For anyone unfamiliar with it, soondae (순대) is a traditional Korean blood sausage made by stuffing pork or beef intestines with a mixture of blood, glass noodles, rice or starch, and seasonings. It's one of Korea's most popular street foods and is typically enjoyed with salt or a dipping sauce. One thing to know before you go: this restaurant specializes in soup-based dishes. Every entrée revolves around soup, including the bulgogi. I had never seen bulgogi served in a broth before, so it was a pleasant surprise for both my boyfriend and me. Most of the soups also included clear glass noodles and came in a wide variety of combinations, so there were plenty of options to choose from. One detail I really appreciated was their takeout packaging. If you have leftovers, they use a professional heat-sealing machine that applies a thin plastic seal over the container before the lid goes on. It's a thoughtful touch that keeps the soup leak-proof and makes transporting leftovers much easier.
