Da Nerbone is a classic joint to stop by in Florence. Located inside the Mercato Centrale, it's been around since 1872 so they must be doing something right. We stopped by for lunch and there was a huge line already. Don't worry because the line moves quickly. Make sure someone grabs the limited amount of seating while you order the food. I ordered the roast beef sandwich, as they had run out of the porchetta. The roast beef was slow cooked and thinly sliced. The meat was tender and the juices from the meat soaked the bread. The bread was crispy and fresh. You could tell the bread is freshly baked every day. I'm usually not a fan of tripe, but Italy seriously made me reconsider my decision. My mother ordered the tripe sandwich and it looked absolutely delicious. From what I understand, they are known for the tripe sandwich so I would suggest you try it. Get the TRIPE! I went here twice while I was in Florence for 3 days since I stayed right around the corner. It is tucked away in the corner of the markets on the main floor not upstairs. You'll walk by all the butcher stands and grocery stands before you find the hidden gem. Can't say I've ever had a tripe sandwich. First time we got there around 9 am and I was expecting a long line but there was only a handful of people. I was amazed by the tender texture of the tripe, the sauces and kick, which go very well with the crunchiness of the bread. Everything just worked. Got it a 2nd time before we were leaving. Yelp says they open at 7 AM. It was 8 and the lights were still off and they were just starting to get settled. There was already a line waiting for them to open. They definitely take their time here and don't care about anyone. They'll keep talking to their friends while there is a line of people. The menu shows multiple things but they basically sell stomach (tripe) or meat? Just go with the stomach, you won't regret it. Just don't expect great customer service. We had the boiled beef sandwich and the lampredotto sandwich.The bread wasn't as fresh the second time we went, but overall the food were delicious. The sandwiches were simple but so tasty! It was very affordable too. The sandwiches are served in the morning, and they start serving more lunch dishes around noon. There was a line every time we went, but it moved pretty fast. What can I say about this amazing little stand inside the Central Market, it is simply the best. I've been coming here to eat a quick meal since 2005 and I am never disappointed. The service is friendly and fast, even with the long lines that start rounding the corner if you arrive past 1pm. If you come to eat here with another person, have someone stand in line and the other go scope out the menu, that way you already know what you want to order before you get to the register. It will help you speed things up. Each day, they switch up the menu, so it's never boring even if you feel like returning the very next day. Things that I love to order when they have it in season: Pasta al ragù (don't expect a very heavy red meat sauce, it's more of a simple meat sauce no tomatoes), Polpettone (large sliced meatballs in a red sauce), Tacchino ripieno (stuffed turkey with a nice olive oil and rosemary sauce), Carciofi sott'olio (artichokes in an olive oil sauce) and we can't forget their various sandwiches. They serve the sandwiches even before they start lunch, lunch usually begins around noon, but you can always order a lampredotto sandwich or a boiled meat sandwich on a nice toasty bun. The prices for the primi (first course) on average are around €4-5 and the secondi (second course, usually meat) are around €6-7. But when I see the same queue every time I pass it by including non-meal times of the day, I get in line to find out what's good enough to warrant such patience. This happened at da Nerbone. I noted thelongline on my first tour of the Central Market (Mercato Centrale). But after seeing queues at da Nerbone every time I went by over the next few days, I decided I needed to find out what's all this about? da Nerbone offers quality food with a range of offerings. But the people in line are intent on only one outstanding item: boiled beef sandwiches (i.e. braised brisket). And having had two of them on separate occasions, I can vouch for the fact that the wait in line was worth it. Getting a sandwich: Nerbone's food stall is located on the outer perimeter of the indoor market close to one corner (North East?). You first get in line at the cash register on the left. You ask for a "boiled beef sandwich" (they offer a roasted beef sandwich, which is tasty but not nearly as good as the braised brisket/boiled beef sandwich). The cost is Euro 3.50. You are given a receipt which you take to the sandwich line and wait. At the front of the line,, give your ticket to the man slicing the beef. The beef will be placed in a sliced bun with two condiments, a green sauce and a red sauce. The red sauce contains a not very hot pepper. The green sauce may be simply parsley based. If you don't want one or both, indicate your preference or you will get both (hand signals work well). No beverages are sold at the Nerbone stall, You will have to go to one of the nearby stalls for that. Grab a seat at tables across the walkway and enjoy a very tasty sandwich. read more

Great tasting sandwiches with a green sauce and made better if you make it spicy. Eat this sandwich upstairs for a better experience. I was excited to try this place when I first visited Florence. We ordered the tripe sandwich and boiled beef at 4 Euros each. You have to order and pay first at the counter, but this was very unclear (no signs). Worst of all, the old man who served us was very rude to the Asian tourists yelling at them to "speak up!" He looked in my direction so I said "one lamprodetto and.." to which he scolded me for not being patient and spoke a flurry of Italian, obviously talking badly about us. How the hell was I supposed to know how this crappy system works? The sandwiches were okay, but this sandwich nazi left a very bad taste in my mouth. The bread was a bit stale. There are few perfect sandwiches in this worldbut this is certainly one of them. And like the few examples of perfection, it shows itself in its simplicity. This cart is busy at the central market usually having a small line. It's worth checking out because it's relatively cheap and gives you authentic florence taste through sandwiches and pasta. The roast beef sandwhich is ok. Not much besides a big bun and a little roast beef with juice in center. The tripe (cow stomach) is ok, very chewy like a stew. Wasn't impressed. The lampredotto sandwhich is the real Florence street food with a certain section of cow stomach with green sauce and red sauce (red sauce is spicy). This place is a little tricky to find. It's located inside a vast market on the first floor. It's in a corner adjacent to a wall. When ordering the food, you first buy a ticket from one part of the counter and then give it to the guy carving the sandwiches. So keep that in mind. We didn't get it right but the line wasn't that long and they were very accommodating. We ordered a sandwich and as simple as it seems (a boiled beef sandwich) the combination of the carved beef along with the sauces make for some good eats. The sauces really make the sandwich. Da Nerbone is located inside Mercado Central on the first floor where the produce and meats are. The line can get very long. You pay for your food first and then bring your receipt to another line. Da Nerbone - even making tripe appealing to the masses. And that's one of the dishes I didn't hesitate to get at this gem inside the Mercato Centrale in Florence. The line speaks for itself - it's disproportionately longer than any other stand inside the Mercato. Pastas, risottos, and paninos form the main basis for Nerbone's menu, and the simplicity of their menu gives way to the thoughtful complexity of the taste in their dishes. Whatever lack of calories I suffered from earlier on in my trip were quickly cancelled at Da Nerbone - I ordered pasta matriciana, tripa flourentina, and their renowned panino bollito: - The pasta noodles were al dente...the sauce was flavorful, thick, and had the right balance of sweetness and tang. Excellent - The tripa florentina (as I eluded to in my first sentence) hardly made you feel like you were eating offal, partly because of the sauce. It functioned almost as a stew, with a hearty broth and lots of tomatoes and garlic to add density and flavor. The tripe did not taste mineral-ly or game-y at all. The tripe absorbed up the sauce well like a sponge - The panino bollito was, by far, the most ordered dish by the customers. Thinly sliced beef, rich au-jus-like broth, and the crusty bread formed one of the best sammiches I've ever had. I can point this place out as one of the largest overhyped places I found on Yelp during my trip. The quality of food at Da Nerbone was not very high but the place was packed so maybe I just didn't order the right thing. I found most people on Yelp and in-person to be ordering the sandwiches so I picked up two. The bread was almost too hard to bite through and the scrap meat was over seasoned and salty. I could barely finish my tripe because of the salt! What's the hype? This is one place I wouldn't bother coming back to, but the food market inside the hall and street shops outside were a good time. The stall is as old as Mercato Centrale itself, and still attracts many regulars. The line is long but moves quickly so take a look at the menu first to decide. There are a few seats at the end and tables nearby, but you can also walk and eat while you enjoy the rest of what Mercato Centrale has to offer. If you are adventurous, try the classic lampredotto sandwich. It's tripe - the stomach of the cow. Delicious! If you can't stomach that (sorry, had to say it), try the panino con bollito, which is a boiled meat sandwich that is dipped quickly into a boiling vat of water before being served. I think this joint offers an inexpensive and delicious meal and would definitely recommend it to anyone traveling Florence on a budget. I was disappointed from the overwhelming positive reviews from this site. Got the two famous paninos and split with my mom. It was my first time having tripe in general, and I was expecting greatness since it's a Florentine specialty. It was subpar and very bland in flavor compared to the panino bollito. I preferred the texture of the bollito, and it was also easier to eat since the lampredotto kept falling out from the two slices of bread with just one bite. Whichever one you go with, definitely get the two salsas, adds more flavor to the otherwise bland lampredotto. Overall, service was fast and proficient even with such a long line. After searching for what the "best" lunch in Florence is, we came across the indoor market, by San Lorenzo Market. As soon as we walked in we saw Da Nerbone. Let me tell you, it was one of the best meals we have had in Italy. We got the boiled meat (sounds funny but I swear it was so amazing!), the salad (they only have one, it's kind of like a Greek salad but Italian Style), their risotto with zucchini, and the tripe. Everything was amazing except for the tripe, for us at least. The tripe is like really soft meat that is the the surrounding muscle of a cow's stomach - it's a popular dish but we just didn't like the texture. The boiled meat was our favorite with their special green sauce and their chili. Ohh, not to mention the wine is only 1e!!! Our whole meal was under 25e, and it felt like a meal for 3 people (and my husband and I eat a lot! Lol). There is a huge piece of meat that looks like it has been stewing for a couple of days and the guy cuts off a few thin slices of it, puts it on a fresh roll, and slathers it with two types of sauce.
