rogue Brewery before. Review of burger from hubby: The Whiskey Burger was incredibly pleasant; the bun was a great brioche, well-buttered and toasted, and the burger was cooked to a perfect medium-rare. The sauce and jalapeño accented the flavor of the burger very well, I was only slightly disappointed by the bacon, which was more crispy than my usual liking. I upgraded the fries to the garlic fries, which I now feel are a must-have (just make sure if you're with a significant other, they have some, too. You don't want to be the only one with garlic breath). --- I ordered the spinach berry salad with no cheese and dressing on side. It came tossed in the dressing but it was fine. It wasn't super soggy like most salads when it's tossed in dressing. The greens and fruit were fresh and the light white balsamic vinaigrette was the perfect compliment to the flavors of the salad. Our server Julie was spectacular. She was able to get the ND game on the TV that was right in front of our booth, and she was super friendly and attentive. Great service, great food, great atmosphere. The music is loud but it's great to see live music and the house music kept the vibe going. This was our first time here and we enjoyed it. The best thing about this location is the people! Today, I had the Nashville hot sliders, sweet chili cauliflower, and spinach artichoke dip. On a cold day even inside, the best thing was the hottest: spinach artichoke dip followed by the cauliflower. I love downtown Gilbert, of which Dierks is a fixture! If you want country music, a fun place with lots of ppl and a great bar, this is the place for you. Recommend you make reservation as this place it packed. It turns into a club of sort after 10pm or so. We arrived around 8pm and waited about 15mins for a table. We headed to the bar for a shot and then we were already texted for our table. We got the booth against the window was was able to eat, drink and enjoy the band on the stage. Definitely a fun crowd. Our server was terrific. Really getting 3 stars for ambiance and the hostess. She was very genuine, cheerful and helpful. Me and especially my Grandfather, were blown away. Make no mistake, the place is made to look cool and it does this. It was clean and had good energy. No expense was spared when building that I'm guessing! After that, i would just say "meh" but he likes the place so we go. Food looked a little careless in presentation but wasn't awful. Sandwiches and sliders looked almost crushed... Our waitress, Kate, left something to be desired. Felt almost like she was annoyed to have us as guests. If I had to describe her, she was almost like a pissed-off robot! Really fun spot. We went on a Friday night around 7:30pm and were seated right away. I got the Riser Refresher cocktail and their peppermint espresso martini holiday drink. We shared fried pickles and cheese curds. Everything was good. Ambiance was fun and lively, live music was good too. Service was fast and attentive. I would definitely come back. Oh my gosh! Our friends called us to meet them at Dietks. They neglected to tell us which one and we ended up at the one in Gilbert, this was the wrong one. It was the wrong one because they were at the one in Scottsdale. Gilbert was off the hook fun! And the crowd was a mix of young and old. From what our friends told us, Scottsdale was mostly young. Now I'm not a granny, yet, but I do like to have fun. This place was hopping with great music, superior service and great drinks. I kinda talked my non-country fan broesph into visiting. Thankfully on the early hours of Friday the 13th there was a live band playing classic country songs. I observed the style of dance - country swing, no couple / pattern dancing, or line dancing. I thought about asking a girl to dance, but couldn't identify someone that wasn't with a fella and not start a bar fight. The service at the bar was competent and nice. The set up and decor was a glorified country bar - like Roadhouse meets Nashville. At any rate, we enjoyed our time there. Came here for their Thursday night Christmas party this past week for the first time. I'd read about this place and a couple friends had recommended it. The dance floor is huge and the DJ was playing music from the stage. It's a really great setup. When there are line dances (they played maybe 3-4 for the two hours I was there), about half the floor was used for dancing, but whenever they played any other music, couples went onto the floor for swing. The music was more than just country so which encouraged dancing that wasn't just partner dancing. A lot more swing dancing/club vibes than simply country bar line dancing and swing, but overall a good experience. I came with my friend, but definitely would've been cool to gather a group. There were a number of different groups of friends who came out and it makes for easier dancing I think! read more

We were excited to try this place due to the outdoor area. We enjoyed the live acoustic singer as well as the cozy area. Had our food in a good time and it was delicious! Great line dance lesson. The instructor did a great job. Good atmosphere. Great service at the bar. This is not a line dance bar it is a partner dancing bar. Lots of country swing. Ratio of partner dancing to line dancing is about 5:1 maybe 4:1 if you're lucky. If you are coming to line dance don't waste your time. Mostly partner dancing. I was told by the DJ on Facebook that there was line dancing (which is true) but was not told it was more country swing with a little bit of line dancing. That's a bit deceiving and disappointing. Then when I tried to request line dance songs, I was told my requests would be played eventually even though as far as I saw I was the first person to put In requests. Phoenix line dancing bar scene is pretty disappointing overall. This is a nice dinner place and great if you love to partner dance or just hang out at a bar and listen to country music. read more

we stopped in on Labor Day to hear some music. The artist playing was very good but the bar service was extremely poor. The bartender must have walked by us a dozen times and totally ignored us. She didn't offer any water, no napkins and no straw and it took forever to get my bill. we ended up going to OHSO down the street and had a blast. I don't like country music but I ended up here while exploring downtown Gilbert. I realized when I walked in this is really more of a country music venue and I was ready to walk right out, but we decided to stay for a drink. Right around 10:30PM everything changed. They started to remove all the tables and chairs near the stage area and turned it into a dance floor. The music changed as well from country to a mix of rock and even dance music.
