DeFazio's has exploded in popularity in recent years because of rave reviews from pizza purists. It's critically acclaimed as not only one of the premier pizzerias in the Cap District, but some (me) say it's a top ranker across the country. And that ranking is well deserved. You get a strong familial feel walking into DeFazio's. If you're lucky enough to meet the Boss himself (he will actually be wearing a shirt that says "Boss"), he will give you a history lesson on the pizzeria, his family, and the state of pizz-ology Nationwide. He proudly proclaims that he is still The Sauce Guy around these parts because he has to keep up the quality control. There's something special about eating at a restaurant where the owner cares that much about the product, and they want you to as well. I encourage you to take the plunge and order the General Tso's pizza. It sounds insane, I know. But if you grew up eating this stuff, it will take you back to a time where you were traversing a mall food court and eating free samples (funny enough, that was the inspiration for this pizza). A lot of chicken-based pizzas will have red sauce as a base, but this is actually replaced with the Tso's special blend which has a beautiful sweet-heat to it. If you're coming here for the first time, it's nice to also balance a pizza like that out with a classic. Maybe a cheese or something similar. That way you can try out the red sauce and cheese in its purest form. I had the pleasure of walking through a cheese packing session that was going on in the restaurant, so I got to see that raw mozz up close, maybe 20 pounds of it. At that moment, I felt as though I was approaching enlightenment. When fully melted on that 'za, this cheese has the ideal mix of density and squish. DeFazio's has a special place in my heart. We were visiting a student at RPI and walked to DeFazio's pizza shop to go sit for a slice. It came highly recommended. It was Saturday night a little before 6:00. We waited five minutes to speak to someone. When we asked to be seated they said it would be 45-60 min to get a pizza if we ate in. We said we would get take out pizza instead and the pick up time was 8:00pm! Two hours! It took 25 more minutes to place our take out order at the counter because of phone calls and online orders (and only one register). Sadly, I can't say it was worth the wait. Honestly very impressed. I'm from Queens/Long Island and accepted that I'd have to come to terms with the loss of good pizza when moving to Troy BUT when I found DeFazios I was shocked. I came to this place once when I needed a fast dinner and a surprise for my sweet-toothed husband who is allergic to nuts. Do you know how they made sure there were no nuts in their cake? The person at the counter walked out, found Gigi and asked if her recipe included any nuts, - I gather she lives in the same building. That is NUTS! But yes, my husband was super happy, the pizza is awesome, the cheesecake is heavenly, and it just makes me feel so good every time that it is a nice meal that's cooked by a family. We were in the neighborhood.... Honest. We were a bit hungry, too. DeFazio's, one of the region's premiere pizza parlors was only a few blocks away. I haven't been to this original location on 4th St. in Troy for a few years. The family operation is nearly 100 years old. Remarkably, it's very much as I remember it. A tiny place with three tables. Some of the seating looks like repurposed church pews. The youthful staff, friendly as always. They were running into some delays as orders came pouring in just before dinnertime. They'd have to check to see if they could fit our order for a big pizza with pepperoni, mushrooms, onions and peppers. They squeezed us in! Since the wait would be between 20-30 minutes we kept ourselves busy by checking out the desserts in the self serve refrigerator. I picked out a slice of "hangover" (alcohol) cake and I devoured it before our meal arrived. It was so delicious and naughty fun to eat our dessert before the meal. The pizza was fantastic when it arrived. I prefer crisp crusts-- this one was not-- but it was awesome just the same. My friend and I were so hungry that we consumed half of the pie before I realized that we hadn't photographed our delicious pizza. The remaining half was boxed and taken home to be enjoyed for a couple more days. The staff was so ready. They came to our table with the box and we settled up our bill. A lot to be said for tradition and quality. I've also visited DeFazio's in Albany, but I have yet to visit the relatively new restaurant up the block. Had my wedding rehearsal here and WOW. Elizabeth DeFazio is a saint of a coordinator, that answered emails promptly and made the entire process simple/pain-less. We even created a customized menu, as I had previously been sent the 2025 menu. The day of I was able to decorate the room and ran into the cook Tony, whose friendly and helpful, plus extremely talented. The night of dinner, we had a buffet with roasted potatoes, sausuage/peppers, chicken parm, pizza and pasta. Guests couldn't stop eating, with most going up to the buffet three times! I am unfamiliar with the Troy area, however I will travel when I'm told by many what a gem this establishment is. It is family owned and generational. My only mistake in my haste was not calling in or going online to place my order in advance. No matter, as I am happy to wait for delicious wood fire pizza made to order any day of the week. On this visit, I stopped in their local neighborhood just to try a large regular pie as well as a Fra Diavlo pie. Well, needless to say I was loving their cheese pie which was so simplistic yet made with wholesome ingredients and homemade sauce. I have to admit that I was inspired to come here by the Dave Portnoy review, and it was definitely worth the drive. I ordered a fresh mozzarella pizza. The crust was crispy and left flour on my hands, as good crust should. The sauce was smooth perfection. The cheese slid right off of the pizza, but was delicious. The service was good, I received the pizza at a normal time. My only problem with the ambience was the size of the restaurant and the amount of seating. The one person bathroom (closet conversion) didn't have a working light. You have to use the bathroom and find the soap and wash your hands in the pitch black. On my way back from snowboarding I always try to make a pit stop to grab some grub and so I had to pull up to DeFazio's Pizza! Let me tell you.. Their Pizza is so delicious. Seriously..
