Probably because most places you order a medium-rare you actually get a medium. Not here. I'd go medium on a return visit. I like they don't overseason the burger with too much salt like a lot of other places. Eaters with palates desensitized to salt due to a lot of fast food/burger eating may find the need to add salt to satisfy their salt craving. The burger sauce is also served on the side and is a bit milder, and more homemade tasting compared to your average burger sauces. This is great because the meat is so good you really don't want to overshadow it with salty seasoning and overpowering sauces. If you're going to dump a bunch of salt and sauce on it, just go to In-n-Out. They also have sandwiches, tenders and chili. If you think about it, a butcher shop deciding to serve cooked food is taking a risk. If the food isn't that great it can affect their meat business. The shop atmosphere is very upscale with high prices to match it like the rest of Rancharra Village. Very limited indoor bar dining and some tables outside. Not sure if the really high prices for the meats and seafoods in the case are worth it, but the saying "you get what you pay for" at least applies to the burgers here. My only suggestion is take a sharpie and scribble the cook temp (medium, medium-rare, etc) on the paper in the burger basket so groups don't get their burgers mixed up. They verbally pointed it out but it's easy to forget by the time you get back to your table with 3, 4, or 6 burgers. Fry basket is a great value, easily enough for 2 people and probably some of the best thick cut fries I've ever tasted with sort of a very light seasoned crispy panko outer texture to them.
